Abstract

Conclusion: This review provides evidence that major foodborne pathogens, such as E. coli O157:H7, Salmonella spp., L. monocytogenes, and hepatitis A virus, can persist on food for prolonged periods to cause harm. These insights underscore the importance of implementing appropriate control measures to contribute to a safer and more secure food supply chain.
