Lactoperoxidase system (LPS) effect on quality of raw and pasteurized milk under real conditions along the dairy value chain in Ethiopia was evaluated. A total of 250 milk samples were collected from farmers, collectors, and factories. Experimental samples were LPS-activated of morning and overnight milk. The samples were tested with several chemical and microbiological tests such as total bacterial count (TBC), total coliform count (TCC) and Escherichia coli count (EC). Results indicated that all LPS-activated milk samples had a higher quality than all the control samples.
