The publication presents an innovative tower cultivation device designed to significantly increase vertical farming efficiency. The device divides the cultivation system into separate chambers. One division corresponds to the different growth phases of the plants, while another reflects the daily variation in conditions. Each chamber presents slightly different conditions and cultivation patterns from the others. For the early stages, crops are grown horizontally in trays once they mature, transplanted into mobile cultivation towers. The closed circulation of ventilation and irrigation reduces water consumption by up to 95%. A unique separate day-night division optimises light, temperature and humidity conditions, mimicking natural growth patterns. This approach not only saves water and energy but also optimises cultivation in a three-dimensional space. The presented solution focuses on the often overlooked aspects of cultivating in vertical farms and makes this method of growing much more cost-effective and feasible to implement on a large scale.

In Korea, laver (Gim) is the leading traded marine product and an important food source, accounting for 82.0% of the world’s exports. Laver exports reached $100 million in 2010 and steadily increased to $600 million in 2020. An increase in laver exports improves the income of laver farmers and promotes the growth of fisheries. However, marine algae are vulnerable to climate change. In this study, we aimed to predict changes in laver production due to climate change using environmental variables, including water temperature, rainfall, and sunlight duration. The results showed that water temperature considerably affected laver production; when water temperature increased by 1 °C, production decreased by 13.78% (t) in the same month. By contrast, when sunlight duration and rainfall increased by 1 h and 1 mm, respectively, 1 month before harvesting laver, production increased by 0.32% (t-1) and 0.13% (t-1), respectively. Using four scenarios based on climate change published by the Intergovernmental Panel on Climate Change in a modeling exercise, we found that laver production in 2100 in Wando in Korea may decline by 73.3% owing to water temperature changes (based on 2020 production), threatening food security. Accordingly, short-, mid-, and long-term countermeasures are needed for sustainable laver aquaculture. Appropriate water temperature (21–22 °C) during seeding is necessary to control environmental variables, based on scientific data and activation of land-based seeding methods. Moreover, mid- and long-term countermeasures should include development of high-temperature resistant laver seeds, identification of suitable new laver aquaculture grounds, and research on seeds that can adapt to climate change.

This study aims to provide empirical evidence on whether using renewable and non-renewable energy, CO₂ emissions and the resulting changes in temperature and precipitation can alter cereal yields in European Union countries. To this end, a panel data set covering 1992-2021 has been used to analyse the impact of climate change and economic factors on cereal production in European Union countries. The study employed various analytical techniques to understand better the relationship between climate change, energy consumption, and economic growth. These included using annual average temperature and rainfall to measure climate change and energy consumption and economic growth to analyse the economic aspects. To achieve the objective, feasible generalised least squares (FGLS) models with robust standard errors and bootstrap and a quantile regression (QR) model with marginal analysis were employed. The Westerlund cointegration test confirmed the presence of cointegration between cereal production and climate variables, economic growth, and energy consumption. The results indicate that increases in temperature and precipitation may contribute to increased cereal production in European Union countries. In contrast, energy consumption, including renewable energy and CO₂ emissions, may have a nonlinear effect on cereal production. Quantile regression analysis suggests climate change may impact crop yields most in countries with low and moderate cereal production per hectare. Increased CO₂ emissions may increase yields in the initial period, but excessive CO₂ may negatively impact cereal production in the long term. It would be advisable for countries with low and moderate crop productivity to consider implementing technological advances and combating global warming by modernising cultivation methods and making greater use of renewable energy sources.

The effects of the climate crisis are affecting ecosystems at different scales and magnitudes. This paper focuses on a massive Mediterranean mussel die-off observed along the middle Italian Adriatic coast in the summer of 2022. We considered the possible environmental causes of this phenomenon and carried out a climatic analysis of the last decade. We performed field surveys in different locations along a 16 Km coastal stretch (from Martinsicuro (TE) on the South, to Grottammare (AP) on the North). The study area includes two marine Sites of Community Importance under the European Natura 2000 network. The mussels die-off has interested practically all the natural mussel-beds colonizing the study area. Mussels are sessile filter-feeding organisms inhabiting the intertidal zone, therefore, are highly exposed to variations in environmental conditions such as temperature and nutrient load. We discuss the possible causes of this die-off, proposing that high temperature and the scarce availability of food acted simultaneously as stress factors, generating local unsustainable living conditions for this species.

The malaria parasite resides within erythrocytes during one stage of its life cycle. During this intraerythrocytic period, the parasite ingests the erythrocyte cytoplasm and digests approximately two-thirds of the host cell hemoglobin. This digestion occurs within a lysosome-like organelle called the digestive vacuole. Several proteases are localized to the digestive vacuole and these proteases sequentially breakdown hemoglobin into small peptides, dipeptides, and amino acids. The peptides are exported into the host cytoplasm via the chloroquine-resistance transporter and an amino acid transporter has also been identified on the digestive vacuole membrane. The environment of the digestive vacuole also provides appropriate conditions for the biocrystallization of toxic heme into non-toxic hemozoin by a poorly understood process. Hemozoin formation is an attribute of Plasmodium and Haemoproteus and is not exhibited by other intraerythrocytic protozoan parasites. The efficient degradation of hemoglobin and detoxification of heme likely plays a major role in the high level of replication exhibited by malaria parasites within erythrocytes. Unique features of the digestive vacuole and the critical importance of nutrient acquisition provide therapeutic targets for the treatment of malaria.

RNA-viruses of the genera Ambivirus, Mitovirus, Sclerotimonavirus, and Partitivirus were found in a single isolate of Fusarium graminearum. The genomes of the mitovirus, sclerotimonavirus, and partitivirus were assigned to previously described viruses, whereas the ambivirus genome putatively represents a new species, named Fusarium graminearum ambivirus 1 (FgAV1). To investigate the effect of mycoviruses on the fungal phenotype, spontaneous loss of mycoviruses during meiosis and transmission of mycoviruses into a new strain by anastomosis were used to obtain isogenic F. graminearum strains with and without mycoviruses. Notable effects observed in mycovirus-harboring strains were (i) suppression of the synthesis of trichothecene mycotoxins and their precursor trichodiene, (ii) suppression of the synthesis of the defense compound aurofusarin, (iii) stimulation of the emission of 2-methyl-1-butanol and 3-methyl-1-butanol, and (iv) increased attractiveness of fungal mycelia for fungivorous collembolans. Increased attractiveness of mycovirus-infected filamentous fungi to animal predators opens new perspectives on the ecological implications of infection of fungi with viruses.

Background: Fermented milks are a source of bioactive peptides with different potential benefits on human health (mainly antioxidant and antihypertensive effects) and may be considered as functional foods. Furthermore, those made with sheep milk have higher nutritional value and higher concentrations of proteins, fats, minerals, and vitamins, if compared to milk of other species. Objectives: Aim of this study was to perform a biochemical characterization and a comparison between sheep fermented milk (SFM) made with commercial starter cultures and sheep milk YoAlp®, a fermented milk obtained using local strains of lactic acid bacteria (LABs) (Streptococcus thermophilus and Lactobacillus delbrueckii) which have been isolated during years in Aosta Valley mountain dairy cattle farm. Methods: Sheep milk and fermented milk (Sarda and Lacaune breeds) have been collected and immediately analyzed. Biochemical characterization, by a proteomic approach, GC/MS and microtiter plate assay methods, have been conducted to evaluate their peptide, fatty acid and aromatic profile, and to assess potential health promoting effects. Results: The comparison between SFM and YoAlp® peptide profile shows a higher number of peptides using autochthonous starter cultures (52) than commercial starter cultures (35). Among these peptides 20,78% and 29,87%, respectively, are supposed to be potentially bioactive (DPP - dipeptidyl peptidase-IV - inhibitor, ACE - angiotensin converting enzyme – inhibitor and antioxidant). In both products, the fatty acids profile was similar to that of origin sheep milk; concerning aromatic profile, YoAlp® shows yogurt typical aromatic assets, similar to the commercial one. As far as bioactivity is concerned, ACE inhibitor activity is high for both samples. Similar values, as expected by peptide profile analysis, have been obtained using commercial and autochthonous starters. Even in the case of antioxidant capacity, peptide profile bioactivity prediction has been confirmed by the assay showing a DPPH inhibition higher for SFM than for YoAlp®, but this difference is not statistically significative. Conclusions: Local strains of lactic acid bacteria from Aosta Valley seems to work as well as the commercial, preserving biodiversity and typicality. However, further analyses are needed to identify peptides generated by autochthonous LABs in order to understand microbial proteolytic activities and to investigate gastric digestion resistance of bioactive peptides which can have positive effects on human health.

The use of plastic in agriculture has become so omnipresent within the industry that it has acquired it own lexicon to become known as ‘plasticulture’. However, since, compared to other industries the quantities consumed are low, little attention is granted to this waste stream. This is the case both with local and international policies even though it bears a close connection to soil health and therefore is a prerequisite to improve the sustainability of food production processes including food security. Using Malta as a case study, the research utilises quantitative and qualitative tools to identify and quantify the most common types of agricultural plastic waste generated and determines the attitudes of farmers towards a collection and recycling scheme. While it identifies that incineration and ploughing of plastic waste as regular practices, it also ascertains the willingness of farmers to acquire more knowledge about more appropriate methods to dispose of this waste stream thus guiding policy makers towards the need to initiate educational measures for farmers to prevent these harmful practices. Through stakeholder interviews the research highlights that the present lack of data is a major hindrance for policy to take account of this waste stream.

Bisphenol A diglycidyl ether (BADGE) is widely existed in the inner coating of canned foods. It migrates into food and generate various derivatives in the process of storage, such as Bisphenol A (2, 3-dihydroxypropyl) glycidyl ether (BADGE·H2O), Bisphenol A (3-chloro-2-hydroxypropyl) glycidyl ether (BADGE·HCl) and Bisphenol A (3-chloro-2-hydroxypropyl) (2, 3-dihydroxypropyl) glycidyl ether (BADGE·HCl·H2O), which have negative effects on human health. A gold nanoparticle-based immu-nochromatographic assay for simultaneous detection of BADGE and its derivatives was developed by using a broad-spectrum polyclonal antibody, and the detection can be finished in 15 min. The visuali-zation of results was processed by Adobe Photoshop CC software to achieve quantitative analysis and the detection limit (IC15) is 0.97ng/mL. The recoveries of BADGE and its derivatives at various spiking levels in canned food samples ranged from 79.86% to 93.81%. The detection results of the proposed immu-nochromatographic assay were also validated by HPLC analysis, and got good consistency (R2=0.9580).

The lexical-semantic issues in translating food taste adjectives into Chinese are examined in this article. Chinese food has a wide variety of colorful flavors. Correctly interpreting the adjectives that describe how food tastes is crucial. With tasty, simple-to-digest meals, it promotes and popu-larizes Chinese cuisine. Because, eating light, low-fat meals is crucial in today's world. Yet, due to poor translation and unclear menus, Chinese restaurants in CIS nations, particularly in Uzbeki-stan, are unpopular with customers. The biggest mistakes in Chinese restaurant menu are related to the incorrect translation of the taste adjectives of the food. This article aims to identify the most erroneously translated Chinese adjectives, analyze them linguistically, and determine the cause of translation errors. The translation ability of 60 Chinese language translators with HSK 4 level is analyzed on the basis of experiment. Recommendations for solving the problem studied in this ar-ticle have been developed.

This study aimed to investigate Romanian physicians' awareness, recommendation practices, and opinions regarding using Foods for Special Medical Purposes (FSMPs) products. A total of ten physicians were interviewed using a structured questionnaire, and their responses were analysed using thematic content analysis. The study found that physicians were aware of FSMPs and recommended them to their patients based on nutritional deficits, weight loss, or deglutition impairments. In addition, disease stage, treatment scheme, taste, affordability, and availability were identified as factors influencing the recommendation and use of FSMPs. While physicians generally did not consult clinical trials, clinical experience was deemed essential for recommending FSMPs to patients. Patients' feedback regarding the usage and sourcing of FSMPs was generally positive, with some expressing concerns about the availability of different flavours and the costs of purchasing the products. The study concludes that physicians play a vital role in recommending FSMPs to patients and ensuring they have the necessary nutritional support during treatment. However, more patient education materials and collaboration with nutritionists may be required to improve patient outcomes and reduce patient financial burden.

Appetitive traits have been associated with eating behaviors and weight in youth. However, the relationships among adults have received less attention. In this study, we measured appetitive traits among 520 female college students from a University in eastern Chinese using the Chinese translated Adults Eating Behavior Questionnaire (C-AEBQ) and found that two food approach traits (food enjoyment and emotional over-eating) were positively while two food avoidance traits (slowness in eating and satiety responsiveness) were negatively associated with BMI. Individual trait was differentially associated with eating behaviors. Specifically, a positive correlation was found between food responsiveness and higher frequency of selecting delivery food, spicy food, and sugared beverage; conversely, satiety responsiveness was associated with higher frequency of skipping meals. Using latent profile analysis, participants were classified into four appetitive patterns: food approacher, food approacher with emotional under-eating, food avoider, and food avoider with emotional over-eating. Food avoiders had significant lower BMI and higher proportion of underweight than other three patterns. Compared to food approacher, food avoiders had higher frequency of skipping breakfast, and food avoiders with emotional over-eating had higher frequency of skipping both breakfast and lunch. No significant differences were observed in food choice and dieting behavior among four appetitive patterns. The findings suggested a correlation between an individual’s appetitive pattern and eating behaviors among female college students, those with food avoidance patterns are more likely to have irregular meals, which may contribute to their low BMI. The findings provide valuable insights for female college students to cultivate a healthy eating behavior and sustain a healthy body weight.

Food demand and food supply have been heavily affected by Covid-19 pandemic. To understand changes in households’ behavior related to the pandemic, we investigate the willingness to pay for local organic apples pre- and during Covid-19. Besides, we assess whether the changes occurred within the family, estimating also separate models for the two members of the couple. Our findings show that respondents show a positive price premium for local organic apples whose consumption helps reducing the environmental costs associated with food production. The median estimated values during the pandemic range from 34% to 250%. Overall, respondents show a positive mean willingness to pay which increase with the pandemic. The socio-economic variables are the most important in explaining the willingness to pay, while the behavioral variables have more heterogeneous results even if the lifestyle and the request for information through the label are important variables. The pandemic tends to narrow the gaps in preferences between members of the couple. In conclusion, the local and organic dimension is embodied in the short chain in which knowledge and trust in the producer are crucial elements in the consumer's choices.

This study focuses on land cover and land management changes in relation to food security and environmental services in a semi-arid area of East Nusa Tenggara (ENT) – Indonesia. The study was conducted in Central Sumba District of ENT Province. Classification and regression tree (CART) for land cover classification has been analyzed using machine learning techniques using Google Earth Engine. A survey with Focus Group Discussion (FGD) and followed with in-depth interviews were conducted for primary data collection involving a total of 871 respondents. The Socio-economic data analyzed statistics descriptively and non-parametric tests. The study showed that: 1). There has been a substantial land use change during the devo-lution era that has both positive and negative implications for food security and envi-ronmental services. 2). There has been population pressure in the fertile or agricultur-al land as the direct impact of the development of city infrastructures; and 3). Nation-al intervention through the Food Estate program has fostered and shaped land use change and land management in Central Sumba District. The study highlights the importance that the devolution spirit should help to well manage the limited ara-ble/agricultural land in dominated semi-arid to ensure food security and environment services.

Japan is experiencing a super-aging society faster than is anywhere else worldwide. Consequently, extending healthy life expectancy is an urgent social issue. To understand diet that supports the extension of healthy life expectancy, we studied the relationships among quality of life (QOL: SF-36 questionnaire), physical activity (number of steps and activity calculated using an accelerometer), physical function (muscle strength, movement function, agility, static balance, dynamic balance, and walking function) and dietary intake among 469 older adults living in the Tokyo metropolitan area (65–75 years old, men/women = 166/303) from February 23, 2017, to March 31, 2018. There was a significant positive association between physical QOL and steps, moderate-intensity activity, and high-intensity activity (p < 0.05), and a significant positive association (p < 0.05) between physical activity and movement, static balance, and walking functions, but no association with muscle strength. These three body functions were significantly positively correlated with intake of vegetables, seeds, fruits, and milk, and with magnesium, potassium, vitamin B6, and the dietary fibre/carbohydrate ratio and composition ratios (p < 0.05). Balancing food and nutrition may improve QOL in older adults through increased physical function and physical activity. Future verification of interventions is needed.

The production of coffee leaf tea (Coffea arabica) in El Salvador and the influences of processing steps on non-volatile compounds and volatile aroma-active compounds were investigated. The tea was produced according to process steps of conventional tea (Camellia sinensis) with available possibilities on the farm. Influencing factors were the leaf type (old, young, yellow, shoots), processing (blending, cutting, rolling, freezing, steaming), drying (sun drying, oven drying, roasting) and fermentation (wild, yeast, Lactobacillus). Subsequently, the samples were analysed for the maximum levels of caffeine, chlorogenic acid, and epigallocatechin gallate permitted by the European Commission. The caffeine content varied between 0.37 g/100 g dry mass (DM) and 1.33 g/100 g DM, the chlorogenic acid between not detectable and 9.35 g /100 g DM and epigallocatechin gallate could not be detected at all. Furthermore, water content, essential oil, ash content, total polyphenols, total catechins, organic acids, and trigonelline were determined. Gas chromatography—mass spectrometry-olfactometry and calculating of the odour activity values (OAVs) were carried out to determine the main aroma-active compounds, which are β-ionone (honey-like, OAV 132-927), decanal (citrus-like, floral, OAV 14-301), α-ionone (floral, OAV 30-100), (E,Z)-2,6-nonadienal (cucumber-like, OAV 18-256), 2,4-nonadienal (melon-like, OAV 2-18), octanal (fruity, OAV 7-23), (E)-2 nonenal (citrus-like, OAV 1-11), hexanal (grassy, OAV 1-10), and 4-heptenal (green, OAV 1-9).

Formulation is an ancient concept, although the word has been used only recently. The first formulations made our civilization advance by inventing bronze, steel, and gunpowder; then, it was used in medieval alchemy. When chemistry became a science and with the golden age of organic synthesis, the second formulation period began. This made it possible to create new chemical species and new combinations “à la carte.” However, the research and developments were still carried out by trial and error. Finally, the third period of formulation history began after World War II, when the properties of a system were associated with its ingredients and the way they were assembled or combined. Therefore, the formulation and the systems’ phenomenology were related to the generation of some synergy to obtain a commercial product. Winsor’s formulation studies in the 1950s were enlightening for academy and industries that were studying empirically surfactant-oil-water (SOW) systems. One of its key characteristics was how the interfacial interaction of the adsorbed surfactant with oil and water phases could be equal by varying the physicochemical formulation of the system. Then, Hansen’s solubility parameter in the 1960s helped to reach a further understanding of the affinity of some substances to make them suitable to oil and water phases. In the 1970s, researchers such as Shinoda and Kunieda, and different groups working in Enhanced Oil Recovery (EOR), among them Schechter and Wade’s group at the University of Texas, made formulation become a science by using semiquantitative correlations to attain specific characteristics in a system (e.g., low oil-water interfacial tension, formulation of a stable O/W or W/O emulsion, or high-performance solubilization in a bicontinuous microemulsion system at the so-called optimum formulation). Nowadays, over 40 years of studies with the hydrophilic-lipophilic deviation equation (HLD) have made it feasible for formulators to improve products in many different applications using surfactants to attain a target system using HLD in its original or its normalized form, i.e., HLDN. Thus, it can be said that there is still current progress being made towards an interdisciplinary applied science with numerical guidelines. In the present work, the state-of-the-art of formulation in multiphase systems containing two immiscible phases like oil and water, and therefore systems with heterogeneous or micro-heterogeneous interfaces, is discussed. Surfactants, from simple to complex or polymeric, are generally present in such systems to solve a wide variety of problems in many areas. Some significant cases are presented here as examples dealing with petroleum, foods, pharmaceutics, cosmetics, detergency, and other products occurring as dispersions, emulsions, or foams, that we find in our everyday lives.

The rapid growth of the organic food market in Italy and in other developed countries has drawn the attention of researchers and practitioners. The diffusion of pro-environmental concerns and sustainable lifestyles among consumers are often cited as two of the main drivers of the increase in demand for organic food products. Consequently, unveiling the factors that influence consumers’ demand of, and preference for organic food is essential for all the actors involved in the supply chain. This paper presents the results of a research model which relates organic food purchase intention to consumers’ green consciousness, health motivations, food safety concerns, organic product knowledge, family and social context and perception of the intrinsic quality of food. A questionnaire, based on the Theory of Planned Behavior (TPB) and the extant literature on organic food choice, was developed and presented to a sample of 600 Italian consumers. Causal relations among variables were then tested using Structural Equation Modelling. The results suggest that, besides the existence of green consciousness, other variables may affect consumers’ preference for organic food: among these, specific and closely interlinked elements, such as food safety concerns and perceived quality heavily affected the intention to buy organic food products.

Plukenetia volubilis is an underutilized oilseed crop native to the Amazon basin, where it has been utilised by humans since Incan times. The large seeds contain approx. 45–50 % lipid, of which approx. 35.2–50.8 % is α-linolenic acid (C18:3 n-3, ω-3) and approx. 33.4–41.0 % is linoleic acid (C18:2 n-6, ω-6), the two essential fatty acids required by humans. The seeds also contain 22–30 % protein and have antioxidant properties. Due to its excellent nutritional composition and good agronomic properties, it has attracted increasing attention in recent years, and cultivation is expanding. When considering current global challenges, a reformation of our food systems is imperative in order to ensure food security, mitigation of climate change, and alleviation of malnutrition. For this purpose, underutilized crops may be essential tools, which can provide agricultural hardiness and reduced need for external inputs, climate resilience, diet diversification, and improved income opportunities for smallholders. Plukenetia volubilis is a promising up and coming crop in this regard and has considerable potential for further domestication; it has an exceptional oil composition, good sensory acceptability, is well suited for cultivation, and has numerous potential applications in, e.g. gastronomy, medicine, and cosmetics.

The world is facing an unprecedented socio-economic crisis caused by the novel coronavirus infection (COVID-19). It is also spreading through the import and export food supply chains. The Chinese authorities have discovered the COVID-19 virus in various imported frozen meat packages. Traceability plays a vital role in food quality and food safety. The Internet of Things (IoT) provides solutions to keep an eye on environmental conditions, product quality, and product traceability. These solutions are traditionally based on the centralized architecture, which does not guarantee tamper-proof data sharing. The blockchain is an emerging technology that provides tamper-proof data sharing in real-time. This article presents Hyperledger Fabric-based blockchain use case and a quick reference guide to develop the blockchain network for tracking and tracing the supply chain to minimize the risk of COVID-19 in the frozen meat supply chain.

Industries of the food sector have made a great effort to control SARS-CoV-2 indirect transmission, through objects or surfaces, by updating cleaning and disinfection protocols previously focused on inactivating other pathogens, as well as food spoilage microorganisms. The information, although scarce at the beginning of the COVID-19 pandemic, has started to be sufficiently reliable to avoid over-conservative disinfection procedures. This work reviews the literature to propose a holistic view of the disinfection process where the decision variables, such as type and concentration of active substance, are optimised to guarantee the inactivation of SARS-CoV-2 and other usual pathogens and spoilage microorganisms while minimising possible side-effects on the environment and animal and human health.

Acceptance of SNAP benefits has increased in farmers’ markets (FM) over the years. However, getting SNAP recipients to take up the opportunity of extra dollars for healthy food options remains a challenge. Thus, we tracked the use of the Double-up Food Buck (DUFB) program among SNAP recipients who visit participating FMs in Utah to understand the unique characteristics of the program users. Our results identified varying types of program users (multiple and single market shoppers, more frequent and less frequent shoppers). While our findings indicate a higher DUFB transaction in token value among frequent users, larger markets are more likely to have higher DUFB transactions with a higher number of market visits compared to smaller ones. In conclusion, while all types of users may add to the total revenue generated by participating FM, additional initiatives are required to encourage frequent visits and uptake of the program for better access to healthy foods.

Crop plants should be resilient to climatic factors in order to feed ever-increasing populations. Plants have developed stress-responsive mechanisms by changing their metabolic pathways and switching the stress-responsive genes. The discovery of plant transcriptional factors (TFs) as key regulators of different biotic and abiotic stresses have opened up new horizons for plant scientists. TFs perceive the signal and switch certain stress-responsive genes on and off by binding to different cis-regulatory elements. The above 50 species of plant TFs have been reported in nature. DREB, bZIP, MYB, NAC, Zinc-finger, HSF, Dof, WRKY, and NF-Y are important with respect to biotic and abiotic stresses whereas the role of many TFs is yet to explore. In this review, we summarize the role of different stress-responsive TFs with respect to biotic and abiotic stresses. Further, challenges and future opportunities linked with TFs for developing climate-resilient crops are also elaborated.

A community food environment plays an essential role in explaining the healthy life-style patterns of its community members. However, there is a lack of compelling quantitative approaches to evaluate these environments. This study introduces and validates a new tool named the Facility List Coder (FLC), whose purpose is to assess food environments based on data sources and classification algorithms. Using the case of Mataró (Spain), we randomly selected 301 grids areas (100 m2) where we conducted street audits in order to physically identify all the facilities by name, address and type. Then, audit-identified facilities were matched with those automatically-identified and were classified using the FLC in order to determine its quality. Our results suggest that automatically-identified and audit-identified food environments have a high level of agreement. The ICC estimates and their respective 95% confidence intervals for the overall sample, yield the result “excellent” (ICC ≥ 0.9) for the level of reliability of the FLC.

Meteorological drought indicators are commonly used for agricultural drought contingency planning in Ethiopia. Agricultural droughts arise due to soil moisture deficits. While these deficits may be caused by meteorological droughts, the timing and duration of agricultural droughts need not coincide with the onset of meteorological droughts due to soil moisture buffering. Similarly, agricultural droughts can persist even after the cessation of meteorological droughts due to delayed hydrologic processes. Understanding the relationship between meteorological and agricultural droughts is therefore crucial. An evaluation framework was developed to compare meteorological and agricultural droughts using a suite of exploratory and confirmatory tools. Receiver operator characteristics (ROC) was used to understand the covariation of meteorological and agricultural droughts. Comparisons were carried out between SPI-2, SPEI-2 and Palmer Z-index to assess intra-seasonal droughts and between SPI-6, SPEI-6 and PDSI for full-season evaluations. SPI was seen to correlate well with selected agricultural drought indicators but did not explain all the variability noted in agricultural droughts. The relationships between meteorological and agricultural droughts exhibited spatial variability which varied across indicators. SPI is better suited to predict non-agricultural drought states more so than agricultural drought states. Differences between agricultural and meteorological droughts must be accounted for better drought-preparedness planning.

Background: The dietary factors and nutrients contributing to the prevention of microalbuminuria in type 2 diabetic nephropathy is unclear, so we investigated dietary factors affecting urinary albumin excretion in patients with type 2 diabetes. Methods: 42 patients with type 2 diabetes were participated, the subjects were divided to a normal albuminuria group (urinary albumin / creatinine ratio of less than 30 mg / g Cr) and a microalbuminuria group of 30 mg / g to 299 mg / g Cr. We performed casual blood sampling and conducted a food frequency questionnaire survey. Results: There were no significant differences in age, BMI and other physiological and biochemical data, the average daily intake of energy and many of nutrients, while β-cryptoxanthin was significantly lower in the microalbuminuria group than in the normal group (506.4 ± 793.9 μg/day vs. 715.3 ± 500.3 μg/day, p <0.05). The intake of 17 food groups per day showed that the intakes of fruits were significantly lower in the microalbuminuria group than in the normal group (76.9 ± 134.1 g vs. 111.9 ± 84.5 g, p <0.05). Conclusion: These results suggest that fruits and foods rich in β-cryptoxanthin would make it possible to prevent diabetic nephropathy progression.

Blockchain is a data management innovation that allows the linkage of successive records regarding a digital entity, and to store them into a shared, decentralized, distributed and retroactively unchangeable data structure. Each bit of information related to the recorded events contains the public key of the owner, therefore, the whole record is formed by a chain of transactions with blocks of information identifying where the transaction was generated from and its current destination (Nakamoto, 2008). Blockchain is the technology behind Bitcoin, an online currency that was first introduced in 2009. The technology makes it possible to conduct business between members within the network without relying on third parties as guarantors to prove transaction integrity, thus increasing speed and reducing cost of transaction. Moreover, the transparency posed by the technology makes it possible to trace goods and services through all stages, making the technology a unique tool that can be assimilated by, for example, the Agro-food supply chain systems. Specifically, Blockchain is being tested in a pilot project in the UK meat (Beef) industry by the FSA (Food Standards Agency) and the slaughterhouses, with IBM Blockchain platform to ensure full transparency and compliance with regulations, (Evenstad, 2018). However, the uptake of Blockchain in the fresh produce (fresh and fresh, short-life processed fruit, vegetables, salads) supply chain is lagging, in the United Kingdom, and remains untested and limited to literature, models and specific case studies in the United States of America and France. The study aims at understanding how prepared stakeholders are in adopting Blockchain for their operations. An inductive qualitative method was employed through non-structured interviews with three companies and one consumer focus group. The interviews were guided by seven (7) open-ended questions, which were unstructured. The collected data was analyzed with axial coding through constant comparative methods. Seven (7) themes were identified as factors influencing the adoption of Blockchain in the fresh produce supply chain in the UK. These are, novelty of the technology, complexity of the fresh produce supply chain in UK, level of product transformation, technological compatibility with operations, cost and value, Customer (retailer) push for adoption, and public/consumers opinion. The adaptation of Blockchain by the current fresh produce supply chain in the UK and the EU at large will come about when concerns on Novelty, and complexity of supply chain systems are fully addressed.

Nanotechnology enabled sensor miniaturization and extended the range of biological moieties that could be immobilized within a lipid bilayer device. This chapter reviews recent progress in biosensor technologies based on lipid membranes suitable for environmental applications and food quality monitoring. Numerous biosensing applications are presented, putting emphasis on novel systems, new sensing techniques and nanotechnology-based transduction schemes. The range of analytes that can be currently detected include, insecticides, pesticides, herbicides, metals, toxins, antibiotics, microorganisms, hormones, dioxins, etc. Technology limitations and future prospects are discussed, focused on the evaluation/ validation and eventually commercialization of the proposed sensors.

Botulinum neurotoxin (BoNT) intoxication can lead to the disease botulism, characterized by flaccid muscle paralysis that can cause respiratory failure and death. Due to the significant morbidity and mortality costs associated with BoNTs high toxicity, developing highly sensitive, rapid, and field-deployable assays are critically important to protect the nation’s food supply against either accidental or intentional contamination. We report here that the B-cell based biosensor assay (CANARY^® Zephyr) detects BoNT/A in buffer and various food matrices rapidly in ≤ 40 min, in small volumes ≈ 50 μL, with minimal processing of samples, and is extremely portable (suitcase-sized equipment). BoNT/A was detected at limits of detection (LOD) < 0.075 ng ± 0.02 in assay buffer while milk matrices (non-fat, 2 %, whole milk) increased the LOD to < 0.175 – 0.314 ng. Limits of detection for the assay in complex foods were < 1 ng ± 0.0 (neutralized acidic juices-carrot, orange and apple); < 16.7 ng ± 7.7 (liquid egg); and varied from < 0. 39 – 3.125 ng for solid complex foods (ground beef, green bean baby puree, smoked salmon). These results show that the CANARY^® Zephyr assay can be a highly useful tool in clinical, environmental, and food safety surveillance programs.

Rice production is important for global food security but given its large water footprint, efficient irrigation management strategies need to be developed. Expansion of rice growing area is larger than any other crop in Africa due to increasing demand for rice. Three rice irrigation management alternatives with the system of rice intensification (SRI) were field-evaluated against the conventional continuously flooded system (CF) in Tanzania. Production systems included: (1) CF (50 mm ponding depth for the entire season); (2) SRI (40 mm ponding for 3 days and no irrigation for next 5 days); (3) 80% SRI (80% of the SRI ponding); and (4) 50% SRI (50% of the SRI ponding). Experimental evaluation of the four systems was conducted for both wet and dry seasons. For the dry season, the SRI and 80% SRI produced higher yields of 9.68 tons/ha and 11.45 tons/ha and saved 26% and 35% of water, respectively compared to the CF (8.69 tons/ha). The yield advantage of the 80% SRI and SRI over the CF was less during the wet season with 6.01 tons/ha and 5.99 tons/ha of production, and water savings of 30% and 14%, respectively compared to the CF (5.64 tons/ha). The 50% SRI had lowest yield of all for both seasons, 7.48 tons/ha and 4.99 tons/ha for the dry and wet seasons, respectively. Statistically, the 80% SRI treatment outperformed all other treatments over the two seasons with an additional yield of 1.57 tons/ha and 33% (345 mm) water savings compared to the CF. Economic productivity of water (US$/ha-cm) over two seasons was highest for the 80% SRI ($20.27/ha-cm), while it was lowest for the CF ($12.89/ha-cm). Water saved by converting from the CF to the 80% SRI (1.98 million ha-cm) can support a 50% expansion in the current rice irrigated area in Tanzania. Even without irrigation expansion, the 80% SRI can increase rice production by 1.5 million tons annually while enhancing water availability for industrial and environmental uses (e.g., ecological preserves) and help achieve food security in Tanzania and the greater sub-Saharan Africa.

Elevated carbon dioxide (eCO₂) stimulates wheat grain yield, but simultaneously reduces protein (N) concentration. Also other essential nutrients are subject to change. This study is a comprehensive synthesis of wheat experiments with eCO₂, estimating effects on N, minerals (B, Ca, Cd, Fe, K, Mg, Mn, Na, P, S, Zn), and starch. Analysis was made by i) deriving response functions for the relative effect on element concentration in relation to CO₂ concentration, ii) meta-analysis to test the magnitude and significance of observed effects, and iii) relating CO₂ effects on minerals to effects on N and grain yield. Responses range from zero to strong negative effects of eCO₂ on mineral concentration, with largest reductions for the nutritionally important elements N, Fe, S, Zn and Mg. Together with the positive but small and non-significant effect on starch concentration, the large variation in effects suggests that CO₂-induced responses cannot be explained by a simple dilution model. To explain the observed pattern, uptake and transport mechanisms may have to be considered, along with the link of different elements to N uptake. Our study shows that eCO₂ has a significant effect on wheat grain stoichiometry, with implications for human nutrition in a world of rising CO₂.

Gut bacteria play an important role in several metabolic processes and human diseases, such as obesity and its co-morbidities, like fatty liver disease, insulin resistance/diabetes and cardiovascular events. Among several factors, dietary patterns, probiotics, prebiotics, synbiotics, antimicrobials and non-dietary factors, such as stress, age, exercise and climatic conditions, can dramatically impact the human gut microbiota diversity and equilibrium. However, the effect of minor food constituents, including food additives and trace contaminants, on human gut microbiota has received less attention. Consequently, the present review aimed to provide an objective perspective of the current knowledge regarding the impacts of minor food constituents on human gut microbiota and consequently, on human health.

Seafood is a vital source of nutrients, and its consumption has grown globally. Shellfish is a major cause of food allergy and anaphylaxis worldwide, affecting an estimated 0.5-2.5% of the general population. Most basic and clinical research has traditionally focused on crustaceans, leaving the characteristics of mollusk allergy poorly understood. In the Canary Islands, limpets (sea gastropod) are commonly consumed as part of the local cuisine. While some cases of limpet allergy have been reported, there are no published studies featuring large series or detailed clinical analyses of this specific food allergy. A cohort of patients with sensitization to limpet were studied: 66 were monosensitized to limpets (group A), while 64 were also sensitized to other shellfish (group B). Limpet ingestion caused delayed and severe symptoms. In group A, only 11,5% of patients showed positive shellfish allergen detection, compared to 67,9% in group B. The presence of protein bands in the 25-40 and 50-200 kDa range in monosensitized patients distinguishes our study from another researchs. Our study presents the largest reported series of patients with limpet allergy to date. The aim is to analyze the clinical and immunological characteristics of a local sample of limpet-allergic patients, contributing to a better understanding of this emerging condition.

Background: Although insect-based foods (IBF) have been recently proposed as a way to face climate crisis and starvation, they encounter the aversion from Western countries which perceive fear, disgust, and high risk. The contribution of psychology research to food choices highlighted how decisions are taken not only through reasoned attitudes and goal-directed behavior, but also through more automatic associations (dual-systems models). Methods: In this paper we investigated people’s disposition towards IBF by combining (a) explicit attitudes (as assessed via self-report scales), (b) automatic associations (as measured via indirect measures), (c) intention to taste, and comparing different profiles based on (d) psychological factors, including decision-making style, food neophobia, and trust in science and scientist. A pilot sample of 175 Italian University students participated in the study. Results: The analyses on the general sample highlighted rather negative attitudes. The cluster analysis identified 4 decision-making profiles: “the gut-feeling”, “the suspicious”, “the vicarious”, and “the mind”. It revealed more favorable opinions in “the mind” profile, characterized by a rational decision-making style and high trust in science, and very aversive reactions from “the suspicious” profile, characterized by high food neophobia and low trust in science. Conclusions: The results underline the importance of psychological factors in interpreting people's reactions to IBF and changes in dietary habits based on the decision-making process. They suggest possible strategies to promote eco-friendly diets

Sustainability is a concept which engages the weighted balance between economic, environmental and social domains for all life forms and man. Within the frame of sustainability, it is important to realize that coexistence is part of a single life equation. Damage to the environment, social spectrum, and economic sectors (through deviant practices) reap havoc upon all life forms. Sustainability insures the existence of all within the single equation of life. Unsustainable, colonial practices prevail upon the present and the future of life.Sustainability should advocate for healthy environs for all life forms (including, but not exclusive to humans) to sustain themselves. The neglect and/or omission of concern for this mandate will lead to the deuteriation and eventual expiration of any such life forms. Life cannot be sustained in an imposed, artificial domain which is suited solely for mercantile purposes. History has taught us that the cost of dismissing the errors of the past and forging on results in error. This article proposes to explore the impact of the exploitation of agricultural practices, food availability, deforestation, dislocation, and "voluntary tourism" upon "Others" stemming from colonial occupation.

The development of a rapid, sensitive, specific method for detecting foodborne pathogens is paramount in supplying safe food to enhance public health safety. Despite the significant improvement in pathogen detection methods, key issues are still associated with rapid methods, such as distinguishing living cells from dead, pathogenic potential or health risk of the analyte at the time of consumption, detection limit, and sample-to-result. The mammalian cell-based assays analyze pathogens' interaction with the host cells and are responsive to only live pathogens or active toxins. In this study, a human embryonic kidney (HEK293) cell line expressing Toll-Like Receptor 5 (TLR-5) and chromogenic reporter system (HEK dual hTLR5) was used for the detection of viable Salmonella in a 96-well tissue culture plate. This cell line responds to low concentrations of TLR5 agonist flagellin. Stimulation of TLR5 ligand activates nuclear factor-kB (NF-κB) - linked alkaline phosphatase (AP-1) signaling cascade inducing the production of secreted embryonic alkaline phosphatase (SEAP). With the addition of a ρ-nitrophenyl phosphate as a substrate, a colored end product representing a positive signal is quantified. The assay's specificity was validated with the top 20 Salmonella enterica serovars and 19 non-Salmonella spp. The performance of the assay was also validated with spiked food samples. The total detection time (sample-to-result), including shortened pre-enrichment (4 h) and selective enrichment (4 h) steps with artificially inoculated outbreak-implicated food samples (chicken, peanut kernel, peanut butter, black pepper, mayonnaise, and peach) was 15 h when inoculated at 1–100 CFU/25 g sample. These results show the potential of HEK-DualTM hTLR5 cell-based functional biosensors for rapid screening of Salmonella.

Maize is the staple cereal in Malawi, with a daily per capita consumption of 383g (dry matter basis), primarily consumed as dehulled maize flour used to cook nsima, a thick porridge. However, the extent of mass and nutrient loss during dehulling remains unclear in this food-insecure country, where the household maize harvest typically lasts only 6–7 months. In the current study, a milling experiment to determine yield and micronutrient losses was conducted. Milling batches (30 kg) of four maize grain varieties were dehulled at three abrasive disk dehullers under controlled conditions. Mass losses ranged from 18.8% to 42.7%, with a mean of 28.2±5.7%. Maize variety and dehuller significantly affected mass loss (p&lt;0.05). Initial protein, iron, and zinc concentrations were 8.8 ±1.0 g/100g, 20.5±2.0 µg/g, and 18.2 ±2.6 µg/g, respectively. Post-dehulling nutrient true retention varied for protein (49.7% to 75.6%, mean=64.7±7.0%), iron (18.7% to 71.6%, mean=37.6±12.0 %), and zinc (11.0% to 46.2%, mean=27.9±8.7 %). Maize variety significantly influenced mass and protein loss (p &lt; 0.05), while dehuller influenced mass, iron, and zinc losses. However, no significant difference (p &gt; 0.05) was found in the interaction between dehullers and variety on mass and nutrient losses, respectively. Given Malawi's precarious food insecurity situation, transitioning from dehulled maize flour nsima to whole maize flour or less refined nsima, is imperative. Our study findings can have food and nutritional savings for other southern Africa countries where the dehulling practice is rampant.

Heavy metals are dangerous contaminants constituting a threat to human health because they persist in soils and are easily transferred into the food chain, causing damages to human health. Among heavy metals, nickel appears to be one of the most dangerous responsible for different disorders. Public health protection requires nickel detection in environment and food chains; a simple, rapid and sensitive method to detect nickel contamination is represented by biosensors. In this paper we report the setup of a whole-cell based system, in which protoplasts, obtained from Nicotiana tabacum leaves, were used as transducers to detect the presence of heavy metal ions and, in particular, nickel ions. Protoplasts were genetically modified with a plasmid containing the GFP reporter gene under the promoter region of a sunflower small HSP gene control. By this device the presence of heavy metal ions was detected. Thus, the possibility to use this whole-cell system as a novel tool to detect the presence of nickel ions in food matrices was assessed.

As practiced in Africa, urban agriculture (UA) has been examined in the literature and by architecture and urban planning experts, revealing both advantages and disadvantages for health. While the recognized disadvantages are not negligible, the literature focuses mainly on the positive outcomes about food security and improved socio-economic conditions for farmers. However, little research has focused on farmers' perceptions of the effect of this practice on their psychological well-being. This study seeks to delve into this aspect by surveying 733 farmers in Dar es Salaam and Greater Lomé to map UA's distribution, assess its benefits and challenges, study its psychosocial associations, and demonstrate how architectural design and urban planning can enhance its spatial distribution and overall benefits. The standardized Mental Health Continuum-Short Form (MHC-SF) and non-standardized questionnaires are used to evaluate their responses. Using logistic regression and spatial analysis techniques with Python and QGIS 3.32.2-Lima, the analysis uncovers that farmers attribute improved psychological well-being to their involvement in UA. The study found that farmers' happiness due to UA varies by location within a city, with those on the outskirts generally more satisfied than those in urban centers. Additionally, women farmers reported greater happiness than men farmers, highlighting UA's role in empowering women. The research underscores UA's positive association with practitioners' psychological health in Africa and advocates for its integration into urban planning to promote equitable and beneficial urban spaces.

Given the increased provision of international exchange programmes in higher education, this paper examines students’ perceptions of their learning process in one Erasmus+ programme in Food Innovation and Product Design. Using evaluation model of international exchange programme and triple helix model as the analytical framework, students’ testimonials from 2015–2021 were analysed using a critical discourse analysis. EU and non-EU students had similar perceptions of learning outcomes related to knowledge of the food innovation industry, but non-EU students had a stronger sense of awareness of both the international context and multicultural interaction.

YouTube is a very popular social media platform in today’s digital landscape. The primary focus of this study is to explore the underlying sentiment in user comments on food-related videos on YouTube, specifically within two pivotal food product categories: Plant-Based and Hedonic. Our research involved labelling comments using sentiment lexicons such as TextBlob and VADER. Furthermore, the sentiments of the comments were classified using advanced Machine Learning (ML) algorithms, namely Support Vector Machine (SVM), Multinomial Naive Bayes, Random Forest, Logistic Regression, and XGBoost. The evaluation of these models encompassed key macro average metrics, including accuracy, precision, recall, and f1-score. Results from VADER showcased a high accuracy level, with SVM achieving 93% accuracy in the plant-based dataset and 96% in the hedonic dataset. In addition to sentiment analysis, we delved into user interactions within the two datasets, measuring crucial metrics such as views, likes, comments, and engagement rate. The findings illuminate significantly higher levels of views, likes, and comments in the hedonic food dataset, but the plant-based dataset maintains a superior overall engagement rate.

Diet-related diseases impact populations across the globe. While intertemporal preferences—a fundamental preference for the distribution of benefits across time—have been used to explain low-quality food choices, recent literature proposes another cause: inattention to future implications (or opportunity costs) of the options faced. Food choices tend to become habitual to conserve cognitive resources, rather than carefully modeling future health impacts. Both low discount rates for future benefits and attention to future health impacts predict healthier decisions. While intertemporal preferences are stable, attention may provide an opportunity to intervene in the decision process to promote healthier decisions. In this study, we test the impact of a simple message that highlights health during food choice on the healthiness of foods chosen and on health consideration and intertemporal preferences. Our results show that actively considering health outcomes and lower discount rates lead to healthier food choices. We find that messaging increases the consideration of health outcomes during food choice but does not affect intertemporal preferences, suggesting that simple prompts may be an effective way to promote decisions balancing short and long-term benefits by drawing attention to overlooked opportunity costs of choices.

Bacterial endophytes (120) were isolated from six halophytes (Distichlis spicata, Cynodon dactylon, Eragrostis obtusiflora, Suaeda torreyana, Kochia scoparia, and Baccharis salicifolia). These halophiles were molecularly identified and characterized with or without NaCl conditions. Characterization was based on tests such as indole acetic acid (IAA), exopolysaccharides (EPS), and siderophores (SID) production; solubilization of phosphate (P), potassium (K), zinc (Zn), and manganese (Mn); mineralization of phytate; enzymatic activity (acid and alkaline phosphatase, phytases, xylanases, and chitinases) and mineralization/solubilization mechanisms involved (organic acids and sugars). Eleven halophiles (tolerated NaCl 2.5 M) were identified as Oceanobacillus sp. (1), Bacillus sp. (2), Nesterenkonia sp. (3), Bacillus velezensis (4), Halobacillus sp. (5), Oceanobacillus sp. (6), B. velezensis (7) Halomonas sp. (8), B. pumilus (9), Pseudomonas sp. (10) and Oceanobacillus sp. (11). Biochemical responses of nutrient solubilization and enzymatic activity varied between bacteria and the presence of NaCl. Organic acids were involved in P-mineralization and nutrient solubilization. Tartaric acid was common in the solubilization of P, Zn, and K. Maleic and vanillic acid were only detected in Zn and K solubilization, respectively. Moreover, sugars appeared to be involved in the solubilization of nutrients; fructose was detected in solubilization tests. Therefore, these bacteria should be tested as a consortium to mitigate saline stress in glycophytes under a global climate change scheme that threatens to exacerbate soil salinity.

According to numerous recent research papers the consumption of plant-based proteins has been associated with numerous health benefits, including reduced risk of chronic diseases such as heart disease, diabetes, and certain cancers. Plant-based diets are often lower in saturated fat and cholesterol and higher in fiber and phytonutrients, which can support overall health and well-being. Present research investigates the nutritional attributes, functional properties, and potential food applications of hemp and rapeseed protein for a potential use in new food product development, with a certain focus on identifying anti-nutritional factors and bioactive compounds. Through comprehensive analysis, anti-nutritional factors and bioactive compounds were elucidated, shedding light on their impact on protein quality and digestibility. The study also delves into the functional properties of hemp and rapeseed protein, unveiling their versatility in various food applications. Insights from this research contribute to a deeper understanding of the nutritional value and functional potential of hemp and rapeseed protein, paving the way for their further utilization in innovative food products with enhanced nutritional value and notable health benefits.

The use of natural raw substances for food preservation could provide a great contribution to food waste reducing, circular economy enhancing, and green processes application widening. Recent studies indicated that natural preservatives release kinetics significantly influenced the food preservation process. The use of porous materials as absorber for natural essential oils provided nanohybrids with excellent antioxidant and antimicrobial properties. In this study the well-known SBA-15 porous material was used to control the release of the natural preservative thyme oil on food surface and to extend the food shelf-life. Results indicated that the thyme oil loading was higher than other porous materials reported recently and the addition of SBA-15 to the LDPE increases the water/oxygen barrier. The film with the higher thyme-oil@SBA-15 nanohybrid content exhibited the slower release kinetic. The antioxidant activity of the final films ignited after 48 hours, was in the range of 60-70%, and was almost constant for 7 days. Finally, all tests indicated a sufficient improvement by the addition of thyme-oil@SBA-15 nanohybrids in the pure LDPE matrix and the concentration of wt. 10% of such nanocarriers provided the optimum final LDPE/10TEO@SBE-15 active packaging film. This material could be a potential future product for active packaging applications.

Consumer preference not only dictates what food is consumed but how that food is produced. Ingredients in livestock feed that are not antibiotics, not genetically modified, not of animal origin, and that are nutrient-like, tend to be more acceptable to consumers, retailers, and producers. Mono- and diglycerides (MDG) fit these criteria, are commonly used in food, and are generally recognized as safe. But beyond being emulsifiers and a source of energy, MDG are also known to have antimicrobial, immune and microbiome modulation, and angiogenic activity. MDG in broiler diets have been shown to impact a variety of immune-related functions such as regulation of circulating antibodies, as well as decreased gene expression or protein concentration of pro-inflammatory cytokines like TNF-α, IL-1β, IL-6, and IFN-γ. In addition, MDG can affect metabolic function and intestinal integrity. Results of this review show that MDG can serve as antimicrobial and growth-supporting alternatives for reducing poultry production losses, improving resource utilization, and meeting consumer demand for sustainably produced and safe animal protein.

Over the past few decades, synthetic polymer production has increased, and the production of plastics has surpassed all other man-made materials due to their versatility. Moreover, packaging plastic makes up around 40% of global plastic production. However, the excessive usage of synthetic packaging materials has led to severe environmental and health-related issues. Therefore, biobased packages are considered alternatives to substitute synthetic packaging on the market. Furthermore, the choice of packing material in the food industry is a perplexing process as it depends on various factors, such as the type of food product, its sustainability, and environmental conditions. Interestingly, due to proven gas barrier properties and biological activity, polysaccharide-based bioplastics show the potential to expand the trends in food packaging, including edible films and intelligent and active food packaging. This review discusses the structure, properties and recent developments in polysaccharide-based bioplastics as food packaging materials.

The real-time monitoring of food freshness in refrigerators is of significant importance in detecting potential food spoiling and preventing serious health issues. One method that is commonly reported and has received substantial attention is the discrimination of food freshness by the tracking of volatile molecules. Nevertheless, the ambient environment of low temperature (normally below 4^oC) and high humidity (90% R.H.) as well as poor selectivity in sensing gas species remain the challenge. In this research, an integrated smart gas-tracking device is designed and fabricated. By applying pump voltage on the yttria-stabilized zirconia (YSZ) membrane, the oxygen concentration in the testing chamber can be manually tailored. Due to the working principle of the sensor following the mixed potential behavior, distinct differences in sensitivity and selectivity are observed for the sensor that operated at different oxygen concentrations. Typically, the sensor gives satisfactory selectivity to H₂S, NH₃, and C₂H₅OH at the oxygen concentrations of 10%, 30%, and 40%, respectively. In addition, an acceptable response/recovery rate (within 24 s) is also confirmed. Finally, a refrigerator prototype that includes the smart gas sensor is built, and satisfactory performance in discriminating food freshness status of fresh or semi-fresh is verified for the proposed refrigerator prototype. In conclusion, these aforementioned promising results suggest that the proposed integrated smart gas sensor could be a potential candidate for alarming food spoilage.

The windowpane oyster Placuna placenta, lives in brackish coastal waters and has long been economically important to the Philippines because of its durable and translucent shell, which is used as a glass substitute and material for making windowpanes and handicrafts. There has been considerable degradation of the windowpane oyster fishery in past decades. Moreover, there are waste and under-exploited by-products such as the meat, which though nutritious and edible, currently has a very low value; its use being confined to dishes consumed by families in the fishing community. Historically there are instances of excellent practice in terms of regulating the windowpane oyster fishery, while in recent times there have been local initiatives to restore this and to develop high value food products from the meat. These initiatives have, however, never been followed through at a provincial or national level. Research on other molluscs and marine organisms highlights that these also contain high value pharmaceutical products. This review compiles evidence to establish the groundwork for an essential and comprehensive multidisciplinary research program centred around the windowpane oyster, which would ensure a high value for all parts of the oyster, including those currently discarded. By fostering a sustainable and circular economy within this fishery sector and its associated industry, its economic value would be amplified. This is particularly important for oyster harvesters in the Philippines, who often find themselves at the economic ladder's lower rungs. By integrating the principles of a circular economy, this initiative would not only aim to uplift the economic prospects of these harvesters but in doing so would drive the restoration of the windowpane oyster to its former range.

Allergies are a common and increasing health problem affecting millions of people worldwide. In addition to genetic predisposition, this increase in allergic cases is attributed to air pollution, climate change, more time spent indoors, lack of physical activity, and alterations in eating habits. The Mediterranean diet (MD), which includes a lot of fruits and vegetables, whole grains, legumes, nuts, olive oil and fish has been linked to a variety of health benefits, including a lower risk of chronic and allergic diseases. The purpose of this paper is to explore the effects of the dietary components of the MD on food allergies. Electronic databases PubMed, Scopus, Science Direct, and EBSCO were used to conduct this systematic review up to March 2023. 696 studies were initially identified and nine were included (five human and four animal studies). The findings of this review showed an overall beneficial effect between the food components of the MD and food allergies. Although the results are promising, the limited number of studies highlights the need for more research.

World health is increasingly threatened by the growing number of spice-related food hazards. Further development of reliable methods for rapid, non-targeted identification of counterfeit ingredients within the supply chain is needed. ENEA has developed a portable, user-friendly photoacoustic laser system for food fraud detection, based on a quantum cascade laser and multivariate calibration. Following a study on the authenticity of saffron, the instrument was challenged with a more elusive adulterant, olive leaves in oregano. The results show that the reported method of laser sensing and chemometric analysis was able to detect adulterants at mass ratios of at least 20% in less than five minutes.

Exposure to bisphenol analogues can occur in several ways throughout the food production chain with their presence at higher concentrations representing a risk to human health. This study aimed to develop effective analytical methods to simultaneously quantify BPA and fifteen bisphenol analogues (i.e., bisphenol AF, bisphenol AP, bisphenol B, bisphenol BP, bisphenol C, bisphenol E, bisphenol F, bisphenol G, bisphenol M, bisphenol P, bisphenol PH, bisphenol S, bisphenol Z, bisphenol TMC and tetramethyl bisphenol F) present in canned foods and beverages. Samples of foods and beverages available in the Swiss and EU markets (n = 22) including canned pineapples, ravioli and beer were prepared and analyzed using QuEChERS GC-MS. The quantification method was compared to a QuEChERS LC-MS/MS analysis. This allowed for the selective and efficient quantitative simultaneous analysis of bisphenol analogues. Quantities of these analogues were present in 20 of the 22 samples tested with the most frequent analytes at higher concentrations; BPA and BPS being discovered in 78% and 48% of cases respectively. The study demonstrates the robustness of QuEChERS GC-MS for determining low quantities of bisphenol analogues in canned foods. However, further studies are necessary to achieve full knowledge of the extent of bisphenol contamination in the food production chain and its associated toxicity.

The purpose of this work was to achieve non-destructive detection of the internal defects of in-shell walnuts using X-ray radiography technology based on improved Faster R-CNN network model. First, the FPN structure was added to the feature extraction layer to extract richer image information. Then ROI Align was used to instead of ROI Pooling for eliminating the localization bias problem caused by quantization operation. Finally, the Softer-NMS module was introduced to the final regression layer with the predicted bounding box for improving the localization accuracy of the candidate boxes. The results indicated that the internal defects in intact walnuts with shells could be identified effectively using the proposed improved network model in this study. Specifically, the discrimination accuracy of the in-shell sound, shriveled and empty-shell walnuts were 96.14%, 91.72% and 94.80% respectively, and the highest overall accuracy can reach 94.22 %. Contrasted with original Faster R-CNN network model, the mAP and F1-value of the improved Faster R-CNN model increased by 5.86% and 5.65%, respectively. Consequently, the proposed method can be applied for the in-shell walnuts with shriveled and empty-shell defects.

pH is the major factor that makes producers in aquaponics frustrated, since the main three organisms (aquatic animal, plant, and microbes) in the system with different preferences. Yet, amending the growing environment with additional C is a potential method to improve the growth of shrimp and plants as well as the establishment of microbe. A detailed study of the effects of pH and additional C on aquaponics under saline conditions has not been investigated. In this study, the effect of pH and additional C on the growth performance of shrimp (Litopenaeus vannamei) and five edible plants in marine aquaponic systems using the nutrient film technique (NFT) was evaluated. The results indicated that at both pH 6.5 treatments, plants grew better; nevertheless, the growth performance of plants in pH 7.5 with additional C was improved and showed a similar yield to lower pH treatments. On the other hand, shrimp growth was little affected by pH and additional C. A higher impact of imbalanced ionic composition on shrimp performance may have contributed to this trend. Hence, we suggest that only if the ionic composition is managed can make RO water a suitable source of water for shrimp-based aquaponic. In spite of this, more research is required.

Policies to require front-of-package labels (FOPLs) on foods may help Indian consumers better identify foods high in nutrients of concern including sugar, saturated fat, and sodium, and discourage their consumption, outcomes critical for preventing rises in diet-related non-communicable disease. The objective was to test whether FOPLs helped Indian consumers identify ‘high-in’ foods and reduce intentions to purchase them. We conducted an in-person randomized experiment (n=2,869 adults between ages 18 and 60 years old) in six states of India in 2022. Participants were randomized to one of five FOPLs: a control label (barcode), warning label (octagon with “High in [nutrient]”), Health Star Warning (HSR), Guideline Daily Amount (GDA), or traffic light label. Participants then viewed a series of foods high in sugar, saturated fat, or sodium with the assigned FOPL, and rated product perceptions and label reactions. Fewer than half of participants in the control group (39.1%) correctly identified all products high in nutrient(s) of concern. All FOPLs led to an increase in this outcome, with the biggest differences observed for the warning label (60.8%, p<0.001) followed by the traffic light label (54.8%, p<0.001), GDA (55.0%, p<0.001), and HSR (45.0%, p<0.01). Relative to the control, only the warning label led to a reduction in intentions to purchase the products. The results suggest that warning labels are the most effective FOPL to help Indian consumers identify and avoid unhealthy foods.

This study has investigated the effect of nutrition labeling on consumer guilt, in situations where consumers ingest products that have an unhealthy image. The first investigation has examined the effects of types of nutrition labeling (adding healthy ingredients/reducing unhealthy ingredients). The second investigation has examined the influence of two goal-activation types(utilitarian and hedonic) and nutrition labeling on consumer guilt. The findings reveal that the utilitarian-goal-activation group felt less guilty about consuming a product with a reduced unhealthy ingredient than they did about consuming a product with an added healthy ingredient. In addition, there were interactions between the two variables, since consumer goal activation had more effect on consumer guilt about products with reduced unhealthy ingredients than on products with added healthy ingredients. Based on these results, the academic and practical implications of the present study are discussed. and proposes several directions for future research.

Background: Patients in the postoperative period following bariatric surgery are at risk of developing eating disorders. This study aims to analyse the relation between bariatric surgery and the development and recurrence of eating disorders. Material and methods: Literature review was done on 15th November 2020. Fourteen studies that met the eligibility criteria were included for qualitative synthesis, and 7 studies for meta-analysis. Results: The prevalence of eating disorders in the postoperative period was 7.83%, based on the 7 studies in the meta-analysis. Binge eating disorder alone was 3.81%, which was the most significant factor, and addressed in 6 of these studies. Conclusion: The investigated studies have significant methodological limitations in assessing the relation between bariatric surgery and eating disorders, since they mostly present data on prevalence. This study attempted to explain the definition, objectives, and key stages in mud crab nursery activities. The nursery stages of Scylla spp was started from megalopa stage to several crablet instar stages or started from earlier crablet stage to several crablet stages. Direct stocking of megalopa into ponds is not recommended due to their sensitivity. Instead, nursery rearing is needed to produce mud crab of larger size before stocking. Individual nursery rearing results in higher survival rate (up to 100%), but with reduced growth rate, and a more complicated maintenance process compared with communal rearing. Nursery of mud crab can be done indoors, or outdoors, with adequate shelter and feed required to obtain good survival and growth performance. Artemia nauplii are the main, established nursery feed, particularly at megalopa stage, while survival rate may be improved if combined with artificial feed, such as micro bound diet formulations. Water quality parameters, identical to those proposed in tiger shrimp culture, can followed. Crablets may be transported to the pond location with, or without water. The provision of monosex seeds from mud crab hatcheries is expected to become more common, increasing seed price, and thus improving income of farmers. Numerous aspects of mud crab nursery, including nutrition, feeding strategies, understanding of their behaviour, i.e., cannibalism, control of environmental factors, and practical rearing techniques, still need further improvement.

This study aims at providing a systematic and critical review on the state-of-the-art of life cycle applications from the circular economy point of view. In particular, the main objective is to un-derstand how researchers adapt life cycle approaches for the measurement of the empirical cir-cular pathways of agri-food systems along the overall lifespan. To perform the literature review, PRISMA protocol was considered to conduct a review by qualitative synthesis. Specifically, an evaluation matrix has been set up to gather and synthesize research evidence, by classifying pa-pers according to several integrated criteria. The literature search was carried out employing scientific databases. Findings evidence that the most common circularity topics are about closed-loop production systems, i.e. nutrient recovery for agricultural purposes, production of renewable energy, valorization of residues and wastes as fertilizers, food waste, and agro-wastes recycling for agriculture. To evaluate the benefits/impacts of CE strategies, Life Cycle Assess-ment (LCA) proved to be the most common methodology applied by authors, as it can help to meet the main CE requirements slowing and closing resource loops.

Serious outbreaks of foodborne disease have been caused by Listeria monocytogenes found in retail delicatessens and the severity of disease is significant, with high hospitalization and mortality rates. Little is understood about the formidable public health threat of L. monocytogenesin all four niches, humans, animals, food and environment in Egypt. This study analyzed the presence of L. monocytogenes collected from the four environmental niches and bioinformatic analysis was implemented to analyze and compare the data. PCR was used to detect virulence genes encoded by pathogenicity island (LIPI-1). prfA amino acid substation that causes constitutive expression of virulence was common in 77.7% of isolates. BLAST analysis did not match other isolates in the NCBI database suggesting this may be a characteristic of the region associated with these isolates. A second group included the NH1 isolate originating in China, and BLAST analysis showed this prfA allele was shared with isolates from other global locations such as Europe and North America. Identification of possible links and transmission pathways between the four niches, helps to decrease the risk of disease in humans, to take more specific control measures in the context of disease prevention, to limit economic losses associated with food recalls and highlightens the need to treatment options.

Waste orange peel represents a heavy burden for the orange juice industry, estimated in several million tons per year worldwide; nevertheless, this by-product is endowed with valuable bioactive compounds, such as pectin, polyphenols and terpenes. The potential value of the waste orange peel has stimulated the search for extraction processes, alternative or complementary to landfilling or to the integral energy conversion. This study introduces controlled hydrodynamic cavitation processes, as a new route to the integral valorization of this by-product, based on simple equipment, speed, effectiveness and efficiency, scalability, and compliance with green extraction principles. Waste orange peel, in batches of several kg, was processed in more than 100 L of water, absent any other raw materials, in a device comprising a Venturi-shaped cavitation reactor. The extractions of pectin, endowed with a very low degree of esterification, polyphenols (flavanones and hydroxycinnamic acid derivatives), and terpenes (mainly d-limonene) were effective and fast (high yield, few min of process time), as well as the biomethane generation potential of the process residues was effectively exploited. The achieved results proved the viability of the proposed route to the integral valorization of waste orange peel, though wide margins exist for further improvements.

Specific nutrients including n-3 long chain polyunsaturated fatty acids (LCPUFAs), flavonoids, vitamin A, D and E are considered to possess protective properties on human health by impacting on immunological reactions. An ‘inflammation-suppressive’ effect appears to be the common denominator of the beneficial effects of most of these dietary components which may protect against the development of chronic immune disorders such as allergy. However, the majority of these promising data are from preclinical studies such as animal disease models, as the majority of clinical studies only indicate associations. PUFAs, especially n-3 LCPUFAs, have been shown to interact with both the sensitization as well as the effector phase in food allergy. However, it should be noted and realised that PUFAs are highly susceptible to lipid oxidation. Flavonoids and fat-soluble vitamins both contain anti-inflammatory properties and are able to act as anti-oxidants as well. Here, we explore the anti-allergic properties of PUFAs, flavonoids and fat-soluble vitamins in order to create an overview and, more importantly, suggest a strategy to target food allergies using these components and combinations thereof. Dietary n-3 LCPUFAs and the above mentioned micronutrients are promising anti‐allergy agents capable of influencing the allergic immune response through multiple and different biological pathways.

In contrast to Th1 immune responses against pathogenic viruses and bacteria, the incipient events that generate Th2 responses remain less understood. Part of the difficulty in identifying universal operating principles stems from the diversity of entities against which cellular and molecular Th2 responses are produced. Indeed, such responses are launched towards harmful macroscopic parasites and noxious substances such as venoms but also against largely innocuous allergens. This suggests that the canonical understanding about sensing and recognition applied to Th1 responses may not be translatable to Th2 responses. This review will discuss processes and signals known to occur in Th2 responses, particularly in the context of food allergy. We propose that perturbations of homeostasis at barrier sites induced by external or internal subverters that either activate the immune system or lower its threshold activation are the major requirement for allergic sensitization. Innate signals produced in the tissue under these conditions equip dendritic cells with a program that shapes an adaptive Th2 response.

Food systems will need to undergo considerable transformation. To be better prepared for and resilient to uncertainty and disturbances in the future, resource users and managers need to further develop knowledge about the food and farming system, with its dominating feedback structures and complexities, and to test robust and integrated system-based solutions. This paper investigates how participatory system dynamics modeling can be adapted to groups at the community level with low or no formal educational background. The paper also analyzes the refinement of workshop participants’ mental models as a consequence of a participatory system dynamics intervention. For this purpose, we ran two workshops with small-scale farmers in Zambia. Analysis of workshop data and post-workshop interviews shows that participatory system dynamics is well adaptable to support an audience-specific learning-by-doing approach. The use of pictures, objects and water glasses in combination with the basic aspects of causal loop diagramming makes for a well-balanced toolbox. Participants acquire understanding that is also relevant beyond systems thinking in that is offers a range of practical insights such as a critical evaluation of common food security strategies.

This paper explores Burger King's sustainability efforts in the face of growing environmental and social challenges. It begins by defining sustainability and its importance in corporate operations, then transitions to analyze Burger King's specific practices, particularly its efforts to reduce methane emissions from beef production and tackle deforestation linked to its supply chain. While the company has made some strides in addressing environmental concerns, such as introducing low-emission beef burgers, these initiatives have been deemed inadequate by experts. The paper highlights the gaps in Burger King's approach to sustainability and compares it to industry leaders like McDonald's, emphasizing the need for more robust and transparent measures. The conclusion suggests that Burger King must take more aggressive steps in aligning its operations with sustainable practices to meet the demands of modern consumers and secure its long-term viability.

Background/objective: Tools to accurately and efficiently measure the dietary intake of Nigeria are lacking. We aimed to develop and assess the usability of a new online dietary assessment tool for Nigeria, myfood24 West Africa. Methods: We developed myfood24 West Africa database using data from existing food composition tables, back-of-pack labels of packaged foods and research articles. A 7-step approach was used: identified data sources, selected foods, processed/cleaned data, calculated nutrient content of recipes, created/allocated portion sizes, quality-checked database, and developed food accompaniments. To pilot myfood24 West Africa, we recruited 179 university staff living in Nigeria using a cross-sectional design; usability was assessed using a questionnaire that incorporated the System Usability Scale (SUS) and feedback session. Results: The database included 924 foods with up to 54 nutrients and 35 portion-size images allocated to foods. 60% of the data were sourced from the 2019 West Africa Food Composition Table, 17% from back-of-pack labels, 14% from the 2017 Nigeria Food Composition Table, 5% from generated recipes and 4% items from published literature. 30% (n=53) self-recorded their diet on their own and 1345 entries were made. The mean SUS score of 74 (95% CI: 68,79) indicated good usability. The feedback showed the tool was easy to use, educative, and included a variety of locally foods consumed. Conclusion: This new tool will enhance the dietary assessment of the Nigerian population. More work will cover more foods from other regions of Nigeria and West African countries.

Fungal infections (FIs) are spreading globally causing a significant public health concern. However, its documentation remains sparse in Africa, particularly in Rwanda. This literature review, aims to assess the risk and document current gaps in evidence and policy. It summarizes the published data about FIs in Rwanda, including ten reports published between 1972-and-2022. Blastomyces, Candida, Cryptococcus, Histoplasma, Microsporum, Pneumocystis, Rhinosporidium, and Trichophyton caused human infections. These infections primarily affected the brain, respiratory, urinary and reproductive organs, and they were diagnosed using culturing, histopathology, immunology, and/or microscopic techniques. Our findings provide an overview of the diversity and distribution of FIs, highlighting significant limitations in the country’s diagnostic capacity and surveillance system for FIs. Also, indicating severe gaps in evidence to inform policymaking, guide strategic planning and intervention, underscoring the urgent need to build national capacity in fungal diagnosis, surveillance, and research. Raising awareness among the public, scientific community, healthcare providers, and policymakers remains crucial. Furthermore, this report reveals the threats of FIs on public health and food insecurity in Rwanda. A Multisectoral One Health Strategy is essential in research and intervention to determine and reduce the health and safety impacts of fungal pathogens on human, animal, and the environment.

Sri Lanka's vulnerability to climate change-induced natural disasters, particularly floods, under-scores the urgent need for an integrated approach to disaster risk management (DRM) that ad-dresses the interconnected challenges within the water-food-land-energy nexus. The Deduru Oya basin, located in the north-western region, exemplifies this vulnerability, with its predominantly intermediate climatic zone susceptible to flooding. While the focus has traditionally been on flood risk reduction, it is imperative to recognize the broader implications of floods on water, food, land, and energy systems. This study aims to strengthen data acquisition and management efforts to better understand rainfall trends and their impact on the water-food-land-energy nexus in the Deduru Oya basin. By compiling 60 years of rainfall data and conducting time series analysis, we observed a decreasing trend in monthly rainfall, particularly during the South-West Monsoon, Second Inter Monsoon, and North-East Monsoon seasons. These findings have significant implica-tions for water availability, agricultural productivity, land use patterns, and energy generation in the basin. Moreover, the malfunction of stakeholders' responsibilities for local-level flood risk management exacerbates the challenges faced by communities living in flood-prone areas. By in-tegrating insights from this study into flood risk management strategies, stakeholders can develop holistic approaches that not only mitigate flood risk but also enhance resilience across the water-food-land-energy nexus. This interdisciplinary approach will inform policymakers, flood manag-ers, practitioners, and the community in formulating effective strategies to address the multifacet-ed challenges posed by floods in the Deduru Oya basin and beyond.

The rates of obesity and obesity-related diseases continue to increase worldwide, classifying obesity as a global epidemic. Endogenous opioids have been implicated in influencing feeding behavior; however, the role of each opioid peptide is still only partially characterized. Therefore, we assessed the role of the proopiomelanocortin (POMC)-derived peptide beta-endorphin (β-END) in long-term high-fat diet (HFD) feeding and glucose homeostasis and assessed if sex-related differences exist in these processes. Male and female mice lacking the ability to produce β-END and their respective controls were subjected to a 12-week HFD consumption to determine the role of the opioid peptide in food intake and glucose homeostasis. Body weight and food intake were measured weekly for twelve weeks. At weeks 6 and 12, plasma glucose levels were measured using an oral glucose tolerance test. Here, we report that male β-END deficient mice gained more weight and consumed more calories than their wildtype controls; however, this difference was not observed in the female mice. Regardless of genotype, female mice consumed more calories per body weight when compared to male mice despite their smaller body weights. Moreover, our findings suggest differences in glucose homeostasis between the wildtype and knockout mice and that these were only observed at week six but not at week 12. Overall, our study suggests that endogenous β-END may play a role in controlling body weight, feeding behavior, and glucose homeostasis and that sex-related differences may exist in this regard.

Infections with multi-drug-resistant (MDR) pathogens in food-animals threaten public health and food security. However, the epidemiology and factors associated with MDR Escherichia coli on Ugandan farms are not well known. This study investigated the prevalence, resistance patterns and factors associated with MDR E. coli carriage on chicken farms. A total of 158 E. coli strains were isolated from 158 chicken farms. The disc diffusion method for susceptibility testing was performed. Clinical breakpoints were interpreted according to Clinical and Laboratory Standards Institute guidelines. MDR was defined as resistance to three or more classes of antimicrobials. MDR E. coli prevalence on chicken farms was 62.7% (95% CI: 55.0 – 70.3). High resistance was observed against ampicillin 79.8% (95% CI: 72.7–85.4), tetracycline 72.8% (95% CI: 65.2–79.2), cotrimoxazole 55.7% (95% CI: 47.8–63.3), and ciprofloxacin 38% (95% CI: 30.7–45.9). Farmers who were males (APR = 0.72, CI: 0.55, 0.93), and attained at least secondary education (APR=0.64, CI: 0.46, 0.88) and administration of recommended antibiotic doses (APR = 0.76, CI: 0.59–0.96) posed a lower risk of MDR E. coli carriage. Farms without footbaths posed a heighten risk (APR=1.48, CI: 1.16–1.88). MDR E. coli were highly prevalent on chicken farms. This study underscores the need for antimicrobial stewardship and improved infection prevention strategies on chicken farms.

Agricultural productivity is expected to decrease under changing climate conditions that correspond to the stability of West African food systems. Although numerous studies evaluated food production gaps or impacts of climate variability on crop yields, many uncertainties are associated with climate extremes, but also rapid population growth and the corresponding dietary lifestyle determine farming activities. Here, we present a food supply and demand analysis based on the relationship between climate change, crop production, as well as population growth in three experimental sites from southwestern Burkina Faso to southwestern Ghana. The method consists of a tiered approach that encompassed a statistical analysis of historical climate as well as agricultural time series using boxplots and a trend test by Mann-Kendall. Food balance sheets were calculated by estimating the demand using a population growth model linked to food supply with local consumption patterns. Results of the boxplot analysis revealed for the majority of climate time series light to strong right-skewed distributions with either a few heavy rainfall or hot temperature events. We found almost insignificant rainfall and temperature trends for both sites in the Sudano-Guinean savannah. The rainfall regime of southwestern Ghana indicated an insignificant upward or downward trend while the temperature significantly increased over time. Crop yield boxplots demonstrated mainly right-skewed distributions for cereals, legumes and tubers as well as cash crops such as cotton. Backed by the Mann-Kendall test, maize and sorghum significantly enhanced in both study areas of the Sudano-Guinean savannah. Southwestern Ghana depicted a different crop pattern where cassava and plantain showed a strong upward trend at a confidence level of 1%. The grouped food balances sheets across the regions illustrated a surplus for the Sudano-Guinean savannah ranging from 221.2 megatons (Mt) to 4,846.77 Mt while southwestern Ghana exhibited a deficit between -193.33 Mt and -16,188.82 Mt. Despite a growing yield of various crops, food demand outpaces the regional production. Hence, it is recommended to focus on a larger array of commodities, imports and marketing of farm products.

By the end of 2023, biowaste must be completely separated or recycled at source based on the EU legislation. Separate biowaste collection and valorisation towards biofuels could play an essential role in the biobased circular economy. In this context, the principal goal of this paper was to demonstrate in pilot scale the technological solution of bioethanol production via the utilisation of urban source-separated biowaste within the city context of Athens, Greece. More specifically, the main aim was the demonstration of a pilot system in continuous operation (over 10 operating cycles) with real feedstock – wet separately collected biowaste. From the 11 pilot trials performed with wet feedstock, the mean starch and cellulose degradation of the pilot trials amounted up to 80.69±16.27% and 79.41±10.37% respectively, while the bioethanol yield was 74.05±6.82%. The latter was comparable to that of more intensive pretreatment methods. Homogenization and shredding that was applied in this study, stand as promising and cost-effective pretreatment methods for bioethanol production from wet feedstock. Further research is needed to optimize conditions and evaluate scalability. Nevertheless, pilot scale testing is a crucial step in the development and deployment of this technology since it serves as a bridge between laboratory research and full-scale implementation, offering a practical and controlled environment to validate and optimize the technology while minimizing risks and uncertainties.

Lactic acid bacteria are traditionally applied in a variety of fermented food products and have the capability to produce a wide range of bioactive ingredients during fermentation including vitamins, bacteriocins, bioactive peptides and bioactive compounds. The bioactivity and health benefits associated with these ingredients have gained interest in applications in the functional dairy market and have relevance both as components produced in situ and as functional additives. This review provides a brief description of the regulations regarding the functional food market in the European Union as well as an overview of some of the functional dairy products currently available in the Irish and European markets. A better understanding of the production of these ingredients excreted by lactic acid bacteria can further drive the development and innovation of the continuously growing functional food market.

The short-term intake (ESTI) of Hungarian consumers to pesticide residues was assessed based on 2331 test results obtained during 2017-2021 monitoring program in the frequently analyzed apples, sour cherries, table grapes, peaches, nectarines, peppers and strawberries (23.5% of all samples taken from 119 crops). The age-specific consumption data were obtained from two representative national food consumption surveys (2009 and 2018-2020). The exposure was characterized with Hazard Quotient and Hazard Index considering the acute reference doses of pesticide residues detected in the samples. When ESTI was calculated with all detected “single“ residues and variability factor of 3.6, recommended for evaluation of monitoring results, the HI only exceeded 1 for children &lt;3 years old eating grape (1.50-1.81). HI was &lt;1 when any of the 6 foods were eaten together within one day. Between forty and fifty percent of samples contained 2-23 residues. Though, the individual residue concentrations were below the corresponding MRLs, multiple residues being present in one sample resulted in maximum HI values in apples (1.14); grapes (6.57); peaches and nectarines (2.57); strawberries (2.74); peppers (10.44). Residues with low ARfD values contributed most. Applying HI is simple, but provides only point estimates; therefore, it should only be used in first-tier risk assessment.

In these times, consumers mistakenly believe that the terms “expiration date” and “best before” found on packages only convey information about food safety. Consequently, a misunderstanding of these terms contributes to food waste. In this sense, the understanding and behavior of the con-sumer with respect to the two terms were evaluated; in addition, the consumer's perception of the health risks of consuming expired food was analyzed. The research was carried out with the population of the sector of Lurigancho-Chosica, Lima – Peru; sample size was 555 participants. An online survey was sent to consumers over 18 years of age, from different sociodemographic and socioeconomic conditions. In general terms, it was found that 45% (p <0.01) consider that both terms mean the same thing, this result is a problem for food safety. The 67% (p <0.05) and 45% (p <0.05) correctly defined the first and second terms, respectively; however, the behavior is not coherent with the understanding of the terms. In addition, irrational and dangerous behavior toward expired food was evidenced, i.e., they consume expired food - "expiration date", and discard expired food - "best before". Finally, the health risks they perceived from consuming expired foods of both terms were: upset stomach, vomiting, gas, intoxi-cation, and malnutrition; these perceptions are erroneous and unfounded. Sociodemographic and socioeconomic conditions influence the under-standing, behavior, and perception of health risks. Therefore, in general lines, the level of understanding of the terms was low (p<0.01), the be-havior was inappropriate toward expired food (p<0.01), and the percep-tion of the health risk of consuming expired food was incorrect (p<0.01).

It is important for food recognition to separate each ingredient within a food image at the pixel level. In this paper, we propose a new approach to segment ingredients by utilizing a CNN-based Single-Ingredient Classification Model. In detail, we firstly introduce a standardized biological-based hierarchical ingredient structure and construct a single-ingredient image dataset based on this structure. Then, we build a single-ingredient classification model based on a novel convolutional neural network (CNN) architecture that utilizes an attention mechanism. Afterwards, we propose a new framework for segmentation using the above single-ingredient classification model as the backbone. In this framework, two methods are involved in segmenting ingredients in the food images. We introduce five evaluation metrics (IoU, Dice, Purity, Entirety, Loss of GTs) to assess the performance of ingredient segmentation in terms of ingredient classification. Extensive experiments demonstrate the effectiveness of the proposed method, achieving an maximal mIoU of 0.65, mDice of 0.77, mPurity of 0.83, mEntirety of 0.80, and mLoGTs of 0.06 on the FoodSeg103 dataset. The results confirm that our CNN-based architecture achieves higher segmentation performance compared to ResNet18 and EfficientNet-B0 when used as the backbone for ingredient segmentation. We believe that our ingredient segmentation approach lays the foundation for subsequent ingredient recognition.

The edible portion of Cannabis sativa L. are the seeds. The seeds are generally used for the production of hemp oil, appreciated for the high percentage of α-linolenic acid. The waste obtained after seeds oil extraction, reduced in fine powder, is the subject of this study. Since hemp seeds are considered to be a source of many valuable bioactive compounds, the addition of hemp seed flour to durum wheat for making fortified bread could have an effect on the health of consumers. The aim of this study was to use variable percentages of hemp seed flour for the production of bread, and to determine the fortification impact on chemicals, texture, organoleptic characteristics, crumb color, changes in crumb texture, total polyphenols, free radical scavenging activity and amino acids contents. The rheological and chemical qualities of bread samples, obtained by using a durum wheat cultivar Ciclope fortified with defatted hemp seeds flours, were evaluated. The solid residue left after the extraction of the oil from seeds (generally thrown away as waste or added to feed) was shredded and sieved at 0.530 mm (Hemp 1) or 0.236 mm (Hemp 2). Samples of fortified breads were obtained by substitution of variable percentages of durum wheat flour with the two hemp flours (5%, 7.5%, and 10%). Fortified bread’s total phenolic content was in a range of 0.73±0.017 and 1.73±0.029 mg GAE/g and an-ti-radical scavenging activity was included in the range from 1.17±0.099 and 3.18±0.071mmol TEAC/100g, according to the increasing fortification. Comparison between bread made with Ciclope semolina and hemp flour fortified breads, showed a large increase in amino acid content in fortified samples ones. In particular, bread fortified with 10% Hemp 2 flour highlights a greater content of glutamic acid, tyrosine, proline and essential amino acids such as leucine and isoleucine, compared to the other samples with same percentage of substitution. The amount of hemp seed flour influenced the color of the crumb by increasing the yellow index from 18.24 (100% Ciclope) to 21.33 (bread with Hemp 2 flour at 5%).

European Protected Areas (PAs) are facing today complex and highly diverse challenges. Farm management structures have changed over time and traditional low-intensity farming systems have become unprofitable leading to either abandonment or intensification of farming practices. These changes have contributed to the environmental degradation of biodiversity rich agricultural landscapes and the loss of cultural knowledge and traditions. The interrelations developing at various levels between agricultural land use, nature and landscape conservation, and socio-economic activities influence the sustainable development and management of PAs. The development of certification and labelling schemes for high quality agri-food products with a PA logo is a rural development process that involves multiple functions which could generate environmental improvements and positive socio-economic changes. The differentiation of the agricultural products of PAs, through labelling and information, can be a proactive market-based instrument to support the local economy, promote environmentally sound practices, raise environmental awareness, and preserve farmland biodiversity in protected areas. This paper review is an attempt to gather and analyze in depth the findings of the existing studies focusing on the relationship between the European PAs, farming systems and certification/labelling schemes of agri-food products with a PA logo. Academic research on the subject is limited but provides valuable insights. The findings can serve as a starting point for discussions and reveal opportunities for further research to better understand the interrelations and additional effects emerging from the labelling/certification of PAs’ high quality agri-food products.

Thrombosis has threatened human health in past decades. Bacillus nattokinase is a potential thrombolytic drug without side-effect and low cost and has been introduced into the consumer market as a functional food or dietary supplement. This review firstly summarizes the biodiversity sources and fermentation process of nattokinase, and systematically expounds the structure, cata-lytic mechanism and enzymatic properties of nattokinase; In view of the problems of low fermen-tation yield, insufficient activity and stability of nattokinase, this review discusses the heterologous expression of nattokinase in different microbial hosts, and summarizes the protein and genetic en-gineering progress of nattokinase-producing strains; Finally, this review summarizes the clinical application of nattokinase.

Satellite Crop Detection technologies are focused on detection of different types of crops on the field in the early stage before harvesting. Crop detection is usually done on a time series of satellite data by classification of the desired fields. Currently, data obtained from Remote Sensing (RS) are used to solve tasks related to the identification of the type of agricultural crops, also modern technologies using AI methods are desired in the postprocessing part. In this challenge Sentinel-1 and Sentinel-2 time series data were used due to their periodic availability. Our focus was to develop methodology for classification of time series of Sentinel 2 and Sentinel 1 data and compare how accuracy of classification can be increased, but also how to guarantee availability of data. We analyse phenology of single crops and on the basis of this analysis we started to provide crop classification. Original crop classifications were made from Enhanced Vegetation Index (EVI) layers made from Sentinel-2 time-series data and then we added also . To increase accuracy we also integrate into the process parcel borders and provide classification of fields..

The negative impact of the modern-day lifestyle on the environment is aggravated during the COVID-19 pandemic through the increased use of single-use plastics from food takeaways to medical supplies. Similarly, the closure of food outlets and disrupted supply chains have also resulted in significant food wastage. As the pandemic rages on, the aggravation of increased waste becomes an increasingly urgent problem that threatens the biodiversity, ecosystems, and human health worldwide through pollution. While there are existing methods to deal with the organic and plastic waste, many of the solutions also cause additional problems. Increasingly proposed as a natural solution to man-made unnatural problems, there are insect solutions for dealing with the artificial and organic waste products towards a circular economy, making the use of natural insect solutions commercially sustainable. This review discusses the findings and how some of these insects, particularly the Hermetia illucens, Tenebrio molitor, and Zophobas morio, can play an increasing important role in food and plastics, with a focus on the latter.

Whereas a vast literature exists on satellite-based mapping of rice paddy fields in Asia, where most of the global production takes place, little has been produced so far that focuses on the European context. Detection and mapping methods that work well in the Asian context will not offer the same performances in Europe, where different seasonal cycles, environmental contexts, and rice varieties make distinctive features dissimilar to the Asian case. In this context, water management is a key clue; watering practices are distinctive for rice with respect to other crops, and within rice there exist diverse cultivation practices including organic and non-organic approaches. In this paper, we focus on satellite-observed water management to identify rice paddy fields cultivated with a traditional agricultural approach. Building on established research results, and guided by the output of experiments on real-world cases, a new method for analysing time series of Sentinel-1 data has been developed, which can identify traditional rice fields with a high degree of reliability. This work is a part of a broader initiative to build space-based tools for collecting additional pieces of evidence to support food chain traceability; the whole system will consider various parameters, whose analysis procedures are still at their early stages of development.

The review analyzes a possible role of autoimmune processes in the pathogenesis of schizophrenia and evolution of concepts on this issue from its origin to present. Risks of autoimmune processes causing schizophrenia are associated with several factors: an impaired functioning of dopaminergic and glutamatergic systems in the brain, kynurenine pathway disorder with overproduction of quinolinic, anthranilic and kynurenic acids (possibly altering both neurons and T-regulators), increased intestinal permeability, as well as food antigens’ effects, stress and infections with various pathogens at different stages of ontogenesis. An increase in the levels of proinflammatory cytokines and chemokines as well as a decrease in the levels of anti-inflammatory ones also may contribute to schizophrenia risks. Schizophrenia often occurs in those patients having various autoimmune diseases and their first-degree relatives. Cases of schizophrenia resulted from autoimmune pathogenesis (including autoimmune encephalitis caused by autoantibodies against various neuronal antigens) are characterized by quite severe cognitive and psychotic symptoms and less favorable prognosis. This severe course may result from the chronic immune damage of the neuronal receptors such as NMDA, GABA, and others and depend on hyperprolactinemia, induced by antipsychotics, but aggravating autoimmune processes [with 2 tables, 4 figures, bibliography: 99 references].

Carbapenem resistant Enterobacteriaceae (CRE) has been public health risk in several countries and recent reports indicate the emergence of CRE in food animals. This study was conducted to investigate the occurrence, resistance patterns, and phylogenetic diversity of CRE E.coli from chicken. Routine bacteriology, PCR detection of E.coli species, multiplex PCR to detect carbapenemase encoding genes and phylogeny of CRE E. coli were conducted. The results show that 24.36 % (19/78) were identified as CRE based on the phenotypic identifications of which 17 were positive for the tested carabanemase genes. The majority, 57.99% (11/19) of the isolates harbored multiple carbapenemase genes. Four isolates harbored all blaNDM blaOXA, blaIMP, five and two different isolates harbored blaNDM and blaOXA, and blaOXA and blaIMP respectively. The Meropenem, Imipenem and Ertapenem MIC values for the isolates ranged from 2g/mL to ≥256g/mL. Phylogenetic grouping showed that the CRE E.coli isolates belonged to five different groups; groups A, B1, C, D and unknown. The detection of carbapenem resistant E.coli in this study shows that CRE is has become an emerging problem in farm animals, particularly, in poultry farms. This also implies the potential public health risks posed by CRE from chicken to the consumers.

Nutritional limitations may shape populations and communities of organisms. This phenomenon is often studied by treating populations and communities as pools of homogenous individuals with average nutritional optima and experiencing average constraints and trade-offs that influence their fitness in a standardized way. However, populations and communities consist of individuals belonging to different sexes, each with specific nutritional demands and limitations. Taking this into account, we used the ecological stoichiometry framework to study sexual differences in the stoichiometric phenotypes, reflecting stoichiometric niches, of four spider taxa differing in hunting mode. The species and sexes differed fundamentally in their elemental phenotypes, including elements beyond those most commonly studied (C, N and P). Both species and sexes were distinguished by the C:N ratio and concentrations of Cu, K and Zn. Species additionally differed in concentrations of Na, Mg and Mn. Phosphorous was not involved in this differentiation. Sexual dimorphism in spiders’ elemental phenotypes, related to differences in their stoichiometric niches, suggests different nutritional optima and differences in nutritional limitation experienced by different sexes and species. This may influence the structure and functioning of spider populations and communities.

We developed a honey bee RNA-virus vector based on the genome of a picorna-like Deformed wing virus (DWV), the main viral pathogen of the honey bee (Apis mellifera). To test the potential of DWV to be utilized as a vector, the 717 nt sequence coding for the enhanced green fluorescent protein (eGFP), flanked by the peptides targeted by viral protease, was inserted into an infectious cDNA clone of DWV in-frame between the leader protein and the virus structural protein VP2 genes. The in vitro RNA transcripts from egfp-tagged DWV cDNA clones were infectious when injected into honey bee pupae. Stable DWV particles containing genomic RNA of the recovered DWV with egfp inserts were produced, as evidenced by cesium chloride density gradient centrifugation. These particles were infectious to honey bee pupae when injected intra-abdominally. Fluorescent microscopy showed GFP expression in the infected cells and Western blot analysis demonstrated accumulation of free eGFP rather than its fusions with DWV LP and/or VP2 proteins. Analysis of the progeny egfp-tagged DWV showed gradual accumulation of genome deletions for egfp, providing estimates for the rate of loss of a non-essential gene an insect RNA virus genome during natural infection.

A large body of evidence has linked unhealthy eating patterns with an alarming increase in obesity and chronic disease worldwide. However, existing methods of assessing dietary intake in nutritional epidemiology rely on food frequency questionnaires or dietary records that are prone to bias and selective reporting. Herein, metabolic phenotyping was performed on 42 healthy participants from the Diet and Gene Intervention (DIGEST) pilot study, a parallel two-arm randomized clinical trial that provided complete diets to all participants. Matching urine and plasma specimens were collected at baseline and following 2 weeks of provision of either a Prudent or Western diet with a weight-maintaining menu plan designed by a dietician. Targeted and nontargeted metabolite profiling was conducted using three complementary analytical platforms, where 80 plasma metabolites and 84 creatinine-normalized urinary metabolites were reliably measured (CV < 30%) in the majority of participants (> 75%) after implementing a rigorous data workflow for metabolite authentication with stringent quality control. We classified a panel of metabolites with distinctive trajectories following 2 weeks of food provisions when using complementary univariate and multivariate statistical models. Unknown metabolites associated with contrasting dietary patterns were identified with high resolution MS/MS and/or co-elution after spiking with authentic standards. Overall, 3-methylhistidine and proline betaine concentrations increased consistently after participants were assigned a Prudent diet (q< 0.05) in both plasma and urine samples with a corresponding decrease in the Western diet group. Similarly, creatinine-normalized urinary imidazole propionate, hydroxypipecolic acid, dihydroxybenzoic acid, and enterolactone glucuronide, as well as plasma ketoleucine and ketovaline increased with a Prudent diet (p< 0.05) after adjustments for age, sex and BMI. In contrast, plasma myristic acid, linoelaidic acid, linoleic acid, a-linoleic acid, pentadecanoic acid, alanine, proline, carnitine and deoxycarnitine, as well as urinary acesulfame K increased among participants following a Western diet. Most metabolites were also correlated (r > ±0.30, p< 0.05) to changes in average intake of specific nutrients from self-reported diet records reflecting good adherence to assigned food provisions. Our study revealed robust biomarkers sensitive to short-term changes in habitual diet for accurate monitoring of healthy eating patterns in free-living populations, which is required for validating evidence-based public health policies for chronic disease prevention.

Limited observational studies have described the relationship between sleep duration and overall diet. The present study investigated the association between sleep duration at weekdays and empirically derived dietary patterns in a nationally representative sample of UK adults, aged 19-64 years old, participating in the 2008-2012 UK National Diet and Nutrition Survey Rolling Programme. Survey members completed between three to four days of dietary records. Sleep duration at weekdays was categorised into tertiles to reflect short, normal and long sleep duration. Social jetlag was calculated as the difference between sleep duration at weekends and weekdays. The association between sleep duration/ social jetlag and dietary patterns, derived by principal components analysis, was assessed regressing diet on sleep whilst accounting for the complex survey design and adjusting for relevant confounders. Survey members in the highest tertile of sleep duration had on average 0.45 (95% CI -0.78, -0.12) lower healthy dietary pattern score compared to middle tertile (p =0.007). There was an inverted u-shaped association between social jetlag and a healthy dietary pattern, such that when sleep at weekends exceeded weekday sleep by 1h 45min, scores for indicating a healthy dietary pattern declined (p =0.005). In conclusion, long sleep duration at weekdays and an increased social jetlag are associated with a lower healthy dietary pattern score. Further research is required to address factors influencing dietary patterns in long sleepers.

Dietary assessment methods recognized as appropriate for the general population are usually applied in a similar manner to athletes, despite knowledge that sport-specific factors can complicate assessment and impact accuracy in unique ways. As dietary assessment methods are used extensively within the field of sports nutrition, there is concern the validity of methodologies have not undergone more rigorous evaluation in this unique population sub-group. The purpose was to systematically review studies comparing two or more methods of dietary assessment, including dietary intake measured against biomarkers or reference measures of energy expenditure, in athletes. Six electronic databases were searched for English-language, full-text articles published from January 1980 until June 2016. The search strategy combined the following keywords: diet, nutrition assessment, athlete and validity; where the following outcomes are reported but not limited to: energy intake, macro and/or micronutrient intake, food intake, nutritional adequacy, diet quality, or nutritional status. Meta-analysis was performed on studies with sufficient methodological similarity, with between-group standardized mean differences (or effect size) and 95 % confidence intervals (CI) calculated. Of the 1624 studies identified, 18 were eligible for inclusion. Studies comparing self-reported energy intake (EI) to energy expenditure assessed via doubly labelled water were grouped for comparison (n=11) and demonstrated mean EI was under-estimated by 19 % (- 2793 ± 1134 kJ/d). Meta-analysis revealed a large pooled effect size of - 1.006 (95% CI: -1.3 to -0.7; p<0.001). The remaining studies (n=7) compared a new dietary tool or instrument to a reference method(s) (e.g. food record, 24-h dietary recall, biomarker) as part of a validation study. This systematic review revealed there are limited robust studies evaluating dietary assessment methods in athletes. Existing literature demonstrates substantial variability between methods, with under and misreporting of intake frequently observed. There is a clear need for careful validation of dietary assessment methods, including emerging technical innovations, among athlete populations.

An on-site, ultra-sensitive, and quantitative sensing method was developed based on quantum dot nanobeads (QDNBs) and test strip for the determination of total aflatoxins (AFTs) in rice and peanut. The monoclonal antibody against AFT (mAbAFT) was home-made and labeled with QDNB. After the pre-coating of the AFT antigen on the test line (T line), the competitive immunoreactions were conducted between AFT and AFT antigen on the T line with QDNBs-mAbAFT. Under optimal conditions, this approach allowed a rapid response towards AFT with a considerable sensitivity of 1.4 pg/mL and 2.9 pg/mL in rice and peanut matrices, respectively. The put-in and put-out duration were within 10 min. The recoveries for AFT in rice and peanut samples matrices were recorded from 86.25–118.0% with the relative deviations (RSD) below 12%. The assay was further validated via the comparison between this QDNB strip and the conventional HPLC method using spiked samples. Thus, the design provided a potential alternative for on-site, ultra-sensitive, and quantitative sensing of AFT that could also be expanded to other chemical contaminants for food safety.

Oenobiol Sun Expert, a food formulation designed to enhance skin health prior to sun exposure, has been optimized by incorporating the OenoGrape Advanced Complex, which includes grape pomace extract, increased selenium content and 10% lycopene-rich tomato extract, these constituents exhibiting high antioxidant potential. To evaluate the effects of those individual ingredients and the overall formulation at the cellular level, the AOP1 cell antioxidant efficacy assay was employed to measure intracellular free radical scavenging activity, while the CAA (DCFH-DA) assay was used to assess peroxidation scavenging at the plasma membrane level. Indirect antioxidant activity was examined using stably transfected cell lines containing a luciferase reporter gene controlled by the Antioxidant Response Element (ARE), which activates the endogenous antioxidant system via the Nrf2/Keap1-ARE pathway. Our results indicate that, among the individual components, grape pomace extract and sodium selenite possess high and complementary antioxidant properties. Grape pomace extract was particularly effective in inhibiting free radicals (AOP1 EC₅₀ = 6.80 mg/ml) and activating the ARE pathway (ARE EC₅₀ = 231.1 mg/ml), whereas sodium selenite exerted its effects through potent ARE activation at sub-microgram levels (EC₅₀ = 0.367 mg/ml). In contrast, the lycopene-rich tomato extract did not show a notable contribution to antioxidant effects. The antiradical activity of the OenoGrape Advanced Complex, comprising these three ingredients, was very efficient and consistent with the results obtained for the individual components (AOP1 EC₅₀ = 15.78 µg/ml and ARE EC₅₀ of 707.7 μg/ml). Similarly, the free radical scavenging activity still persisted in the Oenobiol Sun Expert formulation (AOP1 EC₅₀ = 36.63 µg/ml). In addition, the direct and indirect antioxidant activities of ingredients were confirmed on both hepatocytes and keratinocytes after in vitro intestinal trans-epithelial transfer experiments, demonstrating bioavailability and bioactivity of grape pomace extract and sodium selenite. These finding suggest that the ingredients of this food supplement contribute to enhanced cytoprotection following ingestion.

The climate change constitutes nowadays an enormous global threat for human health and environmental sustainability. The expanding world population and the increased global needs for food production have an important negative impact upon environment. Diet can link human health with environmental sustainability. Food production systems are closely related to anthropogenic greenhouse gas emissions and the aggravation of climate change, and current western type, animal-based, dietary patterns may lead to adverse environmental footprints. In the present narrative review, we address the interconnection of the Mediterranean diet (MD) with climate change and sustainability. MD is a highly recommended dietary intervention for the prevention and management of various endocrine and cardiometabolic diseases. Beyond its evidence-based, health-promoting effects, it also has beneficial environmental impact, reducing greenhouse gas emissions and enhancing biodiversity, food security and sustainability. Based on the evidence reviewed herein, MD should be incorporated within the framework of a “One Health” model, which involves the improvement not only of human health but also of planetary health and food system sustainability. Our review aims to provide a stimulus for health pro-fessionals to strongly recommend the implementation of MD under the current pressure of climate change, despite all barriers, targeting both human health preservation and the planetary well-being.

Barley is rich in phenolic compounds, providing health benefits and making it a valuable addition to a balanced diet. However, most studies focus on these compounds at barley's final maturity, neglecting their synthesis during grain development and its impact on barley quality for food applications. This study investigates phenolic profiles during grain development in four hull-less barley genotypes with different grain colors, specifically bred for food applications. The objectives were to determine the phenolic profile and identify the optimal maturity stage for maximum phenolic content and antioxidant capacity. Using UPLC-MS/MS and in-vitro antioxidant capacity assays, results show that total phenolic compounds decrease as grain matures due to increased synthesis of reserve components. Flavan-3-ols, phenolic acids, and flavone glycosides peaked at immature stages, while anthocyanins peaked at physiological maturity. The harvest stage had the lowest phenolic content, with a gradient from black to yellow, purple, and blue genotypes. Antioxidant capacity fluctuated during maturation, correlating positively with phenolic compounds, especially bound phenolic acids and anthocyanins. These findings suggest that early harvesting of immature grain can help retain bioactive compounds, promoting the use of immature barley grains in foods. To support this market, incentives should offset costs associated with decreased grain weight.

Aims: This study aimed at examining coach-athlete violence based on the retrospective reports of adults who had been athletes as children and adolescents; predict variables that contribute to the existence of such violence; describe difficulties that the participants encountered as young athletes following such violence; and reveal the outcomes of such violence on their emotions and behaviors, in the past and present. Methodology: The applied mixed-methods comprised quantitative self-reporting questionnaires and qualitative interviews. The former included 440 participants (mean age 27.6) who had trained for at least one year in a sports union youth department; the latter included 14 participants (aged 23-37). These competitive athletes came from eight branches of sports. The interviews were analyzed based on the Narrative Approach. Results: According to the quantitative study, all participants had experienced coach violence at least once during their career, mainly psychological violence and neglect, followed by physical violence. Sexual violence was least reported. The age of their retirement from sports and the number of coaches that they had had were significant predictors of violence. Thematic analysis of the qualitative interviews resulted in six types of coach-athlete violence: (1) psychological violence; (2) verbal violence; (3) starvation and food fattening; (4) non-proportional punishing; (5) physical violence; and (6) sexual violence. Conclusions: It is vital that coach-athlete violence is addressed in public discourse, that the topic of of young athletes’ safety is introduced into coaching education, and that a position holder is nominated to be in charge of such safety in all sports organizations.

Global food waste has a huge impact on the environment, as it is a source of greenhouse gas (GHG) emissions and wasted natural resources. Across the world, over 30% of food is lost or wasted each year. Aside from this, food industry, as well, is one of the biggest sources of agro-industrial waste and by-products, which can be valorized and used for different purposes. Such waste is a good source of bioactive organic compounds which can be extracted without al-tering their properties, where deep eutectic solvents (DESs) can serve as green solvents and excel-lent replacement for volatile organic solvents. Isolated compounds can be used in innovative food production, chemical production, cosmetics and other industries. DESs have attracted extraordi-nary attention due to their advantages such as environmental friendliness, availability and easy preparation, easy handling and utilization of non-toxic components for their formation. Due to those properties, they are a greener alternative to classic organic solvents for many processes, in-cluding extractions. In this paper, we review the utilization of deep eutectic solvents as potential green media for the extraction of organic compounds such as polyphenols, carbohydrates, pro-teins, alkaloids from by-products of the food industry and agro-industrial-waste.

The incidence of chronic enteropathies (CE), in particular food-responsive enteropathies (FRE) in dogs, is on the rise in veterinary practice. The symptoms of these digestive disorders cannot be alleviated with the use of commercial hypoallergenic feeds. The applicability of novel substrates in hypoallergenic dog feeds is limited, and edible insects could pose a viable alternative. Insects have a high nutritional value, and their potential can be harnessed to design personalized nutrition strategies. However, the use of insects in animal feeds should be rigorously tested. The aim of this study was to analyze the applicability of edible insects as a source of dietary protein for companion animals, including the current and future prospects. Canine food formulas should be evaluated in a clinical setting. The role edible insects in pet diets and the efficacy of this substrate in animal nutrition should be examined in advanced clinical trials in gastroenterology, histology, immunology, and microbiology. These efforts are required to guarantee the safety and efficacy of innovative insect-based feeds and to increase their popularity among veterinary practitioners, pet food producers, and animal owners.

Esters are versatile compounds with a wide range of applications in various industries due to their unique properties and pleasant aromas. Conventionally, the manufacture of these compounds has relied on the chemical route. Nevertheless, this technique employs high temperatures and inorganic catalysts, resulting in undesired additional steps to purify the final product by removing solvent residues, which decreases environmental sustainability and energy efficiency. In accordance with the principles of “Green Chemistry” and the search for more environmentally friendly methods, a new alternative, the enzymatic route, has been introduced. This technique uses low temperatures and does not require the use of solvents, resulting in more environmentally friendly final products. In spite of the large number of studies published on the biocatalytic synthesis of esters, little attention has been paid to the reactors used for it. Therefore, it is convenient to gather the scattered information regarding the type of reactor employed in these synthesis reactions, considering the industrial field in which the process is carried out. The comparison between the performance of the different reactor configurations will allow us to draw the appropriate conclusions regarding their suitability for each specific industrial application.

Corporate identity has played a vital role in the Halal industry to create a strong foundation for its reputation in the long run. This paper used two modeling analyses for two different data. The first analysis aims to predict the relationship between Corporate Identity Management between Internal Brand and Employee Brand Support (consequence) mediated by CIM using partial-least squares-structural equation modeling (PLS-SEM). A total of 206 employees from Malaysia’s Halal food SMEs took part in the survey. The second analysis to identify topic proportions patterns using the topic modeling approach on Halal brand identity Machine learning approach of knowledge mining was applied for this analysis. Metadata of 1,091 articles were mined from the Scopus database on Halal studies across all social sciences fields. The result revealed that there was a partial relationship between Internal Brand (antecedent) and Employee Brand Support (consequence) mediated by CIM. This finding was supported by the identified topic proportions patterns from the topic modeling approach that pointed out a weak topic proportion on the Halal brand identity discussion globally, interestingly the result also found that the Halal brand identity discussion involving the Halal food industry is almost non-existed in Malaysia’s Halal food SMEs. The contributions of this paper were apparent in three major areas which are methodology, theoretical and future suggestions. The utilization of two different model analyses was able to confirm the consistency of the major findings with the literature review which opens up more possibilities for future researchers.

Widely used estimates of food-insecure populations are likely to be biased upwards, lacking adjustment for global increases in sedentary behavior in recent decades. We first construct a household model to account for sedentary choices during leisure and work time decisions. The model rationalizes increasing sedentary behavior from the household by accounting for increasing returns to cognitive human capital vs physical capital, alongside increased productivity of more sedentary activities both at work and at home. The household model then informs an empirical model that makes use of our unique international pseudo-panel data on sitting time, which serves as a proxy for sedentarism. We econometrically estimate a transfer function linking sedentarism to widely available covariates, which then are used to make out-of-sample predictions and can be applied to a large set of countries. The estimated sedentary time can be used to adjust the physical activity level reflected in the minimum dietary energy requirement used to determine a cutoff for food insecurity.
