During the post-harvest of coffee and plantain, organic residues with high potential for utilization are generated. This work aimed to measure the effect of extrusion on the nutritional, physicochemical, and functional properties of mixtures of coffee pulp (CP), rejected plantain (RP), and plantain rachis (PR) flours. The residues were dehydrated, milled, and mixed according to the simplex reticular experimental design. Subsequently, the mixtures were extruded. The properties before and after extrusion were determined. It was found that the effect of extrusion reduced the crude fiber and lipid content composition, but protein and ash content were not changed. A positive relation was found between coffee pulp flour and rachis plantain flour in response to total phenolic content (TPC) and antioxidant activity (AA). Some blends increased the TPC and AA, but others reduced it. At the same time, water activity and water and oil absorption capacity showed a significant extrusion effect, while the pH did not. It was determined that the optimum mixture extruded was 0,364:0,333:0,303 of CP, RP, and PR, respectively. Extrusion reduced all pasting properties of the optimized blend. The flours studied presented a relevant nutritional and functional contribution, which favors their viability for use in the food industry.

The prospective studies applied to the plantain sector are extensive, but they are not directly related to innovation models. Therefore, this article proposes an Innovation Management Model for this chain and, specifically, for the one located in the department of Quindío-Colombia. The methodology employed combines stakeholder engagement, prioritization of variables, a comprehensive literature review, and model validation. The study identifies critical variables essential for fostering agricultural and technological innovation across platforms and projects, enhancing capacity development, and promoting research, development, and innovation (R&D&I) activities. Furthermore, it examines supply chain dynamics, innovation management processes, knowledge and technology integration, and the adaptation of business models for sustainable development, alongside environmental impact assessments. Initially, 53 variables were identified in the input stage, 36 in the transformation component, and 31 in the output stage. The analysis of priority variables revealed significant gaps in leadership and strategic capacity, resource availability, agricultural innovation, market competitiveness, information and communication technologies, regulatory compliance, and network resilience. These gaps profoundly affect creativity, innovation, and sustainability within Colombia's plantain sector.

The genus Musa spp. contains commercially important fleshy fruit producing plants including plantains and bananas with a strong potential of providing food security and source of revenue to farmers. Occasionally, plantlets are often not available to fulfill the supply demand of farmers particularly in Caribbean region. Concerns with the quality of vegetative tissues along with the possibility of the transmission of phytopathogens makes availability of plantlets limited to farm-ers. Micropropagation of plantains offers an alternative to producing large number of in-vitro plantlets. However, conventional methods of micropropagation techniques require high produc-tion costs and are labor-intensive. Recently, Temporary Immersion Bioreactor (TIB) has emerged as an alternative to conventional micropropagation methods. Our work utilized SEM (Scanning Electron Microscope), molecular and biochemical tools (qRT-PCR and ICP-OES) to characterize and compare the morphological, elemental composition, and photosynthetic gene expression of plantains cultured on TIB. Additionally, morphological features of growth and propagation rates were analyzed for comparing outputs obtained from temporary immersion bioreactor with conventional micropropagation (CM) techniques. Results showed higher growth and multiplication rates for plantlets cultivated in TIB. Gene expression analysis of selected photosynthetic genes demonstrated high transcript abundance of phosphoenol pyruvate carboxylase (PEPC) in plantain tissues obtained by TIB. Elemental composition analysis showed higher content of iron in plantains grown in TIB suggesting a potential correlation with PEPC expression. These results demonstrate the potential of TIB to be an efficient method to produce healthy in-vitro plantains.

Abstract Diabetes mellitus (DM) is an independent risk-factor for cardiovascular diseases. Plant-based dietary-patterns have been shown to positively impact the effects this cardiovascular risk-factor. The purpose of this study is to investigate the association of adherence to moringa, plantains, moringa-plantain combined, and other plant based dietary-patterns with glycemic-control among persons with type-2-diabetes Mellitus (T2DM). Facility-based cross-sectional-study was conducted among 530 T2DM patients in Ghana. Structured-questionnaires were used to collect demographic, anthropometric, and clinical variables. Adherence to plant-based dietary-patterns were assessed with 24-hour dietary-recall questionnaire. SPSS version-22 was used in data analysis. BMI, HbA1c%, HDL-cholesterol and LDL-cholesterol were significantly correlated with adherence to plant-based dietary-patterns (p-value < 0.05). After adjusting for confounders, adherence to: Plantain diets, standardized regression coefficient β (95%CI): -0.098 (-0.321, -0.022), Yam, β (95%CI): 0.148 (0.066, 0.496), Moringa diets β (95%CI): -0.095 (-0.325,-0.011) and Bean-diets β (95%CI): -0.112 (-0.577-.007) were significantly associated with glycemic control. Also adherence to: Plantain-moriga combined diets β (95%CI): -0.406 (-0.413, -0.049) and Plantain-beans combined diets β (95%CI): -0.128 (-0.188, -0.038) were significantly associated with glycemic control. Adherence to Plantain, Yam, Beans, Plantain-moriga combined diets, and Plantain-beans combined diets could be associated with glycemic control. Inflorescence architecture underpins sexual reproduction in wild Musa species and productivity in edible banana cultivars. In a functional analysis we identified the apical inflorescence and lateral ‘cushion’ meristems and the change in flower type as the three primary components of inflorescence architecture. Five genotypes of two clone-sets of edible plantains (Musa AAB), were grown for four generations along an elevation gradient (1100 m to 2200 m, 16°C to 24°C) straddling the equator in the humid highlands of East Africa. The data consisted of peduncle length at harvest, fruit per hand (Fh) and hands per bunch (Hb). The activity of the apical inflorescence meristem drives peduncle length and lateral ‘cushion’ meristems determine fruit per hand. However, Hb is determined by a change in flower type – from fruit-forming to non-fruit forming. Site temperature affected Hb more than Fh, while development of the genet (rhizome) changed the allocation of resources between Hb and Fh, independently of the effect of site temperature. Clone-sets differed in their response to genet development. Cooler temperatures reduced the number of fruit-forming flowers in an inflorescence and changed the balance away from female towards male flowers. In banana breeding schemes, manipulating inflorescence components independently raises options for producing genotypes better suited to markets, environments, and cultural practices.
