Paenibacillus dendritiformis UJA2219 isolated from carrot produces broad-spectrum antibacterial activity. The aim of the present study was to determine the impact of partially-purified cell-culture extracts of strain UJA2219 on the microbial load and bacterial diversity of a home-made vegetable puree. The puree was challenged with an overnight culture of strain UJA2219 or with cultured broth extracts partially purified by cation exchange (CE) chromatog-raphy or reversed-phase (RP) chromatography and incubated for 7 days at temperatures of 4 °C or 25 °C. Best results were obtained at 25 °C with the RP extract, decreasing counts of presump-tive Enterobacteriaceae below detectable levels. The bacterial diversity of control and treated puree was studied by Illumina paired-end sequencing using DNA extracted from the puree samples incubated at 25 °C for 24 h. The controls and the puree inoculated with the UJA2219 strain showed an almost-identical bacterial diversity profile, with Proteobacteria (mainly Fam. Pseudo-monadaceae -gen. Pseudomonas- and Enterobacteriace as most abundant groups). Greatest differences in bacterial diversity were obtained in the puree treated with RP extract, showing a decrease in the relative abundance of Proteobacteria (especially gen. Pseudomonas) and an increase of Firmicutes (mainly of the genera Bacillus, Enterococcus and Lactococcus). Results from the study suggest that the antimicrobial preparations from strain UJA2219 have a potential for application in food bio-preservation.

Aptamers are excellent choices for selective detection of small molecules. However, the previously reported aptamer for chloramphenicol suffers from low affinity, probably as a result of steric hin-drance due to its bulky nature (80 nucleotides) leading to lower sensitivity in analytical assays. The present work was aimed at improving this binding affinity by truncating the aptamer without compromising its stability and three-dimensional folding. Shorter aptamer sequences were designed by systematically removing bases from each or both ends of the original aptamer. Thermodynamic factors were evaluated computationally to give insights into the stability and folding patterns of the modified aptamers. Binding affinities were evaluated by bio-layer interferometry. Among the 11 sequences generated, one aptamer was selected based on its low dissociation constant, length and regression of model fitting with association and dissociation curves. The dissociation constant could be lowered by 86.93% by truncating 30 bases from the 3’ end of the previously reported aptamer. The selected aptamer was used for gold nanospheres based colorimetric detection of chloram-phenicol in real samples. The detection limit could be reduced 32.87 times (1.673 pg mL-1) using the modified length aptamer, indicating its improved affinity as well as suitability in real sample analysis for ultrasensitive detection of chloramphenicol.

(1) Background: Children who are physically active and involved in organized sport report having the unhealthiest diets. Research suggests excessive calories may be attributed to the prevalence of fast food and candy which are often provided as rewards in sport. This study explored the use of food as a reward in youth sport and the perceived impact it has on children’s motivation to participate in recreational soccer and ice hockey; (2) Methods: A multiple instrumental case study approach was utilized. Children aged 4-12 (n = 64), parents (n = 30), and coaches (n = 18) were recruited within central and northeastern Ontario, Canada to participate in focus groups and individual interviews. Transcribed audio recordings underwent inductive thematic analysis; (3) Results: Key themes included: Fun and fast: The culture of food in youth soccer and hockey; (Un)importance of food rewards: The how and why of motivating children in sport; and Youth sport is expensive: Gratitude for sponsorship in youth sport; (4) Children’s participation and effort would continue without food rewards; however, they continue to be offered food to motivate and celebrate performance in youth sport. Findings highlight the need to increase knowledge and awareness among parents and coaches on what truly motivates children to help foster healthier strategies for celebrating success and supporting lifelong physical activity.

Olfactory dysfunction affects often has severe consequences on patients’ quality of life. The most common complaint in these patients is their reduced enjoyment of food in both patients with olfactory loss and parosmia. How the different types of olfactory dysfunction differ in relation to food and cooking habits, sensory awareness, and food-related quality of life has not yet received much attention. By applying questionnaires on cooking, food, olfactory function, weight changes, sensory awareness, and food-related quality of life, we investigate how various aspects of eating differ between participants with olfactory loss (n=271), parosmia(n=251), and normosmic controls(n=166). Cooking habits in olfactory dysfunction revealed pronounced differences as compared with normosmic controls. Cooking with olfactory dysfunction was associated with e.g., a lack of comfort and inspiration for cooking and an inability to make new foods successfully. Significant differences in cooking were also found between olfactory loss and parosmia. Food items were less familiar in participants with olfactory loss and parosmia, while the ratings of liking food items differed between olfactory loss and parosmia, indicating the importance of adapting ingredients in meals separately for olfactory loss and parosmia. Parosmia was associated with a higher incidence of weight loss, but we found no difference in the food-related quality of life between participants with olfactory loss and parosmia. While olfactory loss and parosmia have wide-ranging consequences on patients’ cooking and food habits, adapting meals to include ‘safer food items’ and integrating multisensory stimulation may be a possible avenue for improving the enjoyment of food.

Bacteriophages have been recognized as potential biocontrol agents in the food industry. Bacteriophages have been proposed for a variety of applications within this industry including bio preservation, pathogen detection, and as an alternative treatment method to antibiotics in animal health. The potential applications of bacteriophages are widespread throughout the entire food production process and serve to enhance food quality, prevent foodborne illnesses, and enhance the efficiency of production. The ability of bacteriophages to lyse bacterial targets with high specificity and pose no threat to mammalian cells or natural microbiota is unique and relevant in terms of suitability for food safety. This review will outline potential and current applications of bacteriophages and their respective impacts on the field.

Pronematus ubiquitus (McGregor) is a small iolinid mite that is capable of establishing on tomato plants. Once established, this mite has been shown to control both tomato russet mite, Aculops lycopersici (Tryon) (Acari: Eriophyidae) and tomato powdery mildew (Oidium neolycopersici L. Kiss). In the present study, we explored the nutritional value of various food sources in the laboratory. First, we assessed the reproduction of two food sources that P. ubiquitus can encounter on a tomato crop: tomato pollen and powdery mildew. In a second laboratory experiment, we evaluated the nutritional value of two types of prey mites: the astigmatid Carpoglyphus lactis L. (Acari: Carpoglyphidae) and the tarsonemid Tarsonemus fusarii (Acari: Tarsonemidae). Powdery mildew and C. lactis did not contribute to the reproduction, whereas tomato pollen and T. fusarii did allow egg-laying. However, Typha angustifolia pollen was a superior food source in both experiments. In a greenhouse trial on individual caged tomato plants, we evaluated the impact of pollen supplementation frequency on establishment of P. ubiquitus. Here, a pollen addition frequency of every other week was required to allow populations of P. ubiquitus to establish.

Excessive intake of fat and fatty acids is associated with major health hazards such as obesity or chronic diseases. The aim of this study is to provide the first data on total fat, SFA and TFA intakes and their major food sources in Tunisian children. A total of 1200 children, aged 3 to 9 years old, were randomly selected from primary schools and kindergarten under a cross-sectional design. The 24hour recall method and food frequency questionnaire were used to assess dietary intake. The energy percentages of total fat, SFA and TFA in Tunisian children were respectively 29.6, 11.4 and 0.15. No sex differences were found. The WHO recommendations for total fat, SFA and TFA were adopted by 58 %, 39 % and 89 % of the study population, respectively. The leading food groups of fat and fatty acids were ultra-processed foods, bread and cereals and dairy products. The meat, fish, eggs and fish alternatives were the fifth main contributors to the total fat and SFA intakes in Tunisian children. The implementation of a relevant strategy for fat reduction, especially from ultra-processed foods, considered as low nutrient energy-dense products, is needed to promote health among children and prevent diet-related chronic diseases.

Emerging information on the interactions between the COVID-19 pandemic and global food systems has highlighted how the pandemic is accentuating food crises across Africa. Less clear, however, are how the impacts differ between farming systems. Drawing on 50 key informant interviews with farmers, village leaders and extension officers, in South Africa and Tanzania, we identify the effects of COVID-19 and associated measures to curb the spread of the disease on farming production systems, the coping mechanisms adopted by farmers, and explore their longer-term plans for adaptation. We focus on a diverse range of production systems, from small-scale mixed farming systems in Tanzania, to large-scale corporate farms in South Africa. Our findings highlight how COVID-19 restrictions have interrupted the supply chains of agricultural inputs and commodities, increasing the storage time for produce, decreasing income and purchasing power, and reducing labour availability. Farmers’ responses were heterogeneous, with highly diverse small-scale farming systems and those less engaged with international markets least affected by the associated COVID-19 measures. Large-scale farmers were most able to access capital to buffer short-term impacts, whereas smaller-scale farms shared labour, diversified to subsistence produce and sold assets. However, compounded shocks, such as recent extreme climate events, limited the available coping options, particularly for smaller-scale and emerging farmers. The study highlights the need to understand the characteristics of farm systems to better equip and support farmers, particularly in contexts of uncertainty. We propose that policy actions should focus on (i) providing temporary relief and social support and protection to financially vulnerable stakeholders, (ii) job assurance for farmworkers, and engaging an alternative workforce in farming, (iii) investing in farming infrastructure, such as storage facilities, digital communication tools, and extension services, and iv) supporting diversified agroecological farming systems.

This preprint is focused in the presence of plastics and microplastics in food. We will discuss how many we eat, and how they arrive to the food, and why. We will treat many other things, such as the waste treatment in Europe and in Spain, with updated data; how much plastic waste is generated; what are microplastics and how they are analyzed, I will tell about the experience we have at the University of Alicante (UA); how they can be removed and we will estimate how many we eat over the course of a year.

In recent years, several brands have received much negative press coverage when trying to market their food and drink products specifically at women. This is, in part, because the taste preferences/sensitivities of men and women are actually quite similar. In fact, perhaps the one and only area where consumers are willing to accept (or should that be swallow) ingested products explicitly targeted at women or men is in the case of nutritional foods/supplements. Such products are not really sold on the basis of their taste/flavour anyway. Many consumers are also sensitive to the so-called pink tax, when near-identical products cost more when sold to women rather than to men (e.g., as in the case of female razors). As the four recent examples discussed in this review make clear, it can be difficult to roll-out a new food or beverage product, or else extend a pre-existing product line, that is especially for women without coming across as sexist/condescending. As such, marketers need to tread carefully, otherwise they may end-up generating unwanted negative publicity. Ultimately, therefore, adopting an implicit approach to gender-based marketing, should that be the direction that a brand wants to take, will likely have more chance of avoiding negative publicity than the explicit targeting of food/beverage-related products in what is undoubtedly a highly-politicized area.

Background: Sodium intake has been related to several adverse health outcomes; such as, hypertension, and cardiovascular diseases. Processed foods are major contributors to the population’s dietary sodium intake. The aim of the present study was to determine sodium levels in Mexican packaged foods; also to evaluate the proportion of foods that comply with sodium benchmark targets set by the UK Food Standards Agency (UK FSA) and those set by the Mexican Commission for the Protection of Health Risks (COFEPRIS). We also evaluated the proportion of foods that exceeded the Pan American Health Organization (PAHO) targets. Methods: This was a cross-sectional study that comprised data collected from the package of 2,248 processed foods from selected supermarkets of Mexico. Results: Many processed food categories contained excessive amount of sodium, being the processed meats (ham, bacon and sausages) those that have the highest concentrations. The proportion of foods classified as compliant in our sample was lower for international targets (FSA UK and PAHO) compared to the Mexican COFEPRIS criteria. Conclusions: These data provide a critical baseline assessment for monitoring sodium levels in Mexican processed foods.

Menaquinone-7 is a member of the vitamin K family whose interest has considerably increased over the last decade due to its beneficial role in human health mainly in respect to bone and cardiovascular health leading to a growing use in different nutritional supplement. Menaquinone-7 can be produced by synthesis or fermentation and its purity profile can differ depending on methodologies and extraction procedures. Finished formulation show a large heterogeneity of purity profiles as well as frequent discrepancies in the nominal content compared to the actual title. In the present study we compared purity profiles of different raw material and we related them to stability assay in normal (12months/25°C/60%RH) and accelerated conditions (6 months/40°C/75% RH) in order to test their performance in presence of different common excipients. Results show that higher purity profile correlates with enhanced stability and this could explain title discrepancies found in finished products found on the market worldwide.

In this work, nine fruits cultivated in the northern Amazon were studied: abiu, acerola, araçá, bacupari, biribá, caçarí, fruta-do-conde, graviola and taperebá, with the objective of carrying out a bromatological and nutritional study of the pulps of fruits studied. Of all of them, are the pulps of graviola (76.83 ± 0.02 kcal 100 g^-1) bacupari (76.83 ± 0.02 kcal 100 g^-1) and fruta-do-conde (46.66 ± 0.02 kcal 100 g^-1). Among the macronutrients, the high concentration of potassium stands out, especially in the graviola (541.16 ± 0.24 mg 100 g^-1) and the biribá (468.21 ± 0.13 mg 100 g^-1). Among the micronutrients, iron concentrations are representative for araçá pulp (3.04 ± 0.02 mg 100g-1), abiu is rich in zinc (3.71 ± 0.02 mg 100 g^-1) and manganese (6.61 ± 0.11 mg 100 g^-1). The presence of cobalt at the level of traces in some of the pulps studied stands out. The Pearson correlation coefficient was evaluated, as well as the statistical treatment by multivariate analysis PCA to establish the correlation between the variables studied.

Whey proteins have excellent nutritional characteristics due to their levels of essential amino acids with high bioavailability. However, it has a high biochemical oxygen demand (BOD) and a considerable polluting potential, thus food manufacturers have opted to add whey to food formulations. The demand for beverages containing vitamins, probiotics, prebiotics, minerals, and bioactive compounds (antioxidants) with health benefits has increased and driven market growth. Therefore, this study aimed to develop a probiotic functional carbonated beverage from cheese whey and evaluate its microbiological, and physicochemical characteristics soon after the production and during storage. The viability and stability of probiotic, the microbiological characteristics, titratable acidity and sedimentation of the beverage were monitored during refrigerated storage for a month. The probiotic to be added to the formulation was established in a preliminary step. The production of this beverage proved to be a simple technology and the product was suitable for incorporation of the probiotic Bifidobacterium animalis subsp. lactis. The probiotic showed good viability and stability during storage. The microbiological quality of the beverage met the Brazilian legal standards. The pH and titratable acidity of the probiotic carbonated beverage remained stable during storage, and slight sedimentation was observed after one week of refrigerated storage.

The 2015 Dietary Guidelines for Americans recommends that individuals should eat as little dietary cholesterol as possible. However, current dietary cholesterol intake and its food sources have not been well-characterized. We examined dietary cholesterol intake by age, sex, race, and food sources using 24-hour dietary recall data from a nationally representative sample of 5047 adults aged 20 years or older who participated in NHANES (2013–2014 survey cycle). We also reported trends in cholesterol intake across the past 7 NHANES surveys. Mean dietary cholesterol intake was 293 mg/day (348 mg/day for males and 242 mg/day for females) in the 2013–2014 survey cycle; 39% of adults had dietary cholesterol intake above 300 mg/day (46% for males and 28% for females). Meat, eggs, grain products, and milk were the highest four food sources of cholesterol, contributing to 96% of the total consumption. Both average cholesterol intake and food source varied by age, sex, and race (each p < 0.05). Mean cholesterol intake of the overall population had been relatively constant at ~290 mg/day from 2001–2002 to 2013–2014 (p-trend = 0.98). These results should inform public health efforts in implementing dietary guidelines and tailoring dietary recommendations.

Background/Objectives: Women's reproductive and overall well-being are intricately associated to vitamin D levels. In Morocco, vitamin D deficiency is a major issue for premenopausal women, yet little data exists on their dietary intake of this nutrient. This study explores vitamin D dietary intake, socio-demographic determinants, and its correlation with serum 25-hydroxyvitamin D [25(OH)D3] in premenopausal Moroccan women. Methods: A cross-sectional study was conducted with 355 women aged 18-49 in Meknes, Morocco, using validated questionnaires to assess dietary intake and sun exposure. Potential covariates such as physical activity and BMI were also assessed . Serum 25(OH)D was measured via chemiluminescence immunoassay. Chi-square tests and Spearman correlation were used to identify socio-demographic factors influencing vitamin D intake. Linear and multivariate regression analysis determined the main predictors of serum 25(OH)D levels. Results :The median (interquartile range) vitamin D dietary intake was 2.8 (2.7) µg/day , with less than 20% of women meeting the recommended 5 µg/day. Major dietary sources were fish (48%), dairy (24.3%), and meat (9.4%), with fortified foods contributing only for 7%. Lower intake was linked to younger age (p=0.004) and rural living (p=0.024). While no significant association was found between dietary intake and serum 25(OH)D ((β(SE): 0.155(0.094), p=0.340 ) , sun exposure positively predicted serum levels(β(SE): 0.343 (0.128), p=0.008) , and BMI negatively affected them (β(SE): -1.128 (0.337), p=0.001). Conclusions: Our findings highlight insufficient vitamin D intake among premenopausal Moroccan women, especially younger and rural women. Nutritional interventions are needed to address this deficiency, promoting better dietary habits, sun exposure, and healthy weight.

In the European Union (EU), cannabidiol products require pre-marketing authorisation under the novel food regulation. Currently, 19 CBD applications are under assessment at the European Food Safety Authority (EFSA). During the initial assessment of the application files, the EFSA Panel on Nutrition, Novel Foods and Food Allergens (NDA) located several knowledge gaps in their 07 June 2022 statement on safety of cannabidiol as a novel food that need to be addressed before the evaluation of CBD can be concluded. Namely, the effect of CBD on the liver, gastrointestinal tract, endocrine system, nervous system, psychological function, and reproductive system needs to be clarified. Nevertheless, the available literature allows a benchmark dose (BMD)-response modelling of several bioassays, resulting in a BMD lower confidence limit (BMDL) of 20 mg/kg bw/day for liver toxicity in rats. Human data in healthy volunteers found increases in the liver enzymes alanine aminotransferase (ALT) and aspartate aminotransferase (AST) in a study at 4.3 mg/kg bw/day, which was defined by EFSA NDA panel as a lowest observed adverse effect level (LOAEL). The EFSA NDA panel currently concluded that the safety of CBD as a novel food cannot be evaluated, leading to a so-called clock stop of the applications until the applicants provide the required data. Meanwhile, the authors suggest that CBD products still available as food supplements on the EU market despite the lack of authorisation must be considered as “unsafe”. Products exceeding a health-based guidance value of 10 mg/day must be considered as being “unfit for consumption” (Article 14(1) and (2) (b) of Regulation No 178/2002), while the ones in exceedance of the human LOAEL must be considered “injurious to health” (Article 14(1) and (2) (a) of Regulation No 178/2002).

Mexico has a great diversity of cacti, however, many of their fruits have not been studied in greater depth. Several bioactive compounds available in cacti juices extract have demonstrated nutraceutical properties. Two cactus species are interesting for their biologically active pigments, which are chico (Pachycereus weberi (J. M.Coult.) Backeb)) and jiotilla (Escontria chiotilla (Weber) Rose)). Hence, the goal of this work was to evaluate the bioactive entities, i.e., betalains, total phenolic, vitamin C, antioxidant activity, and mineral content in the extract of the above-mentioned P. weberi and E. chiotilla. Then, clarified extracts were evaluated for their antioxidant activity and cytotoxicity (cancer cell lines) potentialities. Based on the obtained results, Chico fruit extract was found to be a good source of vitamin C (27.19±1.95 mg L-Ascorbic acid/100g fresh sample). Moreover, chico extract resulted in a high concentration of micronutrients, i.e., potassium (517.75±16.78 mg/100 g) and zinc (2.46±0.65 mg/100 g). On the other hand, Jiotilla has a high content of biologically active pigment, i.e., betaxanthins (4.17±0.35 mg/g dry sample). The antioxidant activities of clarified extracts of chico and jiotilla were 80.01±5.10 and 280.88±7.62 (DPPH method), respectively. From the cytotoxicity perspective against cancer cell lines, i.e., CaCo-2, MCF-7, HepG2, and PC-3, the clarified extracts of chico showed cytotoxicity in CaCo-2 (49.7±0.01) and MCF-7 (45.56±0.05). Normal fibroblast cell line (NIH/3T3) was used as a control for comparison purposes. While, jiotilla extract had cytotoxicity against HepG2 (47.31±0.03) and PC-3 (53.65±0.04). These results demonstrated that Chico and jiotilla are good resources of biologically active constituents with nutraceuticals potentialities.

Adherence to the Mediterranean diet has been shown to lower the risk of developing chronic non-communicable diseases like cardiovascular and neurodegenerative diseases and cancer. Improvements in depression, participation in daily activities in older individuals, weight loss and reduction in adverse pregnancy outcomes are associated with adherence to the Mediterranean diet. The number of studies that have evaluated barriers to the adherence of the Mediterranean diet in the US and in particular, in racial and ethnic minority populations within the US are few. Among Native American and Alaskan Native populations, studies evaluating traditional or alternative Mediterranean diet adherence for chronic non-infectious diseases is unavailable. Mediterranean diet scoring instruments used in studies in European and Mediterranean countries and among white participants in the US fail to capture the dietary patterns of racial and ethnic minority populations. In this narrative review the food components of the traditional Mediterranean diet are discussed, adherence to the Mediterranean diet is examined in Mediterranean and non-Mediterranean countries and barriers preventing adherence to the Mediterranean diet in the US and among racial and ethnic minority populations is reviewed. Recommendations for improving nutrition education and intervention, and increasing adherence and cultural adaptions to the Mediterranean diet are provided.

Balancing the efficiency and robustness of food systems is a well-known trade-off process. Over-optimization of efficiency may lead to excessive use of resources. On the other hand, under-optimization of efficiency may lead to excessive waste of resources. Using non-parametric methods can help in developing actionable frameworks through which decision-makers and stakeholders can effectively balance and improve food systems' efficiency and robustness. Under this context, this paper presents a new structured approach integrating two well-suited non-parametric methods for analyzing and balancing the interconnection between the efficiency and robustness of food systems. This approach consists of three main steps. First, the slacks-based data envelopment analysis (SBM-DEA) is utilized to analyze the efficiency of five food robustness dimensions. Second, the weighted efficiency of these dimensions is computed and analyzed to provide an insight into their influence on the food system efficiency. Finally, two search methods were developed to identify opportunities for improving efficiency and robustness. The outcomes of these methods have been analyzed and validated to ensure their effectiveness and viability. The operational and mathematical properties of the proposed approach were evaluated using data from thirty-seven food-producing countries. The weights of the robustness dimensions in this study were determined using the analytic hierarchy process (AHP) method. The input matrix of the AHP was constructed using expert judgment and consultations with stakeholders. The results of this study have shown an appropriate level of applicability and effectiveness of the proposed approach. While the first search method provided valuable insights, the second method proved to be more effective in identifying the sources of inefficacy of robustness dimensions. Several conclusions have been drawn and reported with some recommendations for future research works.

Abstract Global marine fish harvest has reached a plateau over the last decade. Efforts to increase aquaculture tend to face limitations in water resources and contamination problems. Of the current fish harvest at least 50% is discarded as waste. The chemical and microbiological contaminations limit the utilization of harvested fish. There is a need to improve fish preservation to minimize spoilage and process them into more appealing products. Instead of resorting to individual food processing methods, the efficiency of processing could best be increased by a combination of conventional and modern processing methods, or combinations of modern processing methods. Fish waste is a rich source of oils containing essential fatty acids, polypeptides, and amino polysaccharides that could be utilized through upscaling of the current scientifically proven methods, to new processing technologies. Separation of collagens, gelatins, bioactive peptides, edible fish oils, and chitosan form the primary stages in the utilization of fish waste. The products need purification to meet food quality and safety standards, and desirable industrial characteristics. The diversity of information and products generated through new methods requires advanced data handling and prediction systems, such as artificial intelligence, to address food safety and get the best out of fish processing and utilization.

Urbanization influences food culture, particularly in low- and middle-income countries, where there is an increasing consumption of processed and pre-packaged foods. This shift is contributing to a rise in non-communicable diseases. Food labeling standards are crucial for regulating manufacturing practices and aiding consumers in making healthy food choices. We aimed to assess the compliance of local and imported pre-packaged snacks with Tanzanian and international labeling standards in Dar es Salaam, Tanzania. A cross-sectional study was conducted on 180 snack products. A checklist based on Tanzanian and Codex labeling standards was used to evaluate adherence. We also examined factors influencing adherence, such as product origin, price, category, purchase location, and package size. The majority of the snacks demonstrated partial adherence to labeling standards. Imported products showed significantly better full adherence to both Tanzanian and International standards. Notably, over half of the products used English for labeling, and infrequently used the recommended World Health Organization Front-of-Pack nutrition Labeling. Product category, origin, and package size were significantly associated with higher levels of International standard adherence (p<0.05). The inadequate adherence to mandatory labeling standards, scarce use of Swahili and FoPL highlight the need to strengthen labeling practices and potential challenges faced by consumers in understanding nutritional information. Thus, strengthening and emphasizing good labeling practices is of urgency as we seek to address diet-related Non-communicable diseases.

Objective: To evaluate the existing meta-analytic evidence of associations between exposure to ultra-processed foods, as defined by the Nova food classification system, and adverse health outcomes. Design: Systematic umbrella review of existing meta-analyses. Data Sources: MEDLINE, PsycINFO, Embase, and the Cochrane Database of Systematic Reviews, as well as manually searching reference lists from 2009 to June 2023. Inclusion Criteria: Systematic reviews and meta-analyses of cohort, case-control, and/or cross-sectional study designs that evaluated the associations between exposure to ultra-processed foods and adverse health outcomes in humans across the lifespan. Results: The search identified 45 unique pooled analyses, including 13 dose-response and 32 non-dose-response associations (n=9,888,373). Overall, direct associations were found between exposure to ultra-processed foods and 32 (71%) health outcome domains spanning cardiometabolic, gastrointestinal, and respiratory conditions, cancer, mental health, and mortality. Based on a pre-specified evidence classification criteria, convincing evidence (Class I) supported direct associations between greater ultra-processed food exposure and higher risks of incident cardiovascular disease-related mortality (RR: 1.50; 95%CIs: 1.37 to 1.63), type two diabetes (dose-response RR: 1.12; 95%CIs: 1.11 to 1.13), and depressive outcomes (HR: 1.21; 95%CIs: 1.16 to 1.28), as well as higher risks of prevalent anxiety outcomes (OR: 1.48; 95%CIs: 1.37 to 1.59) and combined common mental disorder outcomes (OR: 1.53; 95%CIs: 1.43 to 1.63). Highly suggestive (Class II) evidence indicated that greater exposure to ultra-processed foods was directly associated with higher risks of incident all-cause mortality (RR: 1.21; 95%CIs: 1.15 to 1.27), heart disease-related mortality (dose-response HR: 1.66; 95%CIs: 1.51 to 1.84), and type two diabetes (OR: 1.40; 95%CIs: 1.23 to 1.59), together with higher risks of prevalent obesity (OR: 1.55; 95%CIs: 1.36 to 1.77), adverse sleep-related outcomes (OR: 1.41; 95%CIs: 1.24 to 1.60), and wheezing (RR: 1.40; 95%CIs: 1.27 to 1.55). Out of the remaining 34 pooled analyses, 21 were graded as suggestive or weak strength (Class III-IV) and 13 were graded as no evidence (Class V). Using the GRADE framework, 22 pooled analyses were rated as "Low" quality, with 19 rated as "Very Low” and four rated as "Moderate" quality. Conclusions: Higher exposure to ultra-processed food was associated with a greater risk of adverse health outcomes, especially cardiometabolic, common mental disorder, and mortality outcomes. These findings provide a rationale to evaluate the effectiveness of using population-based measures to target and reduce dietary exposure to ultra-processed foods for improved human health. Background: In this secondary analysis of the Supporting the Modification of Lifestyle In Lowered Emotional States (SMILES) randomised controlled trial, we investigated if the beneficial effects of a dietary intervention on clinical depression were driven, in part, by reducing the consumption of foods classified as ultra-processed.Methods: The SMILES trial enrolled 67 adults with major depressive disorder, randomly assigning them to either a 12-week modified Mediterranean dietary intervention or a social support control. Our analysis included 44 participants with non-missing dietary data and at least one valid Montgomery–Åsberg Depression Rating Scale (MADRS) assessment at 12 weeks of follow-up. The Nova food classification system was used to estimate the proportion of ultra-processed foods in the overall diet (percentage of grams) based on data from seven-day food diaries. We fitted linear regression models under blinded conditions to determine whether ultra-processed food intake-change from baseline to 12 weeks moderated the dietary intervention effects on depressive symptoms. We estimated mean differences in depressive symptoms along with ninety-five per cent confidence intervals (95%CIs).Results: For participants in the dietary intervention, there was an additional 2.5-point improvement in MADRS scores for each 10% reduction in the dietary share of ultra-processed foods compared to participants in the control group (between-group mean differences in depressive symptoms: −2.46, 95%CIs −4.71 to −0.20, p=0.039, η _p ² of 0.10).Conclusions: These preliminary findings suggest that the therapeutic benefit of a dietary intervention for depression may stem, at least in part, from reductions in the dietary share of ultra-processed foods.

This paper proposes a novel blockchain-based system designed to revolutionize transparency, traceability, and reliability within the organic food supply chain. Addressing persistent challenges such as certification fraud, opaque supply chains, and the high costs associated with organic food production, stakeholders including farmers, processors, distributors, retailers, and consumers stand to benefit from the system’s innovative approach. By leveraging blockchain technology and a robust system architecture, the proposed system offers enhanced transparency, improved traceability, and streamlined certification processes. Through detailed exploration of key components such as user interfaces, smart contracts, consensus mechanisms, IoT integration, and governance frameworks, the paper illustrates the practical application of blockchain technology in improving transparency and traceability throughout the food supply chain. A case study focusing on the organic Tofu supply chain further demonstrates the system’s potential to enhance sustainability, efficiency, and integrity in organic food production and distribution networks. The paper concludes by discussing potential implementation challenges and suggesting areas for future research and development to advance the impact of blockchain technology on the food supply chain.

Food waste is a real environmental challenge worldwide. It is a major sin in Islam; yet it is ubiquitous in Muslim society, a society where the majority of people say that Islam is critical in their life. Ingrained in moral aspects of overconsumption, a conundrum this paradox study tries to unravel is why plate waste is prevalent in the Arab Muslim society, despite the teaching of the Quran [Muslim’s holy book] and Sunna [teaching and acts of prophet Muhammad] against wanton waste. The influence of religiosity on environmental concern and intentions to reduce food waste in Islam and Christianity has been widely examined. However, our understanding of why religious people waste food remains limited. This serendipitous qualitative inquiry is the first to examine food waste from the nexus triad -food waste, hospitality, and religion, and comprehensively. Findings suggest that the conception of contemporary Arab hospitality, entrenched in Karam/generosity, and entangled with the interpretation of sin and God’s mercy, is a major contributing factor to plate waste perpetuation. The gravity of food waste warrants a new conceptualization of Arab generosity. Suggestions for plate waste prevention in this cultural context, grounded in the interviews and the Quran, are presented.

Despite recent efforts by the government to combat Food Insecurity (FI), this issue remains a significant problem in Brazil, particularly among populations experiencing social vulnerability, such as Indigenous peoples. This study aimed to assess the prevalence and factors associated with FI in Indigenous families in the state of Alagoas. It was a population-based cross-sectional survey using a probabilistic sample (n=1270 families) representing the 11 ethnic groups present in the state. FI was defined according to the Brazilian Food Insecurity Scale. Factors associated with moderate and severe FI were determined through multivariable analysis using Poisson regression with robust variance adjustment (prevalence ratio – PR and 95% CI). The prevalence of FI was 69.1%, with 29.5% in moderate (23.2%) and severe (6.3%) forms. Factors associated (p<0.05) with moderate and severe FI included: female-headed households; houses made of mud or wood; with ≤4 rooms; head of the household with ≤8 years of schooling; retired or unemployed household head; and total family income <2 National Minimum Wages. The prevalence of FI among Alagoas Indigenous peoples is considerably high and associated with poorer demographic, socioeconomic, and environmental conditions, highlighting the social inequities they face and emphasizing the need for intersectoral public policies to address this scenario.

The objective of this study was to determine the chemical composition of sugarcane spirits and commercial cachaças, comparing them with the limits established by national legislation and with studies conducted in previous periods. Previous studies have shown that 50% of the samples of this distillate were above the contaminant limits allowed by national legislation, which was one of the main factors responsible for the low volume of exports. Volatile compounds and contaminants established by current Brazilian legislation were evaluated in 531 samples of commercial sugarcane brandy and cachaça. Among the samples analyzed, approximately 90% met the Brazilian standards of identity and quality. These results suggest that Brazilian producers have faced fewer difficulties related to the use of Good Manufacturing Practices, ensuring good quality during the production process and standardization of these beverages compared to previous studies.

The study evaluated the functional and sensory properties of infant complementary foods formulated from millets, orange-flesh sweet potatoes, carrots, periwinkle and oyster. Experimental/cross-sectional design was used. Millet, orange-flesh sweet potato (OFSP), carrots, periwinkle and oyster were purchased, processed into flour using standard methods. The complementary food was formulated on protein basis for infants 6–12 months. The formulated foods were millet/OFSP flours (70:30), millet/OFSP/carrot/periwinkle (49:29:7:15), and millet/OFSP/carrot/oyster (65:20:5:10). Functional properties were carried out using standard methods. Sixty nursing mothers attending Orogbum Health Centre were systematically sampled for the sensory evaluation. ANOVA was used for the study. The result showed packed density (0.77 g/mL) was significantly higher (p < 0.05) in food formulated from millets/OFSP than in millet/OFSP/carrot/oyster (0.68 g/mL). Loosed density was lowest (0.40 g/mL) in millet/OFSP/carrot/oyster. Carr index from ranged from 42.23 in millet/OFSP/carrot/oyster to 44.41 in millet/OFSP. Wettability was highest (45.03) in millet/OFSP/carrot/periwinkle compared to wettability value (26.53) for millet/OFSP. Solubility ranged from 18.36 to 46.62, with the highest (46.62) in millet/OFSP/carrot/periwinkle. The peak viscosity of the infant complementary food samples ranged from 64.53 rapid visco analyzer units (RVU) to 89.33 RVU. The infant complementary food formulated from millet/OFSP had significantly higher (p < 0.05) acceptability score (6.35).

Food waste is a common issue arising from grinding of food by experimental animals, leading to excessive food scraps falling into cages. In the wild, animals grind food by gnawing vegetation and seeds, potentially damaging the ecological environment. However, limited ecology studies have focused on food grinding behavior since the last century, with even fewer on rodent food grinding, particularly recently. Although food grinding function is partially understood, biological purposes remain under-investigated and driving factors unclear. This review aims to explain potential causes of animal food grinding, identify influencing factors, and discuss contexts and limitations. Specifically, we emphasize recent progress on gut microbiota significance for food grinding. Moreover, we show abnormal food grinding is determined by degree of excess normal behavior, emphasizing food grinding is not meaningless. Findings from this review promote comprehensive research on the myriad factors, multifaceted roles, and intricate evolution underlying food grinding behavior, benefiting laboratory animal husbandry and ecological environment protection, and identifying potential physiological benefits yet undiscovered.

Background: Tuberculosis (TB) continues to be a serious public health threat that affects the most vulnerable population. Patients who are LTFU after TB diagnosis still represent one of the biggest challenges to TB control. Method: In this prospective observational study, we aimed to identify and analyse the risk factors associated with LTFU among TB patients who started first-line TB treatment in the Sanatorium Hospital in Luanda. Result: A total of 113 patients with TB were included between August 2018 and September 2019. Seventy-six (67.3%) patients were cured, 27 (23.9%) were LTFU, 5 (4.4%) died, 4 (3.5%) were transferred and 1 (0.9%) presented a treatment failure. After excluding those dead, transferred or who failed to treatment, we observed that severe TB at the time of diagnosis (OR 9.24, 95% CI 2.18-39.04) and food insecurity were significantly associated with LTFU (OR 5.96, 95% CI 1.66-21.41). Conclusion: The findings of our study are of enormous value to understand the reasons for the LTFU of patients with TB and can guide polices and facilitate designing measures to allow better adherence, and therefore, greater treatment success

Modernizing the retail sector is essential to societal progress toward creating a smart city. The retail sector is crucial to the development of a smart city because of its adaptability and capacity for innovation. However, due to their perishability, supermarkets throw away a lot of fruits and vegetables. This article discusses the design of a sub-optimal process for processing sorted fruits using a reverse logistics approach, demonstrating how productivity can be increased despite constraints on processing capacity. This paper presents the results of a case study conducted in a Qatari supermarket that offers a variety of regular fruit processing techniques. In order to maximize output and cut down on waste, this project aimed to develop a reverse logistics system for imperfect fruit.

Climate change poses a significant threat to global food security, necessitating a thorough examination across multiple dimensions. Establishing appropriate food security evaluation indicators that align with the evolving concept of food security is imperative. This study enhances food security evaluation by refining a multi-dimensional framework and analyzing the impact of climate change across various regions from 2002 to 2021. By constructing an Food Security Index system composed of a three-tier indicator system and employing the entropy method for weighting, we assess the impacts of climate change on food security using a climate-economic model. Regression analysis reveals a negative linear relationship between mean temperatures and food security (p&lt;0.01), while precipitation impacts food security non-linearly, particularly exhibiting inverse U-shaped patterns in major grain-producing and grain-consuming areas. Extreme high temperatures consistently reduce food security, whereas extreme precipitation displays a complex, statistically significant inverse U-shaped association. In regions where production and consumption are balanced, mean temperatures have a negative effect on food security, while precipitation exhibits a positive correlation, but excessive precipitation can have adverse effects. These findings highlight the intricate interplay between climate change, regional disparities, and food security in China, emphasizing the need to consider multi-dimensional factors and regional variations in addressing food security challenges. These insights are invaluable for policy-making and planning aimed at enhancing food security in China.

In the context of an increasingly globalized economy and rapid technological advancements, the agri-food sector faces unprecedented challenges and opportunities. Digital traceability systems have emerged as pivotal in enhancing operational efficiencies, ensuring food safety, and fostering supply chain transparency. This study conducts a comparative analysis of the adoption and impact of digital traceability technologies across member countries of the Organisation for Economic Co-operation and Development (OECD). Utilizing a multidimensional analytical framework, this research investigates the spectrum of national regulations, legal frameworks, and specific food commodities most influenced by digital traceability implementations. It systematically evaluates the efficacy of these systems in addressing consumer transparency demands, regulatory compliance, and the overarching goal of sustainable agri-food supply chains. Through a meticulous examination of case studies and empirical data, the paper elucidates the dynamic interplay between technological innovation and regulatory environments, offering insights into best practices and potential barriers to digital traceability integration. This comprehensive inquiry aims to contribute to the scholarly discourse on digital traceability, providing actionable recommendations for policymakers, industry stakeholders, and academia to navigate the complexities of modern agri-food systems.

The rapid and sensitive detection of pathogenic bacteria is becoming increasingly important for the timely prevention of contamination and treatment of infections. Biosensors based on nucleic acid aptamers integrat-ed with optical, electrochemical, and mass-sensitive analytical techniques have garnered intense interest for their versatility, cost-efficiency, and ability to exhibit high affinity and specificity in binding bacterial bi-omarkers, toxins, and whole cells. This review emphasizes the development of aptamers, their structural op-timization, and their use in bacterial sensing applications. Moreover, we explore barriers and develop per-spectives in applying aptamer-based bacterial detection.

Food packaging plays an imperative role in the food processing sector by safeguarding foods from their point of harvesting until the moment of consumption. In recent years, biopolymers have attracted the attention of the scientific community as an alternative to conventional packaging materials, reducing the negative environmental impact. Among the available biopolymer sources, a lot of focus has been directed toward polysaccharides due to their superior barrier qualities against gases, oil, and odour and their processing versatility. Moreover, there is a growing interest in aliphatic polyesters as a potential replacement for petrochemical-based synthetic plastics. Both polysaccharides and aliphatic polyesters have gained popularity in sustainable food packaging due to their unique characteristics, including low cost, readily available, biodegradability, gas and moisture barrier qualities, film-forming capabilities, excellent heat resistance, and ability to be processed into films, trays, and coatings. This review highlights the structural features, properties and recent advancements of several vital polysaccharides, namely starch, chitosan, cellulose, alginate, pectin, carrageenan, and aliphatic polyesters, including polylactic acid (PLA) and polyhydroxybutyrate (PHB) for developing packaging materials and their applications in the food industry. Conventional packaging and future perspectives of biopolymer-based food packaging are also comprehensively covered in this review.

Colistin [polymyxin E] is a veterinary exclusive antimicrobial and one of the oldest antibiotics that is currently recognised as one of the highest priority critically important antimicrobials for humans. It is extensively used for multiple medical and non-medical purposes particularly for growth promotion, prophylaxis/metaphylaxis and therapeutic in food animals. As a result, colistin resistance was widespread along the food-chain linking to multidrug resistant bacterial infections in humans reflected by greater use of colistin in healthcare settings resulted in different types of bans/restrictions in food-producing animals, around the world. This report debates the testimonies of 23 countries representing the bulk of global food producing animal production, providing robust evidence on the essential need for colistin in animal production.

Several chronic diseases derive from metabolic, genetic, or inflammatory causes and often these causes are interconnected. Pharmacological treatments, although effective, often lead to unpleasant side effects. In this context, preventive approaches are of growing interest. The literature data of recent years support that the dietary intake of bioactive compounds can positively influence the biological functions of an organism. Among the bioactive compounds in the diet, polyphenols are widely recognized for their beneficial effects on health, as useful compounds for preventing/combating a series of pathologies related to lifestyle, metabolism, and aging. The artichoke (Cynara scolymus L.), a member of the Asteraceae family, is widely used in the food and herbal medicine fields for its beneficial properties. Artichokes are rich in polyphenols (including cynarin), flavonoids and their derivatives, and, for this reason, they have aroused interest in their pharmacological properties. The best-known activity of polyphenols is antioxidant activity. Through it, they help to neutralize free radicals, preventing cellular damage and the subsequent risk of conditions such as cancer, diabetes, and heart disease. Related to the antioxidant action we find the anti-inflammatory activity. This is an important benefit since chronic inflammation is a cause or contributory cause of many chronic diseases. Although many scientific results are of great interest and potential, there are still gaps to be filled. In this review, we report and discuss new insights providing documented evidence regarding the benefits of the artichoke compounds and their possible use to support the pharmacological treatment of pathologies associated with inflammation.

All allergic responses to food indicate failure of immunological tolerance but it is unclear why cow’s milk and egg (CME) allergies resolve more readily than reactivity to peanuts (PN). We sought to identify differences between PN and CME allergies through constitutive immune status and responses to cognate and non-cognate food antigens. Children with confirmed allergy to CME (n=6), PN (n=18) non-allergic (NA) (n=8) controls were studied. Constitutive secretion of cytokines was tested in plasma and unstimulated mononuclear cell (PBMNC) cultures. Blood dendritic cell (DC) subsets were analyzed alongside changes in phenotypes and soluble molecules in allergen stimulated MNC cultures with or without cytokine neutralization. We observed that in allergic children constitutively high plasma levels IL-1β, IL-2, IL-4, IL-5 and IL-10 but less IL-12p70 than in non-allergic children was accompanied by spontaneous secretion of sCD23, IL-1β, IL-2 IL-4, IL-5, IL-10, IL-12p70, IFN- and TNF- in MNC cultures. Furthermore, blood DC subset counts differed in food allergy. Antigen-presenting cell phenotypic abnormalities were accompanied by higher B and T cell percentages with more Bcl-2 within CD69+ subsets. Cells were generally refractory to antigenic stimulation in vitro but IL-4 neutralization led to CD152 downregulation by CD4+ T cells from PN allergic children responding to PN allergens. Canonical discriminant analyses segregated non-allergic and allergic children by their cytokine secretion patterns, revealing differences and areas of overlap between PN and CME allergies. Despite an absence of recent allergen exposure, indication of in vivo activation, in vitro responses independent of challenging antigen and the presence of unusual costimulatory molecules suggest dysregulated immunity in food allergy. Most important, higher Bcl-2 content within key effector cells implies survival advantage with potential to mount abnormal responses that may give rise to the manifestations of allergy. Here, we put forward the hypothesis that the lack of apoptosis of key immune cell types might be central to the development of food allergic reactions.

Food insecurity remains a critical challenge in developing countries like Ethiopia. Majority of its population derive their livelihood from agriculture characterized by mixed farming systems. Smallholder farmers the principal actors of agriculture are also facing a rapidly increasing population and urbanization had been unable to be self-sufficient in food. This paper examines the role of commercialization on food security and its determinants in rural settings. We used cross-sectional data from 295 households randomly selected in northwest Ethiopia. Results from bivariate Tobit regression revealed both crop and livestock commercialization improves household food security but in quite different ways. The income from crop sales was instrumental in allowing households to buy additional foods while livestock sales foster crop diversity for own consumption by allowing them to purchase nonfood items. Thus, agriculture-food security nexus may not require the production systems to be subsistent. Improving commercialization with better access to off-farm employment and institutional services (credit and market infrastructure), and enhanced awareness of the extension towards promoting commercialization and diversified food consumption seem to be more promising. The research paper concludes commercialization is vital not just for economic growth and food security, but also for the smallholder agriculture in providing additional nutrition.

Acid stress poses a common challenge for bacteria in diverse environments by the presence of inorganic (e.g., mammals’ stomach) or organic acids (e.g., feed additives; acid-based disinfectants). Limited knowledge exists regarding acid-tolerant strains of specific serotypes, clonal lineages, or sources in human/animal pathogens, namely non-typhoidal Salmonella enterica (NTS) and Enterococcus faecium (Efm). This study evaluated acidic pH and peracetic acid (PAA) susceptibility of Efm (n=72) and NTS (n=60) from diverse epidemiological/genetic backgrounds, and with multiple antibiotic resistance profiles. Efm minimum growth/survival-pH was 4,5-5/3-4 and for NTS 4,0-4,5/3,5-4,0. Among Efm, only those of clade-non-A1 (non-hospital associated) or food chain demonstrated greater tolerance to acidic pH compared to clade-A1 (hospital-associated clones) or clinical isolates (P<0.05). MDR (multidrug-resistant) NTS survived better to acidic pH (P<0.05). The MICPAA/MBCPAA was 70-120/80-150mg/L for Efm and 50-70/60-100mg/L for NTS. Efm-clade-A1 or MDR strains exhibited higher PAA tolerance than clade-non-A1 or non-MDR ones (P<0.05). Higher tolerance was found in non-MDR and clinical NTS than in food chain isolates (P<0.05), but not between different serogroups. This unique study identifies specific NTS or Efm populations more tolerant to acidic pH or PAA, emphasizing the need for further research to tailor control measures of public health and food safety within a One Health framework.

Food safety is a significant issue that affects people worldwide and is tied to their lives and health. The issue of pesticide residues in food is just one of many issues related to food safety, which leave residues in crops and are transferred through the food chain to human consumption. Foods contaminated with pesticide residues pose a serious risk to human health, including carcinogenicity, neurotoxicity and endocrine disruption. Although traditional methods including gas chromatography, high-performance liquid chromatography, chromatography and mass spectrometry can be used to achieve quantitative analysis of pesticide residues, the disadvantages of these techniques, such as being time-consuming and costly and requiring specialist staff, limit their application. Therefore, there is a need to develop rapid, effective and sensitive equipment for the quantitative analysis of pesticide residues in food. Microfluidics is rapidly emerging in a number of fields due to its outstanding strengths. This paper summarizes the application of microfluidic techniques to pyrethroid, carbamate, organochlorine and organophosphorus pesticides, as well as to commercial products. Meanwhile, the paper also outlines the development of microfluidics in combination with 3D printing technology and nanomaterials for the detection of pesticide residues in food.

In recent years, there has been a growing interest in utilizing natural antioxidants as alternatives to synthetic additives in food products. Apples and apple by-products have gained attention as a potential source of natural antioxidants due to their rich phenolic content. This review aims to provide a comprehensive overview of the antioxidant properties of apples and apple by-products, their extraction techniques as well as potential applications in food products because of their an-tioxidant or nutritional properties. The findings here reported highlights the proper utilization of apples and their by-products in food to reduce the detrimental effect on the environment and provide a positive impact on the economy.

This review aims to describe an edible packaging system in food production. The growing global population, changes in climate and dietary patterns, as well as increasing need for environmental protection have created an increasing demand for waste-free food production. The need for durable and sustainable packaging materials has become significant to avoid food waste and environmental pollution. Edible packaging has emerged as a promising solution also to extend the shelf life of food products and reduce dependence on petroleum-based resources. In this review, the importance, composition, and functions of edible packaging materials, as well as their production methods, were described. The market value of edible packaging materials is expanding. It needs further research and development of edible packaging materials to increase sustainable, eco-friendly packaging practices significant for environmental protection and food safety.

Hundreds of millions of people on the planet are affected by malnourishment. This contributes to the vulnerability of large swaths of the population, especially children under five years old extremely vulnerable to diseases and even death in the least developed countries. Today, by providing a substantial share of global protein intake, as well as fatty acids and micronutrients, fisheries contribute to global food security. As fish stocks in the upper sea levels have already been over-exploited, there might not be enough in supplying food security, deep-sea fisheries have been increasingly discussed to address this problem. Some mesopelagic fishes show the potential to provide important nutrients. Another way of supplying food security might be through using mesopelagic fish as fish feed. However, fishing in the mesopelagic zone could lead to severe ecological problems and the impact on the biological carbon pump is uncertain. This paper highlights and juxtaposes different perspectives regarding exploitation pathways of the fish riches of deep seas and reviews best practice model projects that deal with uncertainties related to fishery management in the mesopelagic zone.

The paper summarizes the current knowledge about the structure, species, and content differ-ences of β-D-glucans as a storage and functional component, especially of cereal grains. The pa-per also provides comprehensive information on the biosynthesis of this plant cell wall polysac-charide, genetic and non-genetic factors influencing the content variability and indicates the pos-sibilities of breeding modern varieties with a defined content of this metabolite. The final part of the text is also devoted to the influence of significant technological processes applied to cere-als containing β-D-glucans. The chapter discusses the influence of these processes on the content and structure of the polysaccharide and the resulting changes in its physicochemical properties. Part of the discussed issue are the possibilities of effective application of β-D-glucans in different food products.

Hot air frying is a new method of frying food, where the use of a small amount of oil is optional but recommended. The objective of this review was to know the state of the art of hot air frying technology, focusing on trends, and thus obtain new ideas for future work in this area of food. In conclusion, the availability of advanced devices will increase the demand for hot air fryers as demonstrated by the trend generating a great economic and social impact. This new technology not only provides health benefits, but also has environmental advantages. In addition, work focusing on food (i.e. tortilla chips, plantain chips, eggs and meats) is recommended, since there are not enough studies on the subject. Currently, research is being conducted on home fryers, so the use of fryers and their impact at the industrial level is a developing area that will require further research.

Yerba mate waste (YMW) were used to produce kombucha beverage, and the obtained microbial cellulose produced as by product (KMW) was used to reinforce mechanically recycled poly(lactic acid) (r-PLA) matrix. Microbial cellulosic particles were also produced in pristine yerba mate for comparison (KMN). To simulate the revalorization of industrial PLA products rejected during the production line, PLA was subjected to three extrusion cycles and the resultant pellets (r3-PLA) were then plasticized with 15 wt.% of acetyl tributyl citrate ester (ATBC) to obtain optically transparent and flexible films by solvent casting method. The plasticized r3-PLA-ATBC matrix was then loaded with KMW and KMN in 1 and 3 wt.%. The use of plasticizer allowed a good dispersion of microbial cellulose particles into the r3-PLA matrix, allowing to obtain flexible and transparent films which showed good structural and mechanical performance. Additionally, the obtained films showed antioxidant properties, as it was proven by release analyses conducted in direct contact with a fatty food simulant. The results suggest the potential interest of these recycled and biobased materials that are obtained from the revalorization of food waste for their industrial application in food packaging or agricultural films.

Due to nutritional benefits and perceived humane ways of treating the animals, the demand for antibiotic-free pastured poultry chicken has continued to be on a steady rise. However, despite non-usage of antibiotics in pastured poultry broiler production, antibiotic resistance (AR) is reported in zoonotic poultry pathogens. However, actors that drive multidrug resistance (MDR) in pastured poultry are not known. In this study, we used machine learning and deep learning approaches to predict farm management practices, and physicochemical properties of feces and soil that drive MDR in zoonotic poultry pathogens. Antibiotic use in agroecosystems is known to contribute to resistance. Evaluation of the development of resistance in environments that are free of antibiotics such as the all-natural antibiotic-free, pastured poultry production systems described here is critical to understand the background AR. We analyzed 1,635 preharvest (feces and soil) samples collected from forty-two pastured poultry flocks and eleven farms in the Southeastern United States. CDC National Antimicrobial Resistance Monitoring System guidelines were used to determine antimicrobial/multidrug resistance profiles of Salmonella, Listeria and Campylobacter. A combination of two traditional machine learning (RandomForest and XGBoost) and three deep learning (Multi-layer Perceptron, Generative Adversarial Network, and Auto-Encoder) approaches, identified critical farm/environmental variables that drive multidrug resistance in poultry pathogens, in broiler production systems that represents background resistance. This study enumerates management practices that contribute to AR and recommendations to potentially mitigate multidrug resistance and prevalence of Salmonella and Listeria in pastured poultry.

Gelatinization of starch content in pet foods can be impacted by several factors including moisture, retention time, and ingredients used. Starch gelatinization has been associated with digestibility but isn’t well studied using ingredients common in non-traditional canine diets. The objective of this research was to examine the impacts of dietary ingredient profile (traditional vs non-traditional) and assess impacts to total starch content and starch gelatinization. Traditional diets (n = 10) utilizing meat-based ingredients including chicken, chicken by-product meal, meat and bone meal and plant-based ingredients including rice, barley, oats, and corn were examined in comparison with non-traditional diets (n = 10) utilizing meat-based ingredients including alligator, buffalo, venison, kangaroo, squid, quail, rabbit, rabbit and salmon along with plant-based ingredients including tapioca, peas, chickpeas, lentils, potato, and pumpkin. Representative samples were collected via grab sample technique (5 samples/diet) and were assessed for total starch content as well as percent starch gelatinization. Difference between ingredient type was assessed using a Students t-test in SAS 9.4. Significance was set at P < 0.05. Distribution of total starch content based on ingredient type (traditional vs non-traditional) revealed that mean total starch content was higher in traditional diets as compared to non-traditional diets (P <0.0001). Conversely, starch gelatinization was found to be higher in non-traditional diets (P < 0.0001). Total starch content and total gelatinized starch had a strong negative correlation (P < 0.01) in traditional diets, though no correlation was observed in non-traditional diets. This negative correlation indicates a decrease in total gelatinized starch associated with increased total starch content. These novel data reveal important differences between starch content and gelatinization and could impact manufacturing processes for ingredient types as well as feeding recommendations. Unpredicted variation between ingredient formulations could potentially lead to decreased digestibility and absorption and may result in nutrient deficiencies.

In recent years, Blockchain has been favorably adopted in the Supply Chain industry as it provides guaranteed transparency and traceability. The flexibility of Blockchain allows different applications to enable to exchange information; a significant middleweight layer is responsible for information transfer in the Agricultural Sector. The products that are manufactured at a global level in the agriculture industry are improved in safety, validation of some criteria, and quality. In the agriculture industry, the increasing number of complications associated with food safety and impurity risks needs high-level effective traceability solutions that act as necessary quality management tools to make sure satisfactory safety of crops. The agricultural supply chain today has complex ecosystems, consisting of several stockholders to authenticate criteria which are important like crop development stages, monitoring and validation, and compliance with the quality standard. In this proposed research, a systematic literature review will be done that includes smart contracts, Blockchain, and business transactions exclusively for crop production traceability across the agricultural and food supply chain. By using Blockchain in the agriculture sector, productivity, consistency, safety, reliability, and advanced security are increased. All transactions are kept and recorded on the immutable record of Blockchain associates with a decentralized system. Thus, it provides more traceability and clarity in the agriculture system in asafe, trustworthy, and effective way. A systematic literature review is thus enforced to classify the papers which are selected by the following classification: crop traceability, contribution type, research type, and their approach. For this systematic review, the papers which extracted are classified according to defined criteria. The purpose of this study is to fill the gap by collecting and analyzing studies available within the literature aiming to firstly, gain complete insight on the integration of Blockchain in the agriculture sector. Secondly, provide a summary of the present state of research on this area and identify gaps in existing studies. To achieve this aim an SLR was conducted. The findings of this SLR are discussed and researchers were provided with suggestions on possible directions for future research.

This article presents the integration of lean 6S methodologies and hazard analysis and critical control points (HACCP) in the food production sector. Through the study, it is seen that non-food industrial production is not very different from that of food and, in many cases, it assimilates protocols and ideas that are already working in the food industry; Such is the case of risk analysis, critical control points or hygiene, which are part of the food production protocol and, increasingly, of the industry in general. After the integrative analysis, the article proposes a common lean 6S - HACCP model, which can be used both in food production and in non-food industrial production.

The aim of this work was to evaluate the influence of various food and beverages on the viability of probiotic bacteria during passing through artificial digestion. As a model food, solutions with various concentrations of alcohol, sugar, salt, protein and acid were prepared. Different types of real foods and beverages were used as well. Viability in presence of food matrices was tested on monocultures of Lactobacillus acidophilus CCM4833 and Bifidobacterium breve CCM7825T and on mixed commercial culture with 9 different strains of probiotic microorganisms( Lactobacillus, Bifidobacterium, Streptococcus). The concentration and viability of probiotic bacteria was tested by cultivation assay and flow cytometry. In model foods, the best growth of was determined in the presence of 10% albumin and 10% ethanol. Survival of the probiotics delivered in different food matrices through a simulated gastrointestinal tract was quantitatively different. As the best food environment for probiotics complex food matrices such as pasta with cream sauce, chocolate spread and homemade beef broth were selected, followed by mixed vegetables, potato salad, salted chips, fruits and yoghurt. Among beverages the best option was milk, followed by black tea, coffee and Coca Cola. Probiotic microorganisms are more viable when consumed with meals than with beverages only. In general, the highest viability of probiotic cells has been observed in presence of foods containing high concentration of sugar and fat or their suitable combination. The increase of cell viability observed in such foods during model digestion may further contribute to the positive effect of probiotics on human health.

Synthetic biology (SynBio) is an interdisciplinary field that has developed rapidly in the last two decades. It involves the design and construction of new biological systems and processes from standardized biological components, networks and synthetic pathways. The goal of Synbio is to create logical forms of cellular control. Biological systems and their parts can be re-designed to carry out completely new functions. SynBio is poised to greatly impact human health, environment, biofuels and chemical production with huge economic benefits. SynBio presents opportunities for the highly agro-based African economies to overcome setbacks that threaten food security: The setbacks are brought about by climate change, land degradation, over-reliance on food imports, global competition, and water and energy security issues among others. With appropriate regulatory frameworks and systems in place, the benefits of harnessing SynBio to boost development in African economies by far potentially outweigh the risks. Countries that are already using GMOs such as South Africa and Kenya should find the application of SynBio seamless, as it would be a matter of expanding the already existing regulations and policies for GMO use.

Drying food involves complex physical atmospheric mechanisms with non-linear relations from the air-food interactions and those relations are strongly dependent on the moisture contents and the type of food. Such dependence makes it complex to design suitable dryers dedicated to a single drying process. To streamline the design of a novel compact food-drying machine, a heat pump dryer component design optimization algorithm was developed as a subprogram of a Computer Aided Engineering tool. The algorithm requires inputting food and air properties, the volume of the drying container and the technical specifications of the heat-pump off-the shelf components. The heat required to dehumidify the food supplied by the heat exchange process from condenser to evaporator, and the compressor’s requirements (refrigerant mass flow rate and operating pressures) are then calculated. Compressors can then be selected based in the volume and type of food to be dried. The algorithm is shown via a flow chart to guide the user through 3 different stages: Changes in drying air properties, Heat flow within dryer and Product moisture content. Example results of how different compressors are selected for different type of produces and quantities (Agaricus Blazei mushroom with 3 different moisture contents or fish from Thunnini tribe) conclude this article.

Background: Few studies have examined multifaceted aspects of fast food consumption and dietary patterns for their effects on obesity. We examined the independent associations of obesity with fast food consumption and dietary pattern in Korean adults. Methods: A total of 19,017 adults aged 19–64y participated from KNHANES 2010-2014. Fast food items were removed from diet and then dietary patterns were generated. Multivariate logistic regression analysis was used to examine the odds for overweight/obesity and central obesity according to fast food consumption and dietary patterns. Results: Fast food consumers were about 10% of Korean adults. Both of White rice and kimchi pattern and Meat and alcohol pattern were associated with low intakes of fiber, calcium, vitamin C, grains, fruit, and milk(p<0.05). Fast food consumers had higher the Meat and alcohol pattern and the Grains, fruit, and milk pattern, and they had lower the White rice and kimchi pattern than non-fast-food-consumers. Fast food consumer were not associated with overweight/obesity, whereas the participants with Meat and alcohol pattern had 14% higher overweight/obesity(95%CI:1.01,1.28) and 16% higher central obesity(95%CI:1.00,1.34). Conclusions: Fast food consumption was not directly associated with obesity, whereas the Meat and alcohol pattern had independent associations with overweight/obesity and central obesity among Korean adults.

In recent years, increasing attention has been paid to individuals organizing themselves and managing food systems in an ‘alternative’ and more sustainable way. Such emerging food initiatives are most commonly known as ‘Alternative Food Networks’ (AFNs). However, there is an ongoing debate concerning the extent to which AFNs facilitate social, economic and environmental change. There are criticisms of the overall sustainability promise of AFNs related to sufficiency of impact, possible counter effects and relevance of impacts. Because often empirical studies only focus on specific sustainability issues or AFNs, it has been difficult to develop more robust theories about the relations between diverse AFNs arrangements and sustainability. Thus, the aim of this paper is to contribute towards reducing this knowledge gap through a systematic literature review on AFNs in relation to sustainability. We summarize main methodological approaches, types of AFNs studied and sustainability dimensions addressed in literature to date. Findings serve as reference to propose opportunities for future research regarding sustainability in AFNs.

In recent years, food and drink marketers have become increasingly interested in the question of whether there are any meaningful sex/gender differences in the world of taste/flavour perception. However, it turns out that while there are a large number of individual differences in the experience of food/drink, few, if any, fall neatly along sex/gender lines. As such, the marketers of food and drink need to tread very carefully when it comes to marketing food or beverage products specifically at men, or more usually, women. All too often, the brands entering this space soon find their attempts branded crass and/or sexist. Adopting a stealthy or implicit gender-based product development strategy is therefore perhaps more likely to succeed than the explicit targeting of food/beverage-related products in what is undoubtedly a highly-politicized area. That said, the one area where the public appear willing to accept products that are explicitly targeted at men or women is in the case of nutritional foods/supplements.

The present study set out to explore the option of developing food portion size for nutritional labelling purposes using two European Union (EU) dietary surveys. The surveys were selected as they differed in (a) methodologies (food diary v food frequency questionnaire), (b) populations (Irish National Adult Nutrition Survey: NANS) versus a seven-country based on the pan EU study Food4Me), (c) food quantification (multiple options v, solely photographic album) and (d) duration (4 consecutive days v recent month). Using data from these studies, portion size was determined for 15 test foods, where portion size was defined as the median intake of a target food when consumed. The median values of the portion sizes derived from both the NANS and Food4Me surveys were correlated (r = 0.823; P<0.00) and the mean of the two survey data sets were compared to US values from the Recognized as Customarily Consumed (RACC) database. There was very strong agreement across all food categories between the averaged EU and the US portion size (r = 0.947; P<0.00). It is concluded that notwithstanding the variety of approaches used for dietary survey data in the EU, the present data supports using a standardized approach to food portion size quantification for food labelling in the EU.

High sodium intake increases blood pressure and consequently increases the risk of cardiovascular diseases. In Australia, the best estimate of sodium intake is 3840 mg sodium/day, almost double the World Health Organization guideline (2000 mg/day), and processed meats contribute approximately 10% of daily sodium intake to the diet. This study assessed the median sodium levels of 2510 processed meat products, including bacon and sausages, available in major Australian supermarkets in 2010, 2013, 2015 and 2017, and assessed changes over time. The median sodium content of processed meats in 2017 was 775 mg/100 g (IQR 483–1080). There was an 11% reduction in the median sodium level of processed meats for which targets were set under the government’s Food and Health Dialogue (p < 0.001). This includes bacon, ham/cured meat products, sliced luncheon meat and meat with pastry categories. There was no change in processed meats without a target (median difference 6%, p = 0.093). The new targets proposed by the current government’s Healthy Food Partnership, capture a larger proportion of products than the Food and Health Dialogue (66% compared to 36%) and a lower proportion of products are at or below the target (35% compared to 54%). These results demonstrate that voluntary government targets can drive nutrient reformulation. Future efforts will require strong government leadership and robust monitoring and evaluation systems.

In this study, we identified the factors that affect the frequency of receiving nonmarket fruit and vegetables (FV). For Survey 1, we conducted a cross-sectional survey using a self-administered questionnaire for men aged 50–74 living in city (A) in Gunma, Japan. Participants were asked questions on FV receiving frequency, FV gardening, social cohesion (4–20 points), and basic characteristics. For Survey 2, a similar survey was conducted for residents aged 20–74 in three areas in city (B) in Gunma, but we included more variables. Ordinal logistic regression models were used for the analysis. In Survey 1, the responses of 243 participants were analyzed. The results showed that the FV receiving frequency was positively associated with non-gardeners and social cohesion. In Survey 2, the responses of 791 participants were analyzed. Vegetable receiving frequency was positively associated with rural and suburban areas, family structure, employment status, and non-farmers. The relationship between receiving frequency and social cohesion was similar to that found in Survey 1. In conclusion, in areas with flourishing FV cultivation, it seems to be easy to obtain FV through the social networks of reception, even for individuals who are not cultivating FV themselves.

This scoping review investigated how consumers perceive and interpret serving size information on food packages. A search of seven databases (2010 to September 2017) was followed by title and abstract screening, with relevant articles assessed for eligibility in full-text. Fourteen studies met inclusion criteria, with relevant data extracted by one reviewer and checked for consistency by a second reviewer. Five studies reported poor understanding of nutrition facts labelling and portion size, with information to ‘benchmark’ serving size against reported as helpful in two studies. Consumer attitudes towards serving size labelling were measured in six studies and identified that serving size information was interpreted as indicative of nutrient intake regardless of portion size recommendations. Increased labelled serving sizes resulted in increased portion sizes in three studies, with three studies reporting the opposite or neutral effect for discretionary food portion sizes. The influence of labelled serving size on consumer attitudes and consumption is complex and sometimes counterintuitive. As labelled serving size can impact on consumption, any changes may result in unintended public health consequences. The effects of labelled serving size format changes should be tested carefully within experimental and ecological contexts and accompanied by tailored, comprehensive and serving size-specific food literacy initiatives.

Mustard, a widely used condiment, is derived from mustard seeds and partially defatted mustard flour. Varieties of mustard are primarily distinguished by the ratios of mustard seeds and spices used in their production. This study assessed the microbiological safety of mustard products from the Mustard and Ketchup Factory in Poland, produced between 2019-2021, in compliance with Polish and EU regulations. Three mustard types were analyzed: gourmet, creamy, and spicy, crafted from 'Borowska' white mustard and 'Małopolska' Sarepta mustard seeds. The preparation included powdered mustard seeds, water, sugar, and vinegar. Samples of mustards (20 g each) were tested in triplicate for Salmonella, spore-forming anaerobic bacteria, coliform bacteria, Staphylococcus aureus, mold, and yeast. Additionally, water and spices used in production were analyzed for total coliforms, Escherichia coli, Enterococcus, Salmonella, aerobic mesophilic microorganisms, anaerobic spore-forming bacteria, and mold. Results indicated that spices and water met all microbiological criteria. Mustard samples tested negative for Salmonella and anaerobic spore-forming bacteria, with coliforms, Staphylococcus aureus, mold, and yeast counts within acceptable limits, ensuring compliance with food safety and hygiene standards. This research underscores the importance of ongoing monitoring and strict microbiological standards to maintain food safety. Future studies should develop advanced microbial detection methods and implement robust quality control measures to reduce contamination risks in mustard and other food products.

Since the Sustainable Development Goals (SDGs) came into effect, both UNESCO and other international organisations recommend empowering youth to implement the SDGs in universities. Getting started with the SDGs at university level is of special relevance in pre-service teacher training since future teachers are powerful agents of change in the lives of young people. Future teachers need to acquire competencies in sustainability to be able to promote meaningful changes in sustainable behaviour. To that end, holistic approaches to facilitate their acquirement need to be developed. The aim of this study is to explore which teaching methodologies are suitable for the development of competencies in sustainability in Higher Education (HE) and how to empower students to take a leading role in implementing the SDGs in universities. The participants in the study are a group of 23 students in pre-service teacher training. The experimental educational model used for the development of sustainable competencies consists of a methodological sequence of Project-Oriented Learning (POL) and a Cross-disciplinary Workshop on Sustainable Food. This study provides evidence that a holistic approach is appropriate for developing sustainable competencies and contributes to empowering students to implement SDG 12 at their university.

Poultry production in Ethiopia plays a vital role in providing high-quality protein and economic opportunities, yet it faces significant challenges due to prevalent infectious diseases that impact both animal health and human well-being. This review synthesizes current knowledge on the epidemiology and zoonotic risks associated with major poultry pathogens in Ethiopia, focusing on bacterial and viral agents. In Ethiopia, poultry production predominantly consists of traditional scavenging systems in rural areas, alongside a growing intensive farming sector utilizing exotic breeds. Despite efforts to improve biosecurity and vaccination practices, the proximity of intensively reared chickens to smallholder and backyard flocks poses challenges. This environment facilitates the transmission of pathogens such as Campylobacter spp. and Salmonella spp., leading causes of foodborne illnesses in humans. Viral diseases like Newcastle disease virus (NDV) and infectious bursal disease virus (IBDV) also pose significant threats to poultry health and production. These viruses not only cause substantial economic losses but can potentially infect humans, highlighting the interconnectedness of animal and human health in poultry farming settings. This review underscores the importance of integrated disease management strategies encompassing enhanced biosecurity, regular surveillance, and vaccination programs tailored to local contexts. Furthermore, the adoption of molecular epidemiology approaches could provide deeper insights into pathogen circulation and evolution, aiding in targeted control measures. Addressing the complex challenges of poultry diseases in Ethiopia requires interdisciplinary collaboration between veterinary, public health, and agricultural sectors. By mitigating disease risks in poultry populations, Ethiopia can enhance food security, improve public health outcomes, and sustainably support its growing poultry industry.

The concentrations of pesticide residues were determined in 2,164 samples of 46 fruits species, collected over a 4-year period. Fruits originated from 59 countries, including Serbia (N = 199). Pesticide residues were determined by the liquid chromatography tandem mass spectrometry (LC-MS/MS) after extraction by a modified QuEChERS protocol. A total of 173 pesticide residues were detected. 62.57% of fruit samples had pesticide residues at or above 0.01 mg/kg, and 4.67% of samples exceeded the maximum residue limits (MRLs) set by the Serbian regulation. MRL values were most often exceeded in pomegranate and citrus fruits (grapefruit and mandarin). Most frequently found pesticide was imazalil (detected in 624 samples, 28.84%) with the highest concentration (93.870 mg/kg) in a grapefruit sample. Multiple pesticides were detected in 50.92% of the fruit samples, and two grapefruit samples contained up to 44 pesticide residues.

Adopting an immune response and tissue-based nomenclature in food allergies brings the field closer to precision and personalized medicine. An updated classification of non-IgE-mediated food hypersensitivity highlights mechanisms through a complex pathophysiological perspective and endotype-driven framework. This approach aligns with the essential goals of discovering new diagnostic and therapeutic biomarkers, enhancing the understanding of clinical presentations, and refining immunotherapy and targeted treatments, such as monoclonal antibodies and small molecule drugs, to improve patient management and quality of life. Endotype-focused and molecular-based decision-making also endows translational and clinical research, fostering the ongoing scientific quest for more innovative solutions.

Pastırma is an ethnic meat product defined as dry-curing, drying, pressing the whole muscles of cattle and buffalo, and coating them with a special paste containing fenugreek seed flour, garlic, milled red capia pepper, and water. In this narrative literature review, historical aspects of pastırma, its definition and classification, detailed production steps, composition and yield, chemical and microbiological properties, pastırma fraud and customer concerns are mentioned. In the shape of the narrative review, relevant studies were identified by searching Scopus, Science Direct, Web of Science, Trdizin, and Google Scholar Search included English- or Turkish-based articles, online reports, books, and electronic books. The keywords "pastırma, pastirma, çemen, cemen, cemening, cemen paste, Fenugreek" were used. The results of this review indicate that future studies on pastırma may focus on related cultural aspects, elimination of unpleasant odour from fenugreek, histological and chemical effects of pressing meat parts, kinetics of drying, osmotic dehydration, and developing new starter combinations.

Shiga toxin-producing Escherichia coli (STEC) is a significant public health threat due to its ability to cause severe gastrointestinal diseases in humans, ranging from diarrhea to life-threatening conditions such as hemorrhagic colitis and hemolytic uremic syndrome (HUS). As the primary reservoir of STEC, cattle play a crucial role in its transmission through contaminated food and water, posing a considerable risk to human health. This comprehensive review explores host-pathogen interactions during STEC colonization of the bovine gut, focusing on the role of gut microbiota in modulating these interactions and influencing disease outcomes. We integrated findings from published transcriptomics, proteomics, and genomics studies to provide a thorough understanding of how STEC adheres to and colonizes the bovine gastrointestinal tract. The insights from this review offer potential avenues for the development of novel preventative and therapeutic strategies aimed at controlling STEC colonization in cattle threby reducing the risk of zoonotic transmission.

Bloody stools in the newborn may be a clue for several clinical entities of varying severity ranging from a transient hematochezia to food protein induced allergic proctocolitis (FPIAP) or necrotizing enterocolitis (NEC). To distinguish among them at an early stage is challenging, but crucial, as the treatment and prognosis are different. We conducted a monocentric retrospective study including all preterm infants admitted to the NICU of the Vittore Buzzi Children’s Hospital (Milan) with bloody stools from December 2022 to May. Patients diagnosed with NEC exhibited a significantly lower eosinophil count and higher procalcitonin levels than both patients with CMPA and patients with transient hematochezia, as well as a statistically significant increase in pathological features at abdomen ultrasounds and abdominal X-rays. In contrast, no Lab markers or imaging have been demonstrated to be useful in distinguishing between transient hematochezia and FPIAIP. Thus, after excluding a diagnosis of NEC the only way to confirm the FPIAP is the oral food challenge, which can be performed even in premature newborns presenting blood stools, otherwise healthy, under medical supervision, in order to identify infants who may benefit from a cow’s milk free diet.

Chalcones constitute an important group of natural compounds abundant in fruits and comestible plants. They are a subject of increasing interest because of their biological activities including antidiabetic and anti-obesity effects. The simple chalcone structural scaffold can be modified at multiple sites with different chemical moieties. Here we generated an artificial chalcone, i.e., 3,5-dimethyl-2,4,6-trimethoxychalcone (TriMetChalc), derived from 2′,4′-Dihydroxy-6′-methoxy-3′,5′-dimethylchalcone (DMC). DMC is the major compound of Cleistocalyx operculatus, a plant widely used in Asia for its anti-hyperglycemic activity. Using ob/ob mice as an obesity model, we ported that, after 3 weeks of per os administration, TriMetChalc modified food intake through the specific activation of brain structures dedicated to the regulation of energy balance. TriMetChalc also decreased weight gain, glucose intolerance and hepatic steatosis. Moreover, through extensive liver lipidomic analysis, we identified TriMetChalc-induced modifications that could contribute to improving the liver status of the animals. Hence, TriMetChalc is a chalcone derivative capable of reducing food intake and addition of glucose intolerance, and hepatic steatosis in a mouse model of obesity. In light of these results, we believe that TriMetChalc action deserves to be more deeply evaluated over longer treatment periods and/or in combination with other chalcones with protective effects on the liver.

Areca palm sheath leaves were an incredibly noble food packaging system. In ancient times, naturally available wood, leaves, stems, and barks were used to store food materials. But all these were turned down upon the rise of civilization. Today, many modern food packaging systems are used; paper and paperboard packaging materials are used mainly as a replacement for plastic materials. But somehow, paper-based materials have major drawbacks when temperature-dependent products are stored; leaching out components poses a higher threat to health. To alleviate it, bio-based components were used in the manufacturing of paper materials, but the migration of those components was still risky. This study focuses on how the areca palm sheath leaves can be effectively used to prevent this migration of components.

Food safety in dairy shops has gained increasing attention. Consequently, this study aims to evaluate dairy handlers' knowledge of food safety practices, assess compliance with food safety codes regarding facility maintenance and personal hygiene, and understand retail dairy shops' capacity to implement food safety standards. This research involved surveys and interviews with 110 dairy retail workers to gauge their grasp of food safety principles, their recognition of its importance, and the obstacles they encounter in implementing proper food safety measures. Among the participants, 93% were males under 35 years old, with experience ranging from 1 to 8 years. The study revealed that while over 83% of participants were familiar with standard procedures ensuring dairy product safety, only 37% understood “HACCP” in relation to food safety. Additionally, 42% believed that freezing food at -18°C eliminates food bacteria, and 56% thought food contamination could be identified by taste, indicating misconceptions among respondents. Results showed that 90% of survey participants had a strong awareness of food safety, with 98% emphasizing the importance of regular inspection of production areas for cleanliness to ensure a safe dairy production environment. However, less than 45% had received formal training on dairy-specific food safety practices, and only 53.6% had a documented system for correctly labeling and providing production dates for dairy products. These findings have significant implications for public health and food safety policies in Jordan. Furthermore, the study provides valuable insights to enhance food safety practices among dairy retail vendors.

The Southern European countries of Spain and Portugal both show a high degree of export spe-cialization in agri-food products compared to the EU-27 as a whole. This sector plays a funda-mental role in their economies, determining the management of natural resources, with the food and beverage industry being the most important manufacturing activity in both countries. Drawing on evidence obtained from Eurostat's database on foreign trade, this study analyzes whether the geographical concentration of agri-food exports from the Iberian Peninsula coun-tries to the EU-27 increases between 2008 and 2022, or, conversely, if there is a process of spatial diversification in favor of non-EU markets. Expansion towards new trading partners, as indicat-ed by estimated concentration indices, is significant in Spain but does not occur in Portugal. However, in both economies, the regional market with European partners, characterized by strong competition and low development expectations, remains decisive in the evolution of their exports in the short and medium term. Consequently, institutions and companies in this sector must adopt a more dynamic approach and implement measures that allow for increased sales orientation towards higher growth markets, thus enhancing the global competitiveness of the national agri-food sector.

The interest in lipid composition profiling is significantly increasing as research reveals the immense importance of lipids in medicine, plant science, food and agriculture. However, lipidomic analysis requires high-end specialty equipment. We used two-dimensional thin-layer chromatography (2D TLC) as a readily available, low-cost tool for basic lipidomic profiling of lipid classes in algal samples as model: Chlamydomonas reinhardtii, Auxenochlorella protothecoides, and Euglena gracilis. Algal lipid extracts were separated on a 2D-TLC plate, and TLC analysis was followed by scraping individual TLC spots off the plate, and a subsequent liquid chromatography separation and tandem mass spectrometry (LC-MS/MS) analysis. For comparison, crude lipid extracts were also injected directly to the LC-MS/MS system. Lipid class annotation was achieved by a combination of accurate mass, retention time information, neutral loss and fragment ion analysis by MS2Analyzer, and by matching spectra to LipidBlast MS/MS library. Overall, we were able to identify 15 lipid classes, and to adequately profile the lipid classes in all three organisms. This TLC method is thus suggested as an accessible tool for lipid class profiling of algal, plant, and food lipids, alike, when a rapid and simple analysis is required, e.g., for screening purposes.

Food insecurity is a multidimensional concept adequately challenging not only the complex operationalization effort but also judgments of who is food secure and who is not. This study aimed to assess the level of household food insecurity in the study area. Both probability and non-probability sampling procedures were employed to draw the 367 respondents, key informants, and focus group discussants. The Consolidated Approach for Reportig Indicators (CARI) console model was constructed with four indicators: Food consumption score, Food energy shortfall, Food expenditure share, and Livelihood asset depletion. Descriptive statistics was used to analyze data in the models. The CARI result revealed that 41.1%, 9.3%, 20.4% and 29.2% of households were food secure, marginally food secure, moderately food insecure and severely food insecure, respectively. The overall prevalence showed that 49.6% households were food insecure and 50.4% were food secure. Moreover, female-headed households and households living the Belg and CHV livelihood zones were more food insecure than their counterparts. The study concluded that the problem of food insecurity is pervasive in the study area in general and Belg and CHV livelihood zones, in particular. Therefore, more attention and intervention should be given by policymakers and concerned development partners to alleviate the problem.

Dissemination of resistant pathogens via food supply chains is a notable public health danger from farm to fork. The proposed work analysed the distribution of E. coli among various sources of animal-based food supply chain. Overall, 500 samples were heaped up from livestock, poultry sectors, environment, fisheries, and dairy. Standard microbiological procedures were used to isolate and identify E. coli. Further, isolates were confirmed by using MALDI-TOF and virulence associated genes (VAGs). The phenotypic resistance pattern of the isolates was determined by molecular identification of antibiotic resistance genes (ARGs) through PCR using specific primers. Shiga toxin producing E. coli (STEC) were subjected to PCR based O typing using specific primers against different O types. Overall results revealed that 154 (30.5%) samples were confirmed as E. coli, in which77 (50%) isolates were MDR E. coli. Among these, total 52 (67.53%) isolates showed array of VAGs in which 21 (40.38%) were confirmed as STEC based on stx1 and stx2. Furthermore, 12/52 (23.07%) isolates were detected as Non-O157 STEC co-harboring mcr-1 and blaNMD-1. Overall, O26 STEC was found to be the most prevalent among different non-O157 types. Herein, results proposed that detection of such STEC MDR E. coli causing serious public health consequences in developing countries.

Mannosylerythritol lipids (MELs), one of the most promising biosurfactants (BS), are glycolipids produced by yeasts or fungi, with great environmental performance and a high compatibility with the human body. MELs besides working as typical surfactants, can form diverse structures when in the critical aggregation concentration (CAC), reducing the surface tension of water and other solutions, and being stable over a wide range of conditions. Among others, MELs present anti-microbial, antitumor, antioxidant and anti-inflammatory activity, skin and hair repair capacity, which opens possibilities for their use in applications from cosmetics and pharmaceutics to bio-remediation and agriculture. However, their market share is still low when compared to other glycolipids, due to their less developed production process and higher production cost. This re-view gathers information on the potential applications of MELs mentioned on the literature since 1993. Furthermore, it is also explored the current strategies being developed to enhance the market presence of MELs, in parallel with the ones developed for rhamnolipids and sophorolipids.

The traditional practice of harvesting and processing raw date palm sap is not only culturally significant but also an essential nutritional source in South Asia. Yet, the potential for bacterial or viral contamination from animals and environmental sources during its collection remains a real and insufficiently studied risk. Implementing improved food safety measures and collection techniques could mitigate the risk of these infections. Additionally, the adoption of advanced food analytical methods has the potential to identify pathogens and uncover the natural bacterial diversity of these products. The advancement of NGS technologies, particularly nanopore sequencing, offers rapid and highly mobile capabilities. In this study, we employed nanopore sequencing for bacterial metabarcoding of a set of raw date palm sap samples collected without protective coverage against animals in Bangladesh in 2021. We identified several bacterial species with importance in the natural fermentation of the product and demonstrated the feasibility of this NGS method in the surveillance of raw palm sap products. We revealed two fermentation directions dominated by either Leuconostoc species or Lactococcus species in these products at the first 6 hours from harvest along with opportunistic human pathogens in the background, represented with low abundance. Plant pathogens, bacteria with the potential for opportunistic human infections and the sequences of the Exiguobacterium genus were also described and their potential role is discussed.

In this study a material based on Polyethylene (PE) and Microcrystalline Cellulose (MC) was developed as a breathable packaging film. Surface functionalization of MC with 3 aminopropyltriethoxysilane (APTES) shows to be an efficient alternative to tailor their properties and increase opportunities for the application of MC on the reinforcement of polymers such polyethylene (PE). Functionalization of MC with mentioned silane derivative was achieved using a green method and later used on the development of composites with PE in three percentages (1, 3 and 5%). All the materials were prepared by melt blending and characterized, in terms of structural properties (ATR-FTIR and FTIR in transmittance, EDX, SEM), thermal properties (DSC and TGA), thermomechanical properties (DMA), contact angle measurements and permeability to oxygen and water vapor. The materials demonstrated to have potential to be used as breathable film packaging of fresh products.

The paper focuses on the different dynamical systems for the prey-predator model for different cases which includes greater depth of the food chain and varying number of preys and predators. We simulate the different postulated models and provide a comparative study for the same.

The utilization of fermented foods has been a longstanding practice in human civilization worldwide for example sauerkraut from the Roman Empire, Jiangshui, and PaoCai, which are popular traditional foods in China. In Korea, Russia, and Mongolia, Kimchi and Kefir are widely used. Similarly, Japan, Indonesia, and Pakistan have their traditional fermented foods such as Miso, Natto, Tempeh, and sourdough, respectively. In America and Europe, fermented alcoholic beverages made from sorghum and maize are among the most common. Nevertheless, the full potential of fermented foods to enhance the bioavailability of bioactive compounds and restore probiotic communities has yet to be thoroughly explored. In this review, we focus on the bioactive compounds and probiotic stability in food fermented with probiotic bacterial strains. Probiotic fermented food improves the bioactive compound contents and has been gaining interest in basic and clinical research. Bioactive compounds, including phenolic, alkaloids, terpenoids, flavonoids, stilbenes, coumarins, tannins, anthocyanidins, flavones, isoflavonoids, and polyphenols, along with beneficial bacteria such as Lactobacilli, Bifidobacteria, Pediococcus, and Weissella demonstrate increased levels and restoration in probiotic fermented foods. These bioactive compounds, combined with a thriving microbiota, play a role in preventing viral infections by targeting influenza, noroviruses (NoVs), Murine norovirus-1 (MNV-1), and COVID-19, while also stimulating the host's immune function. Clinical and pre-clinical investigations are warranted to explore the dose-response and duration efficacy of probiotic fermented foods against viral infections.

Natural polysaccharides, which are described in this study, are some of the most extensively used biopolymers in food, pharmaceutical and medical applications, because they are renewable and have a high level of biocompatibility and biodegradability. The fundamental understanding required to properly exploit polysaccharides potential in the biocomposite, nanoconjugate, and pharmaceutical industries is depended on detailed research of these molecules. Polysaccharides are preferred over other polymers because of their biocompatibility, bioactivity, homogeneity, and bioadhesive. Natural polysaccharides have also been discovered to have excellent rheological and biomucoadhesive properties, which may be used to design and create a variety of useful and cost-effective drug delivery systems. Polysaccharide-based composites derived from natural sources have been widely exploited due to their multifunctional properties, particularly in drug delivery systems and biomedical applications. These materials have achieved global attention and are in great demand because to their biochemical properties, which mimic both human and animal cells. Although synthetic polymers account for a substantial amount of organic chemistry, natural polymers play a vital role in a range of industries, including biomedical, pharmaceutical, and construction. Nutrition is one of the most influential environmental factor in both taxonomical shifts in gut microbiota as well as development of Type 2 Diabetes Mellitus (T2DM). Emerging evidence has shown that the effects of nutrition on both these parameters is not mutually exclusive and that changes in gut microbiota and related metabolites such as short chain fatty acids (SCFA) and branched chain amino acids (BCAA) may influence systemic inflammation and signaling pathways that contribute to pathophysiological processes associated with T2DM. With this background, our review highlights the effects of macronutrients, carbohydrates, proteins and lipids, as well as micronutrients, vitamins, and minerals, on T2DM, specifically through their alterations in gut microbiota and the metabolites they produce. Additionally, we describe the influences of common food groups, which incorporate varying combinations of these macronutrients and micronutrients, on both microbiota and metabolic parameters in the context of diabetes mellitus. Overall, nutrition is one of the first line modifiable therapies in the management of T2DM and better understanding of the mechanisms by which gut microbiota influence its pathophysiology provides opportunities for optimizing dietary interventions.

Background: Data suggest that food allergies greatly impact a child’s health and growth due to inadequate nutrient intake. Our study aimed to establish the long-term outcome of children with food allergies compared to a control group. Methods: This study was a retrospective cohort study with longitudinal follow-up with a mean period of 4.85 years from the diagnosis to the last study visit. The patients’ nutritional intake was assessed using a three-day food diary and analysed by a dietitian. Patients (61 boys and 33 girls, mean age 6.9 years) had a single food allergy including 21 patients with cow’s milk, 34 with egg, and 39 with peanut allergies. The control group included 36 children (19 boys and 17 girls, mean age 8.03 years). Blood analysis was performed on all participants. Results: Data from our study showed that patients with cow’s milk, egg or peanut allergies had normal growth and achieved catch-up growth from the diagnosis until the last study visit. In the cow's milk allergy group, the allergy was shown to affect calcium intake (p&lt;0.05), while egg and peanut allergies did not impact the dietary intake of nutrients. None of the investigated food allergies affected blood results (p&lt;0.05). Conclusions: In the present study, we showed that single food allergies do not compromise growth in children if they are provided with appropriate support and that the affected children reach catch-up growth from the diagnosis.

Lime application with other complementary sustainable management practices increases crop yield, but liming is modestly applied in Serbia. This study investigated the influence of liming (1000 kg/ha) combined with the common application of mineral fertilizers on maize yield and the chemical properties of Pseudogley soil. The experiment was conducted near Kraljevo, Western Serbia, on maize hybrid ZP 606, sown in a two-year monoculture. The experiment had three treatments: fertilizer, fertilizer+lime, and control treatment. The soil is acid, poor in humus, and contains an increased content of mobile aluminum. There was a significant increase in yield under the fertilizer and lime+fertilizer treatments, compared with the control. The yield of maize in the limed treatment was 4.4–9% higher than in the fertilizer treatment. The positive effects of liming on soil are related to an increase in pH, base saturation, and available phosphorus and a decrease in available aluminum. In the fertilizer treatment, there was a small decrease in pH and base saturation, whereas the amount of aluminum remained high, indicating that further application of fertilizers without lime can increase the aluminum content and foster its toxicity. The long-term sustainability of maize production in Serbia should include liming as a regular management practice on Pseudogley soil, with the utilization of smaller doses of lime because of the potential CO2 effects. To improve soil health, food, and environmental security, and incorporate new crops, developing a framework promoting liming as a sustainable management practice is of high importance.

Background: Understanding the trophic ecology of threatened freshwater fishes is relevant to managing their conservation. The genus Orestias is endemic to the Andes region and shows great biogeographical interest in the Neotropics due to its adaptation to the high-altitude systems of the Andes as well as because several species are considered threatened. (2) Methods: Here, we synthesize the documented trophic interaction of Orestias spp. in freshwater ecosystems of the Andes region available in the literature and use available data to explore the trophic interaction of Orestias species via null models. (3) Results: Our findings showed that Orestias spp. consume a wide range of prey (i.e., mainly aquatic insects, crustaceans, and mollusks) that varied according to their habitats and feeding morphology. The null model revealed that species associations in diet were random because of the presence of many repeated species. Our results would reveal that some Orestias spp. may show an opportunistic feeding strategy that concurs with previous reports. Additionally, we highlight major information gaps associated with the trophic ecology of Orestias spp. and propose some direction for future studies. (4): Our study provides valuable in-formation on Orestias spp. trophic ecology, which may be useful for developing conservation strategies for native fish in the Neotropical region.

Cyperus rotundus L. exhibits promising potential for the development of functional foods due to its documented pharmacological and biological activities. This study investigated the antioxidant and anti-diabetic properties of C. rotundus kombucha. The results demonstrated potent antioxidant activity with an IC50 value of 76.7±9.6 uL/mL for the DPPH assay and 314.2±16.9 uL/mL for the ABTS assay. Additionally, the kombucha demonstrated alpha-glucosidase inhibitory with an IC50 value of 142.7±5.2 µL/mL. This in vitro antioxidant potential was further validated in vivo using Drosophila. Drosophila fed a high-sugar diet and supplemented with pure kombucha revealed significant increases in DPPH and ABTS free radical scavenging activity. Drosophila on a high-sugar diet supplemented with varying kombucha concentrations manifested enhanced resistance to oxidative stresses induced by H2O2 and paraquat. Concurrently, there was a notable decline in lipid peroxidation levels. Additionally, significant upregulations in CAT, SOD1, and SOD2 activities were observed when the high-sugar diet was supplemented with kombucha. Furthermore, in vivo assessments using Drosophila demonstrated significant reductions in alpha-glucosidase activity when fed with kombucha. A comprehensive GC-MS and HPLC analysis of C. rotundus kombucha detected the presence of antioxidative and anti-glucosidase compounds. In conclusion, C. rotundus kombucha exhibits considerable antioxidant and anti-diabetic properties, demonstrating its potential as a beneficial beverage for health promotion.

Limnospira maxima is widely cultivated due to its abundance of proteins, carbohydrates, vitamins, minerals, essential fatty acids, and phycobiliproteins. However, limited information, high production costs, and nitrogen source limitations have hindered the optimal utilization of this cyanobacteria. The main goal of this study was to address these limitations by identifying ideal cultivation parameters to maximize yields, reduce costs, and contribute to global food security. It was demonstrated that the white and yellow light spectra are the most suitable for cultivating L. maxima, and the use of KNO3 as a nitrogen source proved to be the most cost-effective on a large scale. Nitrogen deficiency stimulates the production of dry biomass but also affects the concentration of key pigments such as chlorophyll and phycocyanin. A notable characteristic of L. maxima is its adaptability and survival capability in various environmental conditions, including nitrogen-deficient environments. This resilience is achieved through the degradation of phycobilisomes and the storage of glycogen. By identifying the optimal growth conditions and understanding the physiological responses of L. maxima, cultivation practices can be improved to be more efficient and sustainable.

Sustainable biomass production has significant potential for mitigating greenhouse gas emissions and is a promising alternative for the production of eco-friendly biofuels, biochemicals, and carbonaceous materials for biological, energetic, and environmental applications. Biomass from agroforestry and agricultural wastes is the richest natural carbon source and a sustainable option for woody biomass from a circular economic perspective. Portugal has several residues and by-products of agriculture, food processing, and forestry origin, and has a high availability of residual biomass. Portugal intends to reduce its dependence on energy imports and the use of fossil fuels, thereby increasing its economic performance while using biomass waste to produce high-value-added products. In this context, this review aims to explore the potential of agri-food wastes obtained from Portuguese industries via thermochemical conversion technologies as a promising sustainable alternative to woody biomass for the development of eco-friendly biofuels, biochemicals, and high-value carbonaceous materials and their applications. This strategy based on the circular bioeconomy concept can contribute to reducing the dependence on fossil fuels and minimising greenhouse gas emissions while meeting the demands of the growing population and providing a sustainable waste management solution.

In recent years the yield of fruits and vegetables have been decreasing in Colombia, threatening national food security. Analysis of crop production data may lead to identifying cropping systems that have shown better adaptability to changes in climatic and non-climatic factors associated with agricultural production. The open database AGRONET keeps data of the agricultural activities conducted in Colombia, allowing to find the information organized by crops, regions and years; each row of the database registers farm information in Colombia. Aiming to identify resilient crops systems, agricultural data of fruits and vegetables were analyzed. First, trends in crop production were studied by year and locations, detecting the regions and crops with highest yields in the period from 2006 until 2020. Then, mixed linear regression and principal components analysis were applied to elucidate the relation between non-climatic factors and crop yield. In Colombia, vegetable production was more efficient than fruits, observing yields of 10.23 and 13.33 t ha^-1, respectively. On the other hand, the Colombian central region showed high yields for vegetables, while for fruits this was exhibited in northern and eastern locations. In the present study, yield variation responded to changes in the location of crop systems, while years had no effect on vegetable production. Furthermore, the price of the agricultural product and the cost of fertilizers were associated with the yield of the analyzed crops systems. In Colombia, carrot, cabbage, tomato papaya and pineapple are resilient crops whose yield increases especially by the regions where they are cultivated.

Saponins are a diverse group of naturally occurring plant secondary metabolites present in a wide range of foods ranging from grains, pulses, green leaves to sea creatures. They consist of a hydrophilic sugar moiety linked to a lipophilic aglycone, resulting in an amphiphilic nature and unique functional properties. The amphiphilic structures enable saponins to exhibit surface-active properties, forming stable foams and complexes with various molecules. In the context of food applications, saponins are utilized as natural emulsifiers, foaming agents, and stabilizers. They contribute to texture and stability in food products and have potential health benefits, including cholesterol-lowering and anticancer effects. Saponins possess additional bioactivities that make them valuable in the pharmaceutical industry as anti-inflammatory, antimicrobial, antiviral, and antiparasitic agents to name a few. Saponins can demonstrate cytotoxic activity against cancer cell lines and can also act as adjuvants, enhancing the immune response to vaccines. Their ability to form stable complexes with drugs further expands their potential in drug delivery systems. However, challenges such as bitterness, cytotoxicity, and instability under certain conditions need to be addressed for effective utilization of saponins in foods and related applications. In this paper, we have reviewed chemistry, functionality, and application aspects of saponins from various plant sources and have summarised the regulatory aspects of food application of Quillaja saponins. Further research to explore the full potential of saponins in improving food quality and human health has been suggested. It is expected that this article will be a useful resource for researchers in food, feed, pharmaceutical and material science.

A commercial phage biocontrol for reducing Listeria monocytogenes has been described as an effective tool for improving fresh produce safety. Critical challenges in the phage application must be overcome for the industrial application. The validation studies were performed in two processing lines of two industry collaborators in Spain and Denmark, selecting shredded iceberg lettuce as the ready-to-eat (RTE) product of higher process volume. The biocontrol treatment optimized in lab-scale trials for the application of PhageGuard ListexTM was confirmed in industrial settings by four tests, two in Spain and two in Denmark. Results showed that the method of application that included the device and the processing operation step were appropriate for the correct application. The proper dose of Phage Guard ListexTM was reached in shredded iceberg lettuce and the surface was adequately covered for the successful application of phages. There was no impact on the headspace gas composition (CO2 and O2 levels), nor on the color when untreated and treated samples were compared. The post-process treatment PhageGuard ListexTM did not cause any detrimental impact on the sensory quality, including flavor, texture, browning, spoilage and visual appearance of over the shelf-life as the phage solution was applied as a fine, mist solution.

Autism spectrum disorders (ASD) is a heterogeneous group of neurodevelopmental disorders characterized by food selectivity in a significant portion of the population. The nature of this selectivity remains unclear, with hypotheses suggesting associations with sensory disorders or stereotypical and repetitive patterns of activity and interests. This study aimed to determine the prevalence and nature of food selectivity traits in individuals with ASD compared to the neurotypical population. The study involved 219 participants, with 115 diagnosed with autism and 92 without. 12 children undergoing diagnosis were excluded from the analyses. Findings revealed that food selectivity traits are more common in individuals with ASD, with differences in preferences mainly involving structure, color, taste, and serving method. Children with ASD had more food selectivity traits than those without, and certain food characteristics could alter intake as they grow. Selectivity occurred for both sensory and stereotypical reasons, but stereotypical features significantly differentiated neurotypical individuals from those with ASD.

In this research, the antioxidant and antibacterial activities of active films based on potato starch containing Viola odorata extract (VOE) were investigated both in vitro and in chicken fillets. The VOE was added to the starch film formulation at 0, 1, 2, and 3% (w/v). The results showed that by increasing the extract level, the total phenol content and antioxidant and antibacterial activity of the films against Escherichia coli, Staphylococcus aureus, and Salmonella typhimurium improved remarkability. The results of meat tests indicated significant antioxidant and antimicrobial activity of active films containing different levels of VOE in chicken fillets, and a direct relationship was observed between the concentration of the extract and the functional activity of the films, so with the increase in the concentration of the extract in the films, the rate of lipid oxidation and growth of microorganisms in chicken fillets decreased significantly during the storage period, and less volatile nitrogen bases, metmyoglobin, and oxidation products were produced in the fillets. In general, the results of this research demonstrated that active film based on potato starch containing VOE (especially 2 and 3% levels) has the ability to extend the oxidative and microbiological shelf life of chicken fillets during cold storage for at least eight days.

Biowaste management is in the center of attention in recent years, due to the increased focus on Circular Economy practices. Recent management solutions promote exploration for small and medium scale processing and monitoring practices. In this context, two pathways of biowaste valorization are analyzed: composting and anaerobic digestion. This study focuses on energy production with the hydrothermal carbonization (HTC) of anaerobic residues from biogas production. Lesvos has numerous processing facilities and olive mills, and therefore Olive Mill Wastewater (OMWW) are the main biowaste streams in the island, along with olive tree pruning, the organic fraction of municipal solid waste and sludge from wastewater treatment facilities. Most studies present applications on specific types of biowaste, while this study aims to co-treat several biowaste streams. A holistic experimental set-up that combines aerobic and anaerobic treatment strategies was developed taking into consideration the hydrothermal treatment of AD digestate along with locally available biowaste, like OMWW, sludge etc. A main target objective is to investigate if solid fraction could have a high heating potential In addition, HTC was able significantly to reduce the COD of OMWW while resulting in hydrochars with increased heating values.

Dietary fiber has been associated with health benefits, therefore, the availability of validated tools to assess food consumption associated with high-fiber foods would allow the quantification of the intake of this functional nutrient, the identification of risk groups and target populations, and the development of public policies and/or programs aimed at improving the health of the population. In this study, a fiber intake short food frequency questionnaire (FFQ) was translated into Spanish and its content validity was determined by a group of experts, to subsequently conduct a pilot test including 198 subjects aged 36+12.5 years, residing in Chile (46 men and 150 women), with the purpose of quantifying dietary fiber intake. The global assessment of the FFQ revealed a validity coefficient of 0.98+0.02; after the application of the pilot, mean dietary fiber intake in adult Chilean residents was of 13 g per day, with similar results to those found in the National Food Consumption Survey 2010 (12.5 g per day in men, and 11.5 g in women). The FFQ is a quick and valid tool to classify people on the basis of their habitual dietary fiber intake.

The recent development of the Internet has boosted the extension of online food services by enabling people to search, compare prices and conveniently access these services. Because, only with an online system, small and medium-sized economic actors can compete with established food company such as McD and KFC. Therefore, it is important to know consumer behavior patterns from online food ordering systems for developing marketing strategies. Exploring online consumer behavior provides a better understanding of consumer segmentation in food demand and thus helps to lay the foundation for developing an online marketing strategy for competitive advantage. The purpose of this study is to finding factors affecting attitude towards online food retailing. This study uses a quantitative approach by involving respondents who often use online food ordering systems (Go-Food) applications in Bandung. The results showed that hedonic motivation and price saving orientation had no significant effect on behavior intention toward OFD services by Go-Food, while time saving orientation, prior online purchase experience and convenience motivation had a significant effect on behavior intention toward OFD services.

From new understanding of pectin molecular structure and physiological effects on man up to new production methods and new applications, significant new knowledge of pectin has emerged in the last two decades (2010-2020). These developments open the route to new and unexpected applications of this uniquely complex heteropolysaccharide ubiquitous in plants and fruits well beyond its traditional use as food hydrocolloid. This study provides a unified perspective on the new science and technology of pectin. Furthermore, we offer an insight into forthcoming pectin uses from an expanded perspective taking into account selected technology and economic factors that, we argue in this study, will shortly impact the pectin production and uptake in many countries.

Countries in West Africa are adversely affected by climate change (erratic rainfall and rising temperature) resulting in floods, desertification, drought and sea level rise. These events are anticipated to have negative impacts on agricultural development on the continent, ultimately, contributing to food insecurity and environmental degradation. This implies that the production capacity of agrarian communities is unable to meet the food demand of the growing urban population. Can sustainable and innovative urban farming technology such as aquaponics achieve food security as well as sustainable development in countries vulnerable to climate change? This study uses inferential statistic to examine the plant growth performance in micro-scale aquaponics and specific growth rate per day (SGR) for the fish growth performance vis-à-vis conventional urban farming production. A quantitative analysis use to examine the barriers to adoption based on survey of (five) urban aquaculture practitioners in Lagos, Nigeria. Literature review was use to assess the economic feasibility of a small-scale aquaponics system in developing countries based on Net-Discounted Benefit-Cost Rate (DBCR). The results suggest that aquaponics can improve food security through fish and vegetable production and it is likely that urban farming practitioners will adopt the technology if support mechanism are in place. Aquaponics systems present a novel opportunity to promote environmental conservation as well as sustainable food production and consumption in urban areas in Western Africa if adequate financial credit and knowledge transfer is provided.
