Exploring the relationship between cereal yield and remotely sensed normalized difference vegetation index (NDVI) is of great importance to decision-makers and agricultural stakeholders. In this study, an approach based on the Pearson correlation coefficient and linear regression method is carried out to reveal the relationship between cereal yield and Moderate Resolution Imaging Spectroradiometer (MODIS) NDVI data in the Fez-Meknes region of Morocco. The results obtained show strong correlations reaching 0.70 to 0.89 between NDVI and grain yield. The linear regression model explains 58 to 79% of the variability in yield in regional provinces marked by the importance of cereal cultivation, and 51 to 53% in the mountainous provinces with less agricultural land devoted to major cereals. The regression slopes indicate that a 0.1 increase in NDVI results in an expected increase in grain yield of 4.9 to 8.7 quintals (q) per ha, with an average of 6.8 q/ha throughout the Fez-Meknes region. RMSE ranges from 2.12 to 4.96 q/ha. These results are promising in terms of early yield forecasting based on MODIS NDVI data.

The quality of bread is mainly affected by the three key phases of the production chain: kneading, leavening and baking. Each step contributes to the final rheological and sensory properties of the bread. However, especially during the mixing phase, the choice of ingredients and the optimization of processing parameters such as mixing time, dough temperature, mixing speed and total water content, affect the development and microstructure of the dough. In general, rheological tests measure the technological properties of doughs and represent the main analyses carried out in the bakery sector. Considering the heterogeneity and variability of raw materials and processing conditions, rheology aids in process control and in the simulation of the response of the dough to the complex deformation that it undergoes during its processing. The results obtained can be related to the final structure and the texture of the bread. Although the effects of mixing and rheological behaviour of wheat doughs have been systematically examined in the literature, there is no comprehensive review of the current knowledge about the effect of the processing on sensory quality and final texture characteristics. This paper aims to shed light on factors that affect the quality of bread, emphasizing both technological and sensory aspects.

Afghanistan is overwhelmed with food insecurity that is a large percentage of the population lacks reliable access to food supplies. Grains play a vital role in the country's food security due to their importance in terms of consumption and production quantity. This paper estimates cereal self-sufficiency and then makes a food balance forecast of the three major food crops cultivated in Afghanistan over six-decades. Descriptive statistics and coarse metric techniques were employed to determine cereal self-sufficiency and food balance forecast. The econometric analysis demonstrated that (1) Afghanistan is not yet self-sufficient in meeting grain consumption, and the production and consumption ratio declined from 0.9 to 0.55 from 1979 to 2030. (2) The gap of theoretical food imbalance will increase, and by the year 2030, cereal production will likely be sufficient for only 49.8 percentage of inhabitants, leaving a high shortage equivalent to the amount required by 24.4 million people. By evaluating the quantitative food balance and the growing population change, this study presents an analysis of the emerging threat to Afghanistan's food security and suggests a solution for food security, should increase the size of public agricultural expenditure, improve the level of agriculture infrastructure, and continue to introduce a policy to achieve higher yield.

Ryegrass is one such cereal that has been underutilized in human nutrition despite its high nutritional and functional value due to the presence of phytochemicals and dietary fibers It is a viable option, especially for countries that do not produce wheat, as it is easily adaptable and overgrows, making it economically viable. This study evaluated the nutritional impact, bioactive compounds, and physicochemical and technological properties of partially substituting maize flour (MF) with sprouted whole ryegrass flour (SR) in developing extrusion-cooked breakfast cereals. A completely randomized design with substitutions ranging from 0 to 20 % of MF with SR was employed as the experimental strategy (P < 0.05). Partial incorporation of SR increased the bioavailability of γ-aminobutyric acid and total soluble phenolic compounds. Using sprouted grains can adversely affect the technological quality of extruded foods, but ryegrass, with its high dietary fiber and low lipid content, mitigates these negative effects. Consequently, breakfast cereals containing 4 and 8 % SR exhibited better physicochemical properties, such as reduced hardness and increased crispness. These results are promising for ryegrass and suggest combining the age-old germination process with extrusion can enhance cereal-based breakfast products' nutritional quality and bioactive compound content.

Tritordeum is an amphiploides species resulting from the hybridization between durum wheat (T. durum) and wild barley (H. chilense). This new cereal is considered a natural crop as it is obtained by traditional breeding techniques. Given its appreciable organoleptic characteristics, agronomic features, presence of interesting components, and good technological properties, tritordeum is of promising interest for the development of health-oriented foods. In this study, we evaluated two registered tritordeum cultivars, Bulel and Aucan. T. durum (Provenzal) was employed as the positive control. The extracted proteins were digested by gastric /pancreatic proteases and their biological effects on Caco-2 differentiated on transwell inserts were determined. Changes in cell viability, monolayer permeability, organization of F-actin microfilaments, and ER stress, triggered by protein-digested samples (DPs) were inspected. Our results showed that exposure to Provenzal-DPs promptly disrupted the tight junction barrier. Conversely, Aucan-DPs did not enhance monolayer permeability; whereas, Bulel-DPs exerted only slight effects. Provental-DPs-induced toxicity was also confirmed by changes in cell viability and by the deep reorganization of the enterocyte cytoskeleton. In contrast, Aucan-DPs and Bulel-DPs did not affect monolayer viability and cytoskeleton structure. Overall, our findings suggest that both tritordeum cultivars could be potential candidates for mitigating the toxicity of wheat flour.

Millions of people worldwide have an inadequate intake of selenium (Se) and zinc (Zn), and agronomic biofortification may minimise these problems. To evaluate the efficacy of combined foliar Se and Zn fertilisation in bread making wheat (Triticum aestivum L.), foliar Se (as NaSeO4) and soil and foliar Zn applications (as ZnSO4·7H2O) were tested individually and in all combinations. A 2-year field experiment was established in southern Spain under semiarid Mediterranean conditions, by following a split-split-plot design. The study year (2017/2018, 2018/2019) was considered as the main-plot factor, soil Zn application (50 kg Zn ha-1, nil Zn) as a subplot factor, and foliar application (nil, 10 g Se ha-1, 8 kg Zn ha-1, 10 g Se ha-1 + 8 kg Zn ha-1) as a sub-subplot factor. The best treatment to increase both Zn and Se concentration in both straw, 12.3- and 2.7-fold respectively, and grain, 1.2- and 4.1-fold respectively was the combined foliar application of Zn and Se. This combined Zn and Se application also increased on average the yield of grain, main product of this crop, by almost 26%. Therefore, bread-making wheat seems to be a very suitable crop to be used in biofortification programs with Zn and Se to alleviate their deficiency in both, people when using its grain and livestock when using its straw.

The chemopreventive effects of various mixed cereal grain (MCG) samples on azoxymethane (AOM, 10 mg/kg) and dextran sulfate sodium (DSS, 2% w/v)-induced colorectal cancer (CRC) in C57BL/6J mice were studied. The main MCG preparation consisted of fermented brown rice (FBR), glutinous brown rice, glutinous Sorghum bicolor, glutinous Panicum miliaceum, Coix lacryma-jobi and black soybean at an appropriate mixing ratio. Other MCG preparations contained rice coated with 5% Phellinus linteus and 5% Curcuma longa (MGR-PC), or 10% Phellinus linteus (MCG-P), or 10% Curcuma longa (MCG-C). Consumption of dietary MCG-PC by CRC mice significantly increased colon length, decreased the ratio of colon weight to length, and reduced the number of colon tumors. Similar effects, although to a lower extent, were observed in CRC mice fed with MCG-P, followed by those fed with MCG-C, MCG, FBR or white rice (WR). MCG-PC significantly suppressed colonic neoplasia, and decreased the levels of various cytokines (tumor necrosis factor: Tnf, interleukin 1 beta: Il1b, interleukin 6: Il6, and interferon gamma: Ifng) in serum and colon tissue of the CRC mice. In addition, MCG-PC increased the mRNA expressions of tumor protein p53(Tp53) and cyclin-dependent kinase inhibitor 1A(Cdkn1a), activated pro-apoptotic caspase 3(Casp3), and reduced expression of both mRNA and protein of inducible inducible nitric oxide synthase 2 (Nos2), prostaglandin-endoperoxide synthase 2 (Ptgs2), and cyclin D1(Ccnd1) in colon tissue. These findings suggest that than compared with other cereal grain preparations, MCG-PC had a greater activity against AOM/DSS-induced CRC by reducing intestinal inflammation, and modulating the expression of certain carcinogenesis related factors (Nos2, Ptgs2, Tp53, Cdkn1a, Ccnd1 and Casp3) in colon tissue of CRC mice.

The aim of this study was to determine the correlation between the external friction angle of cereal kernels and the roughness of a steel friction plate. The experiment was performed on the kernels of five principal cereals: wheat, rye, barley, oats and triticale. Flat seed units composed of three spaced kernels joined by adhesive tape were analyzed in each experimental variant. The external friction angle of flat seed units was determined on 9 steel friction plates with different roughness. Measurements were performed in 3 replications with a photosensor device which registered the external friction angle of cereal kernels. On friction plates with surface roughness Ra=0.36 to Ra=6.72, the average values of the angle of external friction ranged from 17.56° in rye kernels to 34.01° in oat kernels. The greatest similarities in the angle of external friction were observed between wheat and triticale kernels, whereas the greatest differences were noted between barley and oat kernels and between barley and triticale kernels. Friction plates made of ST3S steel should be characterized by the lowest surface roughness to minimize energy consumption during grain processing. The optimal surface roughness of steel friction plates was determined at Ra=0.9.

Summer annual species are the most widely grown crops in the Upper Midwest, but reliance on a summer annual system has led to excessive soil and nutrient loss when crops are not present. Integrating winter rye (Secale cereale L.), known for its hardiness and environmental benefits, into the rotation can address these issues. However, there's limited understanding of the phenotypic diversity in winter rye during key growth stages that overlap with the typical planting dates for corn (Zea mays L.), soybean [Glycine max (L.) Merr], and late-planted crops like dry bean (Phaseolus vulgaris L.). Thus, the objectives of this study were to evaluate changes in biomass accumulation and quality of winter rye and triticale (x Triticosecale Wittmack) cultivars at three growth stages. Twenty cultivars were assessed over the 2014-2015 and 2015-2016 growing seasons across three environments in Minnesota. Winter rye and triticale were harvested for biomass at the tillering, booting, and soft dough growth stages and rye biomass yield and quality [i.e., crude protein, neutral detergent fiber (NDF), and 48-hour digestibility (NDFD)] were determined following harvest. Overall, there was little variation in each parameter among the cultivars within a location and growth stage. NDFD had some variation at the soft dough stage where digestibility ranged from 273 to 324 g kg-1 at the Crookston site and 332 to 406 g kg-1 at the St. Paul site. The lack of difference between cultivars indicates a wide range of choice when selecting a winter rye cultivar.

Meta-analysis of plant sterol supplement studies suggests an 8% lowering of LDL cholesterol for 2 to 2.5g/day of plant sterols. Cereal foods have been rarely tested and one study showed a lower LDL lowering of 5.4% with 1.6g of plant sterol in breakfast cereal. We aimed to test a breakfast wheat biscuit with 2g of plant sterols in a single serve of two wholegrain wheat breakfast cereal biscuits. Fifty volunteers with a total cholesterol of >5.5mmol/L were recruited for a randomised crossover study with two 4-week periods with no washout of which 45 successfully completed the study. After exclusion of four outliers the difference in LDL cholesterol between standard wholegrain wheat breakfast cereal biscuit and plant sterol-enriched wholegrain wheat breakfast cereal biscuit was 0.23 mmol/L or 5.6% (P=0.001) with a 95% confidence interval of 2.4-8.9%. Men and daily cereal consumers had greater responses 9.8% vs 3.6% and 7.2% vs 3.8% respectively (P<0.05). The LDL lowering effect of 2g of plant sterol enriched from one serve of wholegrain wheat breakfast cereal biscuit was not significantly different from other food products delivering 2-2.5g of plant sterols daily. Regular cereal consumers have a better response.

The issue of measurement reliability is certainly undervalued in the local agricultural marketplace organization. Besides, there was nothing identified concerning the extent of cereal commodity trade measurement cost. Hence, this paper aimed to estimate the magnitude of cereals trade quantity measurement cost caused by instrument error and unreliability; mainly by targeting the local marketplace in Ethiopia. The survey was conducted in six different districts’ marketplaces (n = 602) of Oromia region by employing administered structured questionnaires and site mass measurement calibration. The gathered data were analyzed using independent samples t-test, one sample t-test, and analysis of variance. According to the findings, the actual value measurement means of the quantity of most local units of the farmers were greater than small traders. The independent t-test result indicated that the average values of the quantity of the majority of units of measurement between farmers and small traders were varied significantly. Estimated measuring instruments’ error and unreliability associated average measurement cost of one-day market transaction over total cereals marketed amount were higher comparatively for a sack, bowl, and glass units. This study demonstrates that homogeneity in measurement, policy, and institutions that aid cereals trade would have an indispensable role to reduce measurement costs and ensure equitable exchange.

For cereals grown under organic conditions, information on levels of free asparagine (free Asn) as a precursor to acrylamide (AA) formation, is almost completely lacking. This study investigated the impact of organically grown cereal species and cultivars of winter wheat (Triticum aestivum), winter spelt (Triticum aestivum ssp. spelta), winter rye (Secale cereale), winter einkorn (Triticum monococcum) and winter emmer (Triticum dicoccum) on the level of free Asn with simultaneous consideration of grain yields and flour qualities over three growing seasons (2005–2006, 2006–2007 and 2007–2008) in Southwest Germany. Additionally, the relation of free Asn and AA was investigated. Heritability revealed how strongly the level of free Asn was linked to the genotype. In this context free Asn of species and cultivars grown at a second location in Southern Germany were analysed. The level of free Asn was significantly influenced by species and within species by cultivars. Rye was found to exhibit the highest free Asn amount (52 mg 100 g⁻¹), followed by einkorn (32 mg 100 g⁻¹), emmer (16 mg 100 g⁻¹) wheat (10 mg 100 g⁻¹) and spelt (8 mg 100 g⁻¹), which showed the overall lowest free Asn content. Hence, replacing rye with spelt in food products would lead to an 85% reduction of free Asn in raw material. Within species, cultivars differed in their levels of free Asn by up to 67% for wheat, 55% for spelt and 33% for rye. Year also had a significant impact as almost all samples were significantly higher in their level of free Asn in 2008 compared to 2006 and 2007. Rye was most significantly affected by year as the level of free Asn varied by up to 32% between years. In contrast, wheat and spelt were only affected minimally by year. A high heritability was found for wheat (0.79) and spelt (0.91) concerning locations in 2008, meaning that the level of free Asn is mainly determined by the genotype and less influenced by environmental conditions. In contrast, heritability was low for wheat (0.23) but high for spelt (0.71) and rye (0.67) regarding years. As for organically grown cereals the relation between free Asn and AA formation was never investigated before. Correlation of both parameters was calculated. There was also a close correlation between free Asn and AA. Across species and years, the amount of free Asn correlated with the AA content in heated flour with R² = 0.69***. Thus, free Asn can serve as an indicator for AA formation during processing. In conclusion, the level of free Asn can be highly influenced by proper selection of species and cultivars under organic growing conditions.

A rapid, precise, accurate and low cost method for the determination of vitamin E (α-tocopherol) in cereal products and biscuits was developed. The uncertainty was calculated for the first time and the methods were performed in different cereal products and biscuits, characterized as “superfoods”. The limits of detection and quantification were calculated. Accuracy and precision were estimated using the certified reference material FAPAS T10112QC and the determined values were in good accordance with the certified values. The health claims according to the daily reference values for vitamin E were calculated and the results proved that the majority of the samples examined showed %daily value higher than 15%.

This study aims to provide empirical evidence on whether using renewable and non-renewable energy, CO₂ emissions and the resulting changes in temperature and precipitation can alter cereal yields in European Union countries. To this end, a panel data set covering 1992-2021 has been used to analyse the impact of climate change and economic factors on cereal production in European Union countries. The study employed various analytical techniques to understand better the relationship between climate change, energy consumption, and economic growth. These included using annual average temperature and rainfall to measure climate change and energy consumption and economic growth to analyse the economic aspects. To achieve the objective, feasible generalised least squares (FGLS) models with robust standard errors and bootstrap and a quantile regression (QR) model with marginal analysis were employed. The Westerlund cointegration test confirmed the presence of cointegration between cereal production and climate variables, economic growth, and energy consumption. The results indicate that increases in temperature and precipitation may contribute to increased cereal production in European Union countries. In contrast, energy consumption, including renewable energy and CO₂ emissions, may have a nonlinear effect on cereal production. Quantile regression analysis suggests climate change may impact crop yields most in countries with low and moderate cereal production per hectare. Increased CO₂ emissions may increase yields in the initial period, but excessive CO₂ may negatively impact cereal production in the long term. It would be advisable for countries with low and moderate crop productivity to consider implementing technological advances and combating global warming by modernising cultivation methods and making greater use of renewable energy sources.

This study investigates the trend in monthly and annual rainfall, minimum and maximum temperature (T_min and T_max) using the Mann–Kendall (MK) test and Sen’s slope (SS) method and evaluates the significance of their variability for maize, sorghum and millet yields in northern Togo employing multiple regression analysis. The historical data of Kara, Niamtougou, Mango and Dapaong weather stations from 1977 to 2012 were used. Four non-parametric methods—Alexandersson’s Standard Normal Homogeneity Test (SNHT), Buishand’s Range Test (BRT), Pettitt’s Test (PT) and Von Neumann’s Ratio Test (VNRT)—were applied to detect homogeneity in the data. For the data which were serially correlated, a modified version of the MK test (pre-whitening) was utilised. Results showed an increasing trend in the annual rainfall in all four locations. However, this trend was only significant at Dapaong (p < 0.1). There was an increasing trend in T_max at Kara, Mango and Niamtougou, unlike Dapaong where T_max revealed a significant decreasing trend (p < 0.01). Similarly, there was an increasing trend in T_min at Kara, Mango and Dapaong, unlike Niamtougou where T_min showed a non-significant decreasing trend (p > 0.05). Rainfall in Dapaong was found to have increased (7.79 mm/year) more than the other locations such as Kara (2.20 mm/year), Niamtougou (4.57 mm/year) and Mango (0.67 mm). T_max increased by 0.13, 0.13 and 0.32 °C per decade at Kara, Niamtougou and Mango, respectively, and decreased by 0.20 per decade in Dapaong. Likewise, T_min increased by 0.07, 0.20 and 0.02 °C per decade at Kara, Mango and Dapaong, respectively, and decreased by 0.01 °C per decade at Niamtougou. Results of multiple regression analysis revealed nonlinear yield responses to changes in rainfall and temperature. Rainfall and temperature variability affects rainfed cereal crops production, but the effects vary across crops. The temperature has a positive effect on maize yield in Kara, Niamtougou and Mango but a negative effect on sorghum in Niamtougou and millet in Dapaong, while rainfall has a negative effect on maize yield in Niamtougou and Dapaong and millet yield in Mango. In all locations, rainfall and temperature variability has a significant effect on the cereal crop yields. There is, therefore, a need to adopt some adaptation strategies for sustainable agricultural production in northern Togo.

Empirical models help us understand the process of plant residue decomposition and nutrient release into the soil. The objective of this study was to determine an appropriate model to describe the decomposition of hairy vetch (Vicia villosa Roth) and cereal rye (Secale cereale L.) cover crop (CC) residue and nitrogen (N) release. Data pertaining to above and belowground CC residue mass loss and N release for up to 2633 cumulative decomposition degree days (112 d) after litterbag installation were obtained from two cropping system experiments, one conducted in 2015 and the other in 2017 and 2018 at the humid subtropical environment of southern IL, USA. Six exponential and two hyperbolic models were fit to percent mass and N remaining data to find the one with minimum Akaike Information Criterion (AIC) and residual sum of squares. Modified three-parameter single exponential and two- or three-parameter hyperbolic models best met the assumed criteria of selection for above and belowground CC residue, respectively. Fitting a double exponential model to a combined data for percent mass and N remaining, which identified two mass and N pools, a fast and a slow pool with different rate constants. A five-parameter double exponential with an asymptote met the preset criteria and passed all tests for normally distributed population, constant variance, and independence of residuals at α = 0.05 when fit to combined data of hairy vetch shoot mass and N remaining. However, a two-parameter hyperbolic and three-parameter asymptotic hyperbolic model provided the best fit to a combined data of cereal rye shoot mass and N remaining, respectively. Both hyperbolic decay models showed a good fit for belowground mass decomposition and N release for both CCs. Cereal rye had poorer fit than hairy vetch for mass and N remaining of both above and belowground mass. The best-selected decay models can be used to estimate the decomposition and N release rates of hairy vetch and cereal rye above and belowground residue in a similar environment.

This study analyzed the impact of climate-related natural disasters (droughts, floods, storms/rainstorms) on economic and social variables. As the Africa-specific empirical literature is limited, this study used panel data from 1961–2011 on Africa. The study used a panel data regression model analysis. The results showed that climate change-related natural disasters affected Africa’s economic growth, agriculture, and poverty and caused armed conflicts. Among the disasters, droughts are the main cause of negative impact, severely affecting crops such as maize and coffee and resulting in increased urban poverty and armed conflicts. In contrast, international aid has a positive effect but the impact is insignificant compared to the negative consequences of climate-related natural disasters. Cereal food assistance has a negative crowding-out effect on cereal production. International donors should review their interventions to support Africa’s adaptative capacity to disasters. Government efficiency has reduced the number of deaths, and this is an area that supports Africa’s adaptative efforts.
