The Mozambican dairy industry landscape is not well known because the research about it presents numerous inconsistencies. These inconsistencies are possibly due to miscommunication between scholars, entrepreneurs, the government and other actors, besides major events such as the civil war and policy changes and overall lack of coordination. This study aimed to catalog and relate the major studies and findings in the Mozambican dairy research, contextualize them historically, analyze the implications and provide hints for future researchers. Dairy research seemed intimately related to the industry’s development, and it has been dependent on the country’s sociopolitical changes and opportunities. Social and economic studies are more abundant, perhaps because the dairy industry is emerging, thriving to stand out in a very competitive environment, but there are also studies in applied sciences, especially microbiology and chemistry. There are promising directions to follow such as the improvement of herding techniques (e.g. feeding, disease control), multidisciplinary synergies or exploration of traditional dairy products such as masse. Also, it would be important for institutions to share their research through electronic platforms, even the information published prior to the existence of the worldwide web.

Bovine mastitis (BM) has been causing great economic and financial losses in the dairy industry worldwide and one of its major pathogenic agents is S. aureus. BM treatment still relies on antibiotics. The extensive use of antimicrobials gives rise to bacterial strains such as methicillin-resistant S. aureus (MRSA) and mupirocin-resistant S. aureus (MuRSA). This study aimed to investigate and compare the prevalence of MRSA and MuRSA and antimicrobial susceptibility in S. aureus isolates from bovine mastitis milk in conventional and organic dairy farms. Milk samples were taken from mastitis-infected cattle in 6 conventional and 7 organic dairy farms from South Korea. According to the Food Codex, 163 suspected S. aureus colonies were isolated from the pooled milk samples from each farm. Further rapid coagulase test confirmed 11 out of 74 isolates from 4 conventional farms (CF1, CF2, CF3, CF4) while 17 out of 89 isolates from 3 organic farms (OF1, OF2, OF3) exhibited coagulase activity. Multiplex PCR amplification showed that the nuc gene marker for S. aureus was found in all coagulase-positive isolates from OF 1 and at least one isolate from CF1, CF2, CF3, and CF4. Conversely, only 2 isolates from CF2 contained mecA gene for MRSA while none had the mupA gene for MuRSA. Antimicrobial susceptibility testing revealed that conventional farm isolates were more resistant to antibiotics particularly, against ampicillin and tetracycline, and, in turn, could imply a potential to develop multidrug resistance if stringent measures to control antimicrobial use in dairy farms is not implemented properly.

The integration of Artificial Intelligence (AI) in dairy farm management through biometric facial recognition for cows is a significant stride in livestock management. This review critically evaluates the evolution, applications, and challenges of AI-driven biometric facial recognition in dairy farming. It emphasizes the role of this technology in enhancing individual monitoring of dairy cows, providing accurate health, behavior, and productivity tracking. Originally derived from human facial recognition systems, this approach utilizes distinctive bovine facial features for essential, non-invasive, real-time monitoring in large-scale operations. The progression of AI from elementary pattern recognition to advanced Convolutional Neural Networks (CNNs) and deep learning models marks a shift toward data-driven farming. This study addresses key challenges such as environmental variability, data collection hurdles, ethical concerns, and technological limitations. It also contrasts various AI models, spotlighting their unique strengths and practical utility in dairy farming scenarios. Despite these challenges, facial recognition technology holds promise for improving farm efficiency, animal welfare, and sustainable practices, highlighting the need for continuous research and development. The review concludes by advocating for future research focused on environmental adaptability, ethical AI application, cross-breed compatibility, and integration with other farming technologies. Ultimately, it underscores AI's transformative potential in modernizing dairy farming towards a more data-oriented, responsible agricultural future.

In this paper, we reviewed 42 studies on applied Life Cycle Analysis (LCA) in dairy products published since 2015. Such a systematic review of the literature contributes to addressing the gap regarding the usefulness of the LCA methodology and the need for additional research due to limited studies, data, variables, and the magnitude of environmental impact. We analyzed various environmental impacts generated in the environment, compared methods and results, and highlighted emerging issues affecting society, the economy, and the environment, warranting further investigation. Additionally, we statistically analyzed the effects that the choice of functional unit and allocation rule could have on the results. LCA is a key tool for assessing the environmental sustainability of the agri-food sector. This review aims to summarize case study research on LCA in dairy processing, disseminating potential environmental impacts and providing specific examples of research in dairy processing demonstrating how the representative end product is associated with environmental impacts on air, water, and land.

Background: The dairy industry heavily relies on fermentation processes driven in high proportion by Lactococcus lactis. The fermentation process can be perturbed or even stopped by bacteriophage activity leading to complete loss of fermentation batch or decreased quality product. Monitoring of the phage diversity and dynamics in the process allows to implement protective measures (e.g. starter rotation) in order to maintain unperturbed production.; Methods: Universal primers were used to amplify sequences of the 936, c2, and P335 Lactococcus phage types. The amplicons were sequences with Sanger method and obtained degenerate sequences were analyzed using simple bioinformatic pipeline in R environment.; Results: The most prevalent phage type is 936, followed by P335, whereas c2 type is less frequent.; Conclusions: Curd cheeses prepared on non-pasteurized milk based on native milk microbiota had higher diversity of phages distinct of these found in dairy plants. Sanger sequencing of heterogenous amplicons generated on metagenome DNA can be used to asses low-complexity microbiota diversity.

Cryptosporidiosis is a common illness in young cattle that causes high morbidity and some mortality. A common prophylactic treatment are halofuginone products but it seems likely disease could be reduced by other other pharmacological products or some management strategies. We undertook a systematic review and meta-analyses on key outcomes for treatment of calves before and after 5 days of age with any management strategy, any nutritional strategy or any non-halofuginone product. A systematic literature search was undertaken with data extracted for outcomes = oocyst shedding, diarrhea, mortality and weight gain. Experiments had to describe results for same age animals in contemporary arms. Control animals had to be observed concurrently in planned experiments (pre-post and case-control studies were not eligible). Both randomized and other clinically controlled trials were eligible. Results were subgrouped by study design and outcomes were described in detail where at least two articles described the same treatment strategy. 55 articles were found. Significantly lower incidence of oocyst shedding, diarrhea burden and mortality was reported in many experimental arms, especially when animals started treatment before 5 days old. Weight gain was not mostly affected by treatment, however, by three weeks of age. The evidence base is at least encouraging but insufficient about paromomycin, bumped kinase inhibitors and azithromycin treatment, especially for diarrhea and oocyst shedding, given late or early. Azithromycin is the most promising of these.

The present study is to address performance of the dairy supply chain and emphasizes the significance of reliability of the chain as a fundamental and critical attribute for fulfilling the safety requirements. In order to evaluate the performance of the dairy supply chain, the present study utilizes the reliability attribute, which is an essential and informative system performance indicator. The study considers not only the inputs and outputs but also internal activities and relationships between customers, manufacturers, and suppliers. To minimize calculations and resolve uncertainties and vagueness that may be experienced in the performance evaluation process, this study proposes the use of the Fuzzy Inference System (FIS) approach and evaluates the reliability at each level of the supply chain: supply, manufacturing, and distribution. Combining the reliability of different levels, the study finally calculates the reliability of the entire supply chain. The proposed methodology offers a practical approach for evaluating the reliability performance of a dairy supply chain and can be easily extended to other industries as well. To verify the proposed methodology, a real case in the Iranian dairy industry is chosen to be studied. Results indicate that the proposed methodology can effectively identify bottlenecks or weaknesses in the dairy supply chain and help develop effective strategies to address them. Analyzing factors influencing supply chain reliability can optimize operations, reduce costs, and improve the overall quality of dairy product quality delivered to consumers.

It was the aim of this study to examine whether the usage of the vaccine COXEVAC® (Ceva Santé Animale) could reduce the consumption of antibiotics in Q-fever-positive dairy farms. Additionally, the effects of other herd-level factors on the consumption of antibiotics were investigated. In this longitudinal cohort study, 36 farms with vaccination and 13 farms without vaccination participated. In all herds, Coxiella burnetii had been directly or indirectly diagnosed. To compare the treatment frequency of antibiotics between the vaccinated group and the non-vaccinated group, the consumption of antibiotics for each farm was collected using the veterinary documents about the application and delivery of antibiotics. To gather detailed information about herd data, nutrition, milking management, housing, and animal health, the farmers were interviewed with the help of a questionnaire. The results suggest that there might be an association between the vaccination against Q fever and a reduced consumption of antibiotics. Neither herd size nor milk yield level influenced the consumption of antibiotics in the study herds. Type of flooring and udder cluster disinfection while milking were associated with a lower and higher therapy frequency, respectively. Further studies are necessary to elucidate the cause-effect relationship between vaccination and the consumption of antibiotics.

Researchers have been exploring seaweed to reduce methane (CH4) emissions from livestock. This study aimed to investigate the potential of a red alga, Bonnemaisonia hamifera, as an alternative to mitigate CH4 emissions. B. hamifera, harvested from the West coast of Sweden, was used in an in vitro experiment using a fully automated gas production system. The experiment was a ran-domized complete block design consisting of a 48-h incubation that included a control (grass si-lage) and B. hamifera inclusions at 2.5%, 5.0% and 7.5% of grass silage OM mixed with buffered rumen fluid. Predicted in vivo CH4 production and total gas production were estimated by ap-plying a set of models to the gas production data and in vitro fermentation characteristics were evaluated. The results demonstrated that the inclusion of B. hamifera reduced (P = 0.01) predicted in vivo CH4 and total gas production, and total gas production linearly decreased (P = 0.03) with higher inclusion of B. hamifera. The molar proportion of propionate increased (P = 0.03) while isovalerate decreased (P = 0.04) with inclusion of B. hamifera. There was a tendency for increased (0.06 ≤ P ≤ 0.10) total volatile fatty acid production, as well as lower proportions of butyrate, isobutyrate, and 2-methylbutyrate. Chemical analyses revealed that B. hamifera had moderate concentrations of polyphenols. The iodine content was low and there was no detectable bromo-form, suggesting quality advantages over Asparagopsis taxiformis. Additionally, B. hamifera exhib-ited antioxidant activity comparable to the positive control Resveratrol. The findings of this study indicated that B. hamifera harvested from temperate waters in Sweden possesses capacity to mitigate CH4 in vitro.

Hemp (Cannabis sativa L.) is an annual plant belonging to the family of Cannabaceae with several varieties characterised by different fatty acid profiles, content in flavonoids, polyphenols and cannabinoid compounds. Hemp is mostly used in livestock nutrition as oil or as protein cake, not as inflorescences. The aim of this study was to evaluate the effect of dietary hemp inflorescences on milk yield and composition in grazing goats. Twenty goats (Camosciata delle Alpi), after kidding, were equally divided into two groups (G: Grazing and GH: grazing and hemp), homogeneous for milk yield in the previous lactation, parity and live weight. For three months, all goats were fed on a permanent pasture and received 700/head/day of concentrate (barley, oats and faba bean); diet of group GH was supplemented with 20 g/head/day of hemp inflorescences. Pasture DM intake was estimated according to previous research performed in the same area. In addition, goats’ body weight did not change along the trial meaning that their energy requirements were guaranteed. Individual milk yield was daily registered and samples collected every 20 days for chemical com-position (Milkoscan) and fatty acid profile (Gas Chromatography). The data were analysed by ANOVA (GLM procedure of SAS, 2000), for repeated measure. No significant differences were found for milk yield and chemical composition. Lauric acid (C12:0) was significantly higher in milk of group GH (4.83% vs 4.32%; P<0.01) as well as total conjugated linoleic acids (CLAs) (0.435% vs 0.417%; P<0.01).

We hypothesized that reticuloruminal temperature and pH, as well as cow activity, can be used as biomarkers for the early diagnosis of clinical mastitis in dairy cows. Therefore, we aimed to detect the relationship between reticuloruminal temperature and pH, cow activity, and clinical mastitis in dairy cows. We randomly selected cows with clinical mastitis and clinical healthy cows (HG) out of 600 milking cows. We recorded the following parameters during the experiment: reticulorumen tem-perature (RR temp.), reticulorumen pH (RR pH), and cow activity. We used smaXtec boluses (smaXtec animal care technology®, Graz, Austria). In this investigation, reticulorumen data ob-tained seven days before diagnosis were compared to HG data from the same time period. CM cows were observed on the same days as the healthy cows. The healthy group’s RR pH was 7.32% higher than that of cows with CM. Reticulorumen temperature was also 1.25% higher in the CM group than in the control group. The healthy group had a higher average value for walking activity and was 17.37% higher than the CM group. The data of reticulorumen pH changes during 24 h showed that during the day, the pH changed from 5.53 to 5.83 in the CM group. By contrast, pH changed from 6.05 to 6.31 in the control group. The lowest reticulorumen pH in the CM group was detected on the third day before diagnosis. It was 15.76% lower than the highest reticulorumen pH detected on the sixth day before diagnosis. The lowest reticulorumen pH in CM cows was detected at 0 and 1 days before diagnosis. It was 1.45% lower than the highest reticulorumen pH detected on the second day before diagnosis. The lowest walking activity in the CM group was detected 0 days before diagnosis, 50.60% lower than on the fifth day before diagnosis. The lowest walking activity was detected 0 days before diagnosis, 39.57% lower than on the seventh day before diagnosis. In this study, we found that reticuloruminal temperature, reticuloruminal pH, and cow ac-tivity could be used as biomarkers for the early diagnosis of clinical mastitis in dairy cows.

The aim of the current study was to determine the effectiveness of two surgical techniques regarding the cow respiratory rates, heart rates, and rumination time using two sensors: an experimental device that was created by the Institute of Biomedical Engineering of Kaunas University of Technology (Lithuania) and the “SCR” (SCR Engineers Ltd., Netanya, Israel) system. The cows were divided into two groups: PA1—cows treated by percutaneous abomasopexy (n = 10), and RSO2—cows treated by right side omentopexy (n = 8). For the control group (KH), according to the principle of analogues (number of lactations, breed, and days in milk), we selected clinically healthy cows (n = 9). After the surgical treatment for the abomasal displacement, the experimental device was applied for the recording of the heart and breathing rates; 12 hour tracking of the rumination time (RT) was implemented using the system ''SCR''; and the body temperature was measured. After 12 hours, the blood was taken for biochemical and morphological tests. The experimental device recorded 12 hours of the respiratory rate (RR) and heart beat rate (HBR) information. We determined the concentrations of the blood serum beta-hydroxybutyrate (BHB), calcium (Ca), phosphorus (Phos), magnesium (Mg), and iron (Fe), as well as the activities of aspartarte aminotransferase (AST) and gamma-glutamyl transferase (GGT). According to searches for relationships between the traditional blood biochemical and morphological parameters, and the parameters measured by the experimental device, the more efficient abomasal displacement surgical method was the right side omentopexy. With the sensors, we found, after right side omentopexy, a 5.19 beats/min lower (1.10-times) average value of the respiratory rate, 1.13-times higher level of the heart rate, a 0.15 oC higher temperature, and a 3.29-times lower rumination time compared to the clinical healthy cows. Further research with larger numbers of animals and longer experimental periods are needed prior to practical applications.

The study was conducted in the milking parlor of a cattle farm with a capacity of 400 cows of the Holstein-Friesian breed. The milking installation was a double 8 "Herringbone" type without windows, and the roof was constructed of glass. The reporting of temperature, air humidity and temperature-humidity index (THI) was performed three times during each milking (at the start, in the middle and at the end of milking) with measurements repeated during the morning, noon and evening milking. The highest mean and maximum daytime air temperature values were recorded in summer and spring. Although the average values for the spring season were lower than those for summer (by about 4 ⁰ C), the maximum values reached were equally high – 31.4 ⁰ C. In terms of relative air humidity, the highest mean values were reported for the winter sea-son – 82.39%. For the other seasons, the relative humidity values were on average high and close in value - from 62.51 to 67.46%. In THI, the highest average daily and maximum values were re-ported in the summer months - 73.41 and 80, respectively.

Heat stress (HS) is a strong stress factor that significantly affects the metabolism of dairy cows. The aim of the present study was to investigate how HS affects some biochemical indicators in the blood of dairy cows reared in Bulgaria. The study was conducted on a cattle farm with a capacity of 500 Holstein cows, loose housed in a free stall barn shed type. The research was carried out in three seasons - summer, autumn and winter, and a total of 77 samples were taken from the cows of the farm - 30 blood samples for each season. The cows included in the study were from 30 to 60 days in milk (DIM). Temperature and humidity data were taken from the closest to the farm weather station. Based on the conducted research, it was found that the HS reported during the summer season had a significant impact on the following blood parameters: glucose, urea, total protein and cortisol. In summer, blood glucose values were low and ranged from 1.32 to 1.63 mmol/l in cows on different lactations. Probably because of these low glucose levels, high levels of total protein, ranging from 76.92 to 86.10 g/l, were reported in cows from the first to third lactation. This protein was used by cows to provide energy from non-carbohydrate sources and as a residual product, higher blood urea levels were reported in summer, ranging from 4.79 to 5.23 mmol/l. As proof of the stressful influence of heat on the metabolism of the examined cows, the cortisol values in the summer were in the upper reference norms - 38.44 nmol/l or higher and reached 59.09 nmol/l.

Monensin and essential oils have antimicrobial properties that may impact silage fermentation. The present study investigates the effects of monensin and essential oils as additives in the ensiling of total mixed ration (TMR). In the first assay, TMR was tested with sheep in growth (65% dry matter - DM) using the following treatments: control (no additive), MON35 (35 mg monensin/kg DM), MON45 (45 mg monensin/kg DM), ELO300 (300 mg essential oil/kg DM), and ELO600 (600 mg essential oil/kg DM). In the second assay, the same treatments were used in TMR for lactating cows under two moisture conditions (30% and 40% DM). The parameters assessed included fermentative losses, short-chain fatty acid profile, aerobic stability, chemical-bromatological composition, and in vitro DM digestibility of the silages. In the first assay, the treatments with ELO had the lowest pH values and the highest lactic acid concentrations, with treatment ELO600 leading to the highest aerobic stability (297.88 h). Only the starch contents of the ELO treatments were lower than the others. In the second assay, the silages with the highest moisture contents and ELO600 exhibited the lowest values of DM recovery, lactic acid, and pH. The highest lactic acid:acetic acid ratios were observed in the silages with the most moisture added with MON35 and MON45. The use of MON and ELO increased aerobic stability, with the highest values observed for ELO600 and MON35. The treatments with MON and ELO resulted in silages with the lowest fiber contents and highest ether extract and starch contents when compared with control. Thus, MON and essential oils improve fermentative quality but ELO should be used in lower doses in humid silages to avoid negative fermentation impacts.

The species Lactococcus lactis is the bacterium extensively used in dairy industry. This bacterium is generally recognized as safe which was added to the European Food Safety Authority Qualified Presumption of Safety list. The major functions of this species in dairy fermentation are production of lactic acid from lactose, citric acid fermentation and hydrolysis of casein. But the representatives of this species producing bacteriocin substances can exert an inhibitory effect against spoilage bacteria. The aim of this study was to test three lactococcal strains isolated from raw goat milk for their postbiotic activity and to test their stability in goat milk yogurts in encapsulated form for further application. To reach the aims, validated methods were used. Three postbiotic active Lactococcus lactis subsp. lactis strains (identified by Blastn 16S rRNA analysis) from raw goat milk produced bacteriocin substances which in their concentrated form inhibited the growth of indicator enterococci and staphylococci up to 97.8 % with inhibitory activity up to 800 AU/mL. The encapsulated (freeze dried) lactococci fortified goat milk yogurts showed sufficient stability and survival in yogurts. The highest amount was reached using the strain MK2/8 (8.1 ± 0.0 cfu/g log 10) not influencing yogurt pH.

In this study, we used Chlorella vulgaris (C.vulgaris) grown in the dairy wastewater as biomass to produce a third-generation biodiesel. The lipids were extracted from the biomass and the biodiesel obtained by transesterification. Following ASTM and EN guidelines, the biodiesel was assessed along with its density, viscosity, heating value, and flash point. Gas chromatography was used to evaluate the concentration, composition, and type of fatty acid methyl esters. The results showed a biodiesel yield of 93% with a composition of 33% saturated, 28% monounsaturated, and 37% polyunsaturated. Engine testing was carried out to monitor the levels of CO, CO2, NOx, and smoke emissions as well as to assess the biodiesel performance. Results demonstrate the possibility of producing third-generation biodiesel from C. Vulgaris cultivated in dairy wastewater. The proposed process valorize the dairy wastewater and might represent an alter-native approach for biodiesel production and the disposal of the wastewater.

This 16-month study aimed to evaluate the extended effects of administering direct-fed microbials (DFM) on milk yield and components in 150 dairy cows. The cows were randomly divided into two groups: control (n=75) and DFM (n=75) based on parity and days in milk. Throughout the study, the two groups of cows were housed separately in a free stall yard, and each group had their own feeding area. The DFM group received 10 ml/cow of the Lacticaseibacillus- and Lentilactobacillus-based DFM via top dressing of the feed during lactation and drying off. Milk yield and liveweight were recorded daily. Milk samples were collected every two months for milk components analysis. Both groups produced less milk in the second production season due to adverse weather conditions. DFM cows gained more liveweight across the study (19.40 kg, 95% CI 0.44; 38.30) compared to controls. In the second season, DFM cows lost weight at a slower rate (-6.06, 95% CI -10.49; -1.61) during the postpartum period and produced more milk (0.39 L/d 95% CI 0.10; 0.89). Over a full lactation, DFM cows yielded at least 258L (95% CI 252L; 265L) more milk than controls. No significant differences were found in fat yield, protein yield, or somatic cell counts. The study suggests that prolonged DFM administration positively impacted milk production, but further research is needed to understand the underlying mechanism.

The objectives of this research were to determine 1) the energy contents of broken rice in dairy cows by animal calorimetry and 2) the effects of various levels of broken rice in diets on dairy cow performance. Four multiparous Holstein-Friesian crossbred cows at 70 ± 31 (mean ± SD) days in milk were assigned according to a 4 × 4 Latin square design with four periods. The four treatments included a diet substitution with broken rice on a 0, 12, 24, and 36% dry matter basis in the basal ration. Indirect calorimetry with a ventilated head box respiration system was used to determine energy metabolism. The substitution of broken rice in the diet did not affect dry matter intake, milk yield, milk composition, feed efficiency or energy balance (p > 0.05). Increasing broken rice substitution in the diet resulted in a linear increase in enteric methane energy losses and digestibility of dry matter, organic matter, and fiber (p < 0.05), whereas the digestibility of crude protein and ether extract decreased (p < 0.05). The metabolizable energy requirement for maintenance was 504 kJ/kg metabolic body weight, and the efficiency of metabolizable energy used for lactation was 0.76. The estimated net energy value of broken rice for lactation was 8.68 MJ/kg. Our results indicated that increasing the proportion of broken rice in the diet up to 36% had no adverse effect on feed intake and production performance in dairy cows.

“Minas Frescal” cheese is a high moisture product, subject to the proliferation of several microorganisms. Essential oils are natural antimicrobial alternatives that can increase the quality of dairy products. This study aimed to analyze the antimicrobial action of oregano (Origanum vulgare) and rosemary (Rosmarinus officinalis) essential oils against Escherichia coli and Staphylococcus aureus. An antimicrobial test by diffusion and microdilution was performed to calculate the MIC (Minimum Inhibitory Concentration) and MBC (Minimum Bactericidal Concentration). The behavior of E. coli in “Minas Frescal” cheese added with oregano oil was evaluated. The MIC of oregano oil was 0.25% against E. coli and 1% against S. aureus. For rosemary essential oil, the MIC was 8% of against E. coli. There was no activity of rosemary oil against S. aureus. The MBC observed for oregano essential oil was 1% and 0.25% respectively for S. aureus and E. coli. Bacterial analysis during cheese storage with E. coli indicated inhibition of microorganisms by oregano essential oil at a concentration of 0.25%. No alterations were observed regards to physical-chemical attributes. The use of essential oil as an antimicrobial agent has potential for industrial use, and type of microorganism, oil and sensory reflexes in the product must be observed.

Intramammary infections (mastitis) of dairy cows, along with other periparturient diseases, have become problematic within the dairy industry as they lead to loss of milk production. The main objective of this study was to determine whether elevated somatic cell counts (SCC) in cows prior to drying off are related to the incidence of other periparturient diseases. Additionally, we de-termined whether milk composition and milk yield are affected by a high SCC prior to drying off. Somatic cell counts of milk samples were determined prior to dry off (n = 140) and were used to classify cows in the study as high (>200,000 cells/mL) or low (<200,000 cells/mL) SCC. The com-position of milk was analyzed before drying off and at 1 and 2 weeks after calving. The results showed that an elevated SCC before drying off was related to the incidence of ketosis. Cows with a high SCC at drying off also showed an increased likelihood of retained placenta, metritis, and lameness postpartum; however, it was not statistically significant. Milk lactose was lower in cows with high SCC, while protein content was lower after parturition. Milk production was lower for cows with pre-drying elevated SCC, particularly for cows with retained placenta, keto-sis, and mastitis. In conclusion, cows with pre-drying elevated SCC were more likely to develop disease after parturition and produce less milk and with lower lactose and protein content.

Mastitis is an inflammation of the mammary gland initiated by pathogenic bacteria. In fact, mastitis is the second most important reason for the culling of cows from dairy herds, after infertility. In this review we focus on various forms of mastitis, including subclinical and clinical mastitis. We also stress the importance of the dry-off period as an important time when pathogenic bacteria might start their insult to the mammary gland. An important part of the review is the negative effects of mastitis on milk production and composition, as well as economic consequences for dairy farms. The two most important groups of bacteria that are involved in infection of the udder, Gram-negative and Gram-positive bacteria, are also discussed. Although all cows have both innate and adaptive immunity against most pathogens, some are more susceptible to the disease than others. That’s why we summarize the most important components of innate and adaptive immunity so that the reader understands the specific immune responses of the udder to pathogenic bacteria. One of the most important sections of this review is interrelationship of mastitis with other diseases, especially retained placenta, metritis and endometritis, ketosis, and laminitis. Is mastitis the cause or the consequence of this disease? Finally, the review concludes with treatment and preventive approaches to mastitis.

The present study explored the expression of CD62L and CD44 by bovine peripheral blood mononuclear cells (PBMCs) and WC1.1+ γδ T cells under Staphylococcus aureus cell culture stimu-lation. In this study, peripheral blood cells were isolated from ten dairy cows and cocultured with S. aureus. Afterward, the γδ T cell subpopulation and the expression of CD44, CD62L and prolif-erative (Ki67+) cells were evaluated by flow cytometry. Our results showed that the percentages of proliferative PBMCs and WC1.1+ γδ T cells were higher when stimulated with S. aureus. The percentage of CD44+ cells increased in S. aureus-stimulated cultured PMBCs and WC1.1+ γδ T cells, as did the CD44 geometric mean fluorescence intensity (GMFI). The rate of CD62L cells did not differ among groups for either PBMCs or WC1.1+ γδ T cells. A higher GMFI of CD62L in prolif-erative PBMCs than nonproliferative PBMCs upon stimulation with S. aureus was detected, whereas no impact on the GMFI of CD62L was observed in WC1.1+ cells. In summary, our study identified that S. aureus was associated with high expression of CD44 in overall PBMCs and WC1.1+ γδ T cells, and they could generate memory WC1.1+ γδ T cells, preferably central memory cells.

Cryptosporidium is comprised an apicomplexan parasitic protist, which infects a wide range of hosts, causing cryptosporidiosis. In cattle farms, the incidence of cryptosporidiosis results in high mortality in calves leading to considerable economic loss in the livestock industry. Infected animals may also act as a major reservoir of Cryptosporidium spp., in particular C. parvum, the most common cause of cryptosporidiosis in calves. This poses a significant risk to other farms via breeding centres, to trading of livestock and to human health. This study, funded by the Interreg-2-seas programme, is a part of a global project aimed at strategies to tackle cryptosporidiosis. To reach this target, it was essential to determine whether prevalence was dependent on the studied countries or if the issue was borderless. Indeed, C. parvum occurrence was assessed across dairy farms in certain regions of Belgium, France and the Netherlands. At the same time, the animal-to-animal transmission of the circulating C. parvum subtypes was studied. To accomplish this, 1084 faecal samples, corresponding to 57 dairy-farms from all three countries, were analysed. Well-established protocols amplifying the 18S rDNA and gp60 genes fragments, followed by DNA sequencing, were used for the detection and subtyping C. parvum; the DNA sequences obtained were further characterised using a combination of bioinformatics and phylogenetics methods. Our results show 25.7%, 24.9% and 20.8% prevalence of Cryptosporidium spp. in Belgium, France and the Netherlands respectively. Overall, 93% of the farms were Cryptosporidium positive. The gp60 subtyping demonstrated a significant number of the C. parvum positives belonged to the IIa allelic family, which has been also detected in humans. Consequently, this study highlights how widespread is C. parvum in dairy farms and endorses cattle as a major carrier of zoonotic C. parvum subtypes, which subsequently pose a significant threat to human health.

The objective of this research was to examine apoptosis status in the laminar tissue of dairy cows with OF-induced laminitis. A total of 12 clinically healthy non-pregnant Holstein cows were randomly allocated into 2 groups of 6 cows each: the control group and the oligofructose treated group (OF group), respectively. At 0 h, 17 g/kg BW of oligofructose dissolved in 20 mL/kg BW of warm deionized water were administered to the dairy cows of OF group via a stomach tube, and dairy cows in control group were received with the said volume of deionized water by the same method. At -72 h before and 0 h, 6 h, 12 h, 18 h, 24 h, 36 h, 48 h, 60 h, and 72 h after OF overload, clinical examination in both groups were performed. After 72 h, laminar tissues of dairy cows in both groups were taken to determine genes and proteins. We observed that the gene expression of Bax (P&lt;0.01), and P53 (P&lt;0.05) significantly up-regulated, whereas that of Bcl2 significantly down-regulated (P&lt;0.01) in the afflicted cows compared to the control cows. The protein expression of Bax (P&lt;0.01), Bif1 (P&lt;0.01), caspase3 (P&lt;0.01), caspase8 (P&lt;0.05), and caspase9/9p (P&lt;0.05) significantly up-regulated, while that of Bcl2 significantly downregulated (P&lt;0.01) in the afflicted cows compared to the control cows. Moreover, the distribution of Bax (P&lt;0.01) and P53 (P&lt;0.01) proteins in laminar tissue significantly up-regulated (P&lt;0.01) in the sick cows compared with the control cows. These results suggested that unregulated genes and proteins status of apoptosis-associated indicators may be a typical cause for epidermal attachment failure which serves a key role in the pathogenesis of dairy cow laminitis. Nevertheless, further large-scale gene and protein-level studies are required to fully explain the pathogenesis of laminitis in dairy cows.

The aim of this study was to quantify methane (CH4) emissions from dairy cows during milking by maximum amplitude of eructation peaks and compare estimates with other metrics for CH4 emissions. Spot measurements of CH4 and carbon dioxide (CO2) emissions were recorded for at least 7 days of continuous sampling using an infrared gas analyser in a robotic milking station whilst cows were milked. Concentrations of CH4 and CO2 were measured at 1 second intervals. A total of 105,701 CH4 spot measurements were obtained from 2,206 dairy cows on 18 farms. Methane emissions per individual cow were quantified by maximum amplitude of eructation peaks, average area under eructation peaks (integral of eructation), average concentration during milking and ratio of CH4 to CO2 concentration. There was a high correlation (r = 0.71) between CH4 emissions quantified by maximum amplitude and integral of eructation peaks. The correlation between maximum amplitude and average CH4 concentration was low, and there was no correlation between maximum amplitude and ratio of CH4 to CO2. As both approaches identify and extract eructation peaks to quantify enteric CH4 emissions, the substantial association between maximum amplitude and eructation integral was expected.

Food safety in dairy shops has gained increasing attention. Consequently, this study aims to evaluate dairy handlers' knowledge of food safety practices, assess compliance with food safety codes regarding facility maintenance and personal hygiene, and understand retail dairy shops' capacity to implement food safety standards. This research involved surveys and interviews with 110 dairy retail workers to gauge their grasp of food safety principles, their recognition of its importance, and the obstacles they encounter in implementing proper food safety measures. Among the participants, 93% were males under 35 years old, with experience ranging from 1 to 8 years. The study revealed that while over 83% of participants were familiar with standard procedures ensuring dairy product safety, only 37% understood “HACCP” in relation to food safety. Additionally, 42% believed that freezing food at -18°C eliminates food bacteria, and 56% thought food contamination could be identified by taste, indicating misconceptions among respondents. Results showed that 90% of survey participants had a strong awareness of food safety, with 98% emphasizing the importance of regular inspection of production areas for cleanliness to ensure a safe dairy production environment. However, less than 45% had received formal training on dairy-specific food safety practices, and only 53.6% had a documented system for correctly labeling and providing production dates for dairy products. These findings have significant implications for public health and food safety policies in Jordan. Furthermore, the study provides valuable insights to enhance food safety practices among dairy retail vendors.

Camel milk occupies a pivotal and essential position in the dietary customs of individuals residing in semi-arid and arid areas. Historically, the promotion and distribution of camel milk have been negligible, primarily due to the absence of processing facilities in areas where camels are raised. Consequently, the consumption of untreated camel milk has been predominantly limited to nomadic households. However, owing to its exceptional medicinal properties and health-enhancing effects, a substantial surge in the global demand for camel milk and its derivatives has been observed over the past two decades. This growing demand has prompted the dairy sector to introduce a diverse range of camel milk products, which are distinguished by their enhanced nutritional and functional properties. In contrast to products derived from bovine milk, the current market offers only a limited selection of food items sourced from camel milk. Recent advances in food processing technologies have enabled the production of an array of both dairy and non-dairy products derived from camel milk. This includes a variety of items such as powdered milk, cheese, yogurt, ice cream. Moreover, in certain regions, camel milk is incorporated into customary cuisine, serving as a key ingredient in local culinary practices like fermented milk, camel milk tea, or as a fundamental component in various meals. This review underscores the possibility of transforming camel milk into a range of dairy products by addressing its intrinsic functional constraints. This objective can be realized by adjusting the processing parameters and modifying its chemical composition through enrichment techniques. Furthermore, further research avenues may focus on enhancing product quality and exploring innovative processing techniques.

A new trend in cow's milk has emerged in the market called type A1 and A2 milk. These products have piqued the interest of both consumers and researchers. Recent studies suggest that A2 milk may have potential health benefits, which is why researchers are investigating this product further. It is interesting to note that the A1 and A2 milk types have area-specific characteristics compared to breed-specific characteristics. Extensive research has focused on milk derivatives obtained from cow’s milk, primarily through in vitro and animal studies. However, few clinical studies have been conducted in humans, and the results have been unsatisfactory. New molecular techniques for identifying A1 and A2 milk may help researchers to develop new studies that can clarify certain controversies surrounding A1 milk. It is essential to exercise extreme caution when interpreting the updated literature. It has the potential to spread panic worldwide and have negative economic implications. Therefore, this study aims to investigate the new aspects of A1 and A2 milk in different research areas and clarify some aspects regarding these two types of milk.

Klebsiella pneumoniae is one of the most common causes of clinical and asymptomatic mastitis in dairy cattle, also in milk and dairy products affecting its quality. Mastitis caused by K. pneumoniae is even more serious due to its poor response to antibiotic therapy. This study was conducted to detect and identify the presence of K. pneumoniae in milk and dairy products. A total of 234 samples were randomly collected from various locations in Libya. Samples were examined for the presence of K. pneumoniae by conventional cultural techniques that included cultivation in violet red bile agar plus 4-methylumbelliferyl-ß-D-glucuronide (VRBA + MUG) broth, and CHROM agar followed by identification by PCR and partial sequencing of 16S rRNA. Out of the 234 samples of milk and dairy products collected, 16 (6.8%) of the isolates revealed mucoid colonies on agar media phenotypically suggested to be K. pneumoniae. The isolates identification was confirmed by molecular techniques (16S rRNA). Among examined samples, K. pneumoniae was recovered from she camel’s milk, raw cow’s milk, raw fermented milk, Maasora cheese, Ricotta cheese, soft cheese, full cream milk powder, milk powder infant formula, cereal baby food and growing up formula. From the 16 K. pneumoniae isolates; antibiotic susceptibility testing was performed on 12 isolates, the results showed that K. pneumoniae isolates were resistant to more than 8 antibiotics, interestingly, two isolates revealed MBL production. This study emphasized the relationship between K. pneumoniae and raw milk, cheese, milk powder and infant milk retailed in Libya, which is considered as a risk for human health as many of these products did not comply with microbiological criteria of international and/or Libyan standards. The necessary precautions have to be taken to carry out effective sanitary practices during the production in dairy plants, handling and distribution in the markets particularly at local small manufacture scale.

In the dairy cattle sector, the evaluation of the effects induced by heat stress is still one of the most impactful and investigated aspects as it is strongly connected to both sustainability of the production and animal welfare. On the other hand, more recently, the possibility of collecting large dataset made available by the increasing technology diffusion is paving the way for the application of advanced numerical techniques based on machine learning or big data approaches. In this scenario driven by rapid change there could be the risk of dispersing the relevant information represented by the physiological animal component, which should maintain the central role in the development of numerical models and tools. In the light of this, the present literature review aims to consolidate and synthesize existing research on the physiological consequences of heat stress in dairy cattle. The present review provides, in a single document, an overview as complete as possible of the heat stress-induced responses in dairy cattle with the intent of filling the existing research gap for extracting the veterinary knowledge present in the literature and make it available to those who are developing numerical models and tools.

Laminitis is considered as an important underlying cause of lameness diseases, yet its specific pathogenesis remains unclear. Autophagy is an intracellular degradation mechanism that controls recycling of membrane-associated integrin and may aid in the progression of metabolic diseases. But the significance of autophagy for initiation and development of laminitis is unknown. The present study aimed to explore autophagy activity in the laminar tissue of dairy cows with oligofructose-induced laminitis. Twelve healthy non-pregnant Holstein cows were randomly divided to 2 groups of 6 cows each, entitled the control group and the oligofructose overload group (OF group), respectively. At 0 h, cows in OF group were gavaged with oligofructose (17 g/kg BW) dissolved in warm deionized water (20 mL/kg BW) through oral rumen tube, and dairy cows in control group were gavaged with the same volume of deionized water by the same method. At -72 h before perfusion as well as 0 h, 6 h, 12 h, 18 h, 24 h, 36 h, 48 h, 60 h, and 72 h after perfusion, clinical evaluations in both groups were monitored. After 72 h, laminar tissues of dairy cows in both groups were collected to examine genes and proteins. We found the significantly higher (P<0.05) levels of mRNA ATG5, ATG12, and Becilin1, but P62 and mTOR were extensively lower (P<0.01) in the laminar tissue of the OF group than the control group. Protein expression level of Becilin-1 was higher significantly (P<0.05), and the protein expression level of LC3II was lower significantly (P<0.05) in OF group than control group. However, the expression of P62 reduced (P>0.05) non-significantly in OF group than control group. The distribution of Beclin1 protein in laminar tissue increased (P<0.01) significantly, and distribution of P62 protein decreased (P<0.05) significantly in OF group than control group. In conclusion, laminar tissue damage occurred during the onset of laminitis, which promoted the occurrence of autophagy, and confirmed that autophagy was involved in the regulation and pathogenesis of laminitis in dairy cows.

This study was designed to assess the suppressive effects of various anaerobically digested slurries (ADSs), and the microorganisms inhabiting them, against Fusarium wilt in spinach. We used five different ADSs from a range of source materials (dairy cow manure, sewage sludge, food garbage, pig manure, night soil sludge), combined in different proportions. All five raw ADSs suppressed the growth of Fusarium oxysporum f. sp. spinaciae (Fos) on agar plates using a co-culture test. In contrast, filtrate ADSs did not suppress the growth of Fos. In total, 32 bacterial strains were isolated from five ADSs, and 8 isolates showed antagonistic activities against Fos. Based on 16S rDNA sequences, the strain AD-3 isolated from ADS from dairy cow manure belonged to Bacillus velezensis. Genome analysis revealed that AD-3 had two kinds of genes related to the production of the non-ribosomal lipopeptides, fengycin/plipastatin (pps genes), and surfactin (srf genes). In pot assays, inoculation of AD-3 (1.0 × 106 CFU·g−1 dry soil) into Fos-infected soil (1.0 × 105 bud-cells·g−1 dry soil) significantly reduced the severity of Fusarium wilt disease at 28 d after seedling. The percentage reductions in disease severity in two replicates were 64.3% and 44.3%, respectively. Thus, bacterial strain AD-3 could be applied to reduce Fusarium wilt in spinach.

The present study was conducted to estimate the exposure and risk characterization of the children population of Serbia to Aflatoxin M1 (AFM1) from milk and milk-based food. A total of 3404 samples comprising of milk and different milk-based food samples were collected from various regions of Serbia from 2017 to 2019. Evaluation of the AFM1 exposure was carried out using the deterministic method, whereas risk characterization was evaluated with the calculation of the Margin of Exposure (MOE) and the risk of Hepatocellular Carcinoma (HCC). Detection rates for AFM1 in milk and milk-based food samples ranged between 2% and 79%, with the highest incidence (79%) and mean level (22.34  0,018 ng kg-1) of AFM1 was detected in pasteurized and UHT milk. According to the three consumption estimates, the values of EDI were higher for toddlers as compared with children. Children aged 1–3 years had the highest risk of exposure to AFM1 in milk, with an estimated daily intake of 0.164 and 0.193 ng kg-1 bw day-1 using a lower bound (LB) and the upper bound (UB) exposure scenarios, respectively. Such difference could result from the higher consumption versus weight. Based on the EDI found in this study, the risk of AFM1 due to consumption of milk and milk-based food was low since MOE values obtained were 10000. In addition, the risk of HCC cases/year/105 individuals of different age groups showed that the value of HCC using potency estimates of 0.0017 (mean) was maximum (0.00034) in the age group 1–3 years which indicates no health risk for the evaluated groups. The present study revealed the importance of controlling and preventing AFM1 contamination in milk through continuous monitoring and regular inspection to reduce the risk of AFM1 exposure, especially in children.

This work examines dairy and sheep farmer attitudes toward antimicrobial use (AMU) in New Zealand. There is increasing public demand on livestock producers to reduce AMU in livestock. The demand stems from concerns about potential antimicrobial resistance (AMR) that could originate from food animals. There is limited practical data on farmer knowledge of AMU. An electronic survey was sent to dairy (n= 378) and sheep farmers (n= 551). Seventy-six dairy farmers (20%, n=76/378) returned the survey. Dairy farmers (69%) showed low levels of concern about antimicrobial resistance and awareness of the need to reduce AMU. Additionally, 76% of dairy farmers didn’t think it was possible to reduce AMU. Thirty-nine sheep farmers (7%, 39/551) returned the survey. 76% of sheep farmers were supportive of restricted use of AMU. The dairy and sheep farmers sourced most of the advice from veterinarians (&gt;90%), the livestock industry (&gt;80%) and their colleagues (&gt;70%). This study shows that farmers showed varied concerns about AMR and AMU. Moreover, sheep farmers were more amenable to increased restriction on AMU than dairy farmers. This study suggests that knowledge gaps in farmers may best be filled by veterinarian input.

The prevalence of type-2 diabetes mellitus (T2D) is increasing worldwide and there are no long-term preventive strategies to stop this growth. Emerging research shows that perturbations in the gut microbiome significantly contribute to the development of T2D, while microbiome modulators may be beneficial for T2D prevention. However, microbiome modulators that are effective, safe, affordable, and able to be integrated daily in the diet are not yet available. Based on our previous pro- and prebiotic studies, we developed a novel synbiotic yogurt comprised of human-origin probiotics and plant-based prebiotics and investigated its impact on diet- and streptozotocin-induced T2D in mice. We compared the effects of our synbiotic yogurt to those of a commercially-available yogurt (control yogurt). Interestingly, we found that feeding of this synbiotic yogurt significantly reduced the development of hyperglycemia (diabetes) in response to high-fat diet feeding and streptozotocin compared to milk-fed controls. Surprisingly, the control yogurt exacerbated diabetes progression. Synbiotic yogurt beneficially modulated the composition of gut microbiota compared to milk; conversely, the control yogurt negatively modulated the gut microbiota by significantly increasing the abundance of detrimental bacteria like Proteobacteria and Enterobacteriaceae. In addition, the synbiotic yogurt protected intact pancreatic islet morphology compared to the milk control, while the commercial yogurt demonstrated worse effects on pancreatic physiology. These results suggest that our newly developed synbiotic yogurt protects against diabetes in mice and can be used as a modality to prevent diabetes progression.

In the present study, we aimed to determine the antimicrobial resistance and genetic structure of a population of S. aureus recovered from transient and persistent intramammary infections and nares/muzzles. We investigated the antimicrobial resistance of 189 S. aureus strains using a broad antimicrobial susceptibility profile. Furthermore, 107 S. aureus isolates were strain-typed using staphylococcal protein-A (spa) typing. Here, a great proportion of strains exhibited multidrug resistance to antimicrobials, including resistance to critically important antimicrobials, although no methicillin-resistant S. aureus strains were found. Our study did not strengthen the idea that extramammary niches (i.e., nares/muzzles) are an important source for S. aureus. A discrepancy in the antimicrobial resistance between S. aureus strains isolated from nasal/muzzles and milk samples was observed. Furthermore, S. aureus isolates from transient and persistent IMIs did not differ by spa typing, suggesting that the persistence of bovine IMIs was determined by cow factors. Thus, the high level of multidrug-resistant S. aureus found in the two herds studied together with the predominance of a well udder-adapted S. aureus strain may contribute to the history of the high prevalence of mastitis caused by S. aureus, leading to great animal and public health concerns.

Milk and dairy foods are naturally rich sources of a wide range of nutrients, and when consumed according to recommended intakes contribute essential nutrients across all stages of the life cycle. Since then, seminal studies recommendations with respect to intake of saturated fat have been consistent and clear; limit total fat intake to 30% or less total dietary energy, with a specific recommendation for intake of saturated fat to less than 10% of total dietary energy. However, recent work has re-opened the debate on intake of saturated fat in particular, with suggestions that recommended intakes be considered not at a total fat intake within the diet, but at a food specific level. A large body of evidence exists examining the impact of dairy consumption on markers of metabolic health, both at a total dairy intake and also at a food level, with mixed findings to date, but suggests that the impact of saturated fat intake on health differs both across food groups and even between foods within the same good group such as dairy. Milk and dairy foods contain a range of nutrients and bioactive components in different levels, housed within very different food structures. The interaction of the overall food structure and the nutrients describes the concept of the ‘food matrix effect’ which has been well documented for dairy foods. Studies show that nutrients from different dairy food sources can have different effects on health and for this reason, they should be considered individually rather than grouped as a single food category in epidemiological research. This review examines the current evidence from randomised controlled trials and meta-analyses, with respect to dairy, milk, yoghurt and cheese on aspects of metabolic health, and summarises some of the potential mechanisms for these findings.

Chronic heat stress (HS), aggravated by global warming, reduces the production efficiency of the buffalo dairy industry. Here, we conducted a proteomic analysis to investigate the adaptation strategies used by buffalo in response to heat stress. Seventeen differentially abundant proteins with known functions were detected using label-free quantification (LFQ), and five of these differentially expressed proteins were validated with parallel reaction monitoring (PRM). These five proteins were associated with various aspects of heat stress, including decreased heat production, increased blood oxygen delivery, and enhanced natural disease resistance. Lipase (LPL), glutathione peroxidase 3 (GPX3), cathelicidin-2 (CATHL2, LL-37), ceruloplasmin (CP), and hemoglobin subunit alpha 1 (HBA1) were shown to play cooperative roles in the tolerance of chronic HS in dairy buffalo. We found that high levels of HBA1 increased blood oxygen transport capacity. Our results increase our understanding of the adaptation of dairy buffalo to chronic heat stress.

Staphylococcus aureus (S. aureus) is recognized worldwide as one of the major agents of dairy cow intra-mammary infections. This microorganism can express a wide spectrum of pathogenic factors used to attach, colonize, invade and infect the host. The present study evaluated 120 isolates from eight different countries that were genotyped by RS-PCR and investigated for 26 different virulence factors to increase the knowledge on the circulating genetic lineages among the cow population with mastitis. New genotypes were observed for South African strains while for all the other countries new variants of existing genotypes were detected. For each country, a specific genotypic pattern was found. Among the virulence factors, fmtB, cna, clfA and leucocidins genes were the most frequent. The sea and sei genes were present in seven out of eight countries; seh showed high frequency in South American countries (Brazil, Colombia, Argentina), while sel was harboured especially in one Mediterranean country (Tunisia). The etb, seb and see genes were not detected in any of the isolates, while only two isolates were MRSA (Germany and Italy) confirming the low diffusion of methicillin resistance microorganism among bovine mastitis isolates. This work demonstrated the wide variety of S. aureus genotypes found in dairy cattle worldwide. This condition suggests that considering the region of interest might help to formulate strategies for reducing the infection spreading.

This study aimed to evaluate the fatty acid (FAs) profile in milk from commercial farms with varying pasture levels in the diet during spring and fall, and to investigate the physical and chemical properties of butter to assess the impact of FAs on technological and nutritional properties. Milk sampling was conducted biweekly from six farms, categorized into high (HP) and low (LP) pasture treatments based on pasture intake: &gt;60% and &lt;35%, respectively. Butter was made from a pasture-based system (GRZ) and a confined system (C). No differences were observed in milk fat percentage between HP and LP in either season. High pasture had 85-66% more conjugated linoleic acid (CLA, p=0.01), 74-48% more trans-vaccenic acid (TVA, p=0.01), and 21-15% more branched- chain FAs (BCFA, p=0.006) than LP in spring and fall, respectively. In fall, butter from C had lower saturated FAs (SFA, p=0.005), higher unsaturated FAs (UFA, p=0.008), and a lower spreadability index (SI, p=0.005) than GRZ, resulting in softer butter. In conclusion, HP in both seasons had higher contents of FAs considered healthy for consumers compared to LP. Contrary to expectations, in fall, C showed higher UFATVA and lower SFA in butter, leading to better technological characteristics than GRZ.

The metabolites secreted by probiotics or released after their lysis are called postbiotics. They provide physiological benefits to the host, preventing the colonisation of pathogens by improving the intestinal environment for beneficial commensal bacteria, which reduces the incidence of digestive disorders and improve the immune system. The aim of this work was to evaluate the addition of postbiotics to dairy cow rations during the transition period on nutrient digestibility, composition, and milk yield. The effects of two postbiotics were evaluated in twelve Friesian cows from 30 days before calving to two months of lactation. The animals were randomly allocated to the treatments control (CT) and supplemented with postbiotics (PC and PR). Feeding was ad libitum with 60/40 of forage/concentrate ratio. Daily feed intake and milk production were recorded individually throughout the study. Two digestibility balances were performed, one before parturition and one after parturition. Colostrum was sampled at first milking and milk was sampled weekly. Data were analysed using a mixed mode in R software. The results suggest that postbiotic supplementation in late gestation and early lactation increase the voluntary intake of dry matter, especially in the PR treatment, with higher apparent total tract digestibility of dry matter, organic matter and neutral detergent fiber. Both treatments including postbiotics induced an increase in colostral immunoglobulin concentration. Milk production of cows receiving the PC treatment was the highest, with high fat and protein yields and a higher persistence of the production curve throughout the lactation.

This retrospective study aimed to evaluate the performance of the hormone treatment protocols, determine the factors associated with pregnancy success after hormone treatment, and compare the cost-efficiencies of two types of hormone treatment among cyclic and noncyclic anestrous dairy cows. The clinical records of 279 anestrous cows who received hormone treatment for artificial insemination (AI) from 64 herds in the western region of Thailand were obtained from Kasetsart University Veterinary Teaching Hospital from January to August 2017. The performance of the hormone treatment protocols, fixed-time AI (TAI) and estrus detection before AI (EAI), showed that the pregnancy risk for the TAI protocol was higher than for the EAI protocol, but pregnancy per AI did not differ significantly between the two protocols in cyclic and noncyclic cows. Multivariate logistic regression analysis showed that cows receiving the TAI protocol were more likely to be pregnant compared to those treated with the EAI protocol. Cows with a 3.00 body condition score (BCS) &lt;3.75 after treatment and loose-housing cows were more likely to become pregnant. Treatment during winter showed higher pregnancy success than in the summer and rainy seasons. The cost-efficiency analysis showed that the TAI protocol was the most cost-efficient option for noncyclic cows, whereas the EAI protocol was the most cost-efficient option for cyclic cows.

The excessive intake of sodium (Na) and insufficient intake of potassium (K) are major concerns to prevent hypertension. Using low-Na/K seasonings (reducing 25% of the NaCl and adding K salt) may improve the dietary Na/K ratio and help prevent hypertension. To devise an intervention study using low-Na/K seasonings at a company cafeteria, we calculated the Na and K contents of the meals served at the cafeteria and estimated changes in the intakes when suitable low-Na/K seasonings were used. We also considered using milk as a good source of K. We used an ingredient list of a company cafeteria and calculated Na and K contents in each dish. The average amounts of NaCl and K per use were 5.04 g and 718 mg, respectively. Seasonings contributed 70.9% of the NaCl. With the use of low-Na/K seasonings, an estimated reduction in NaCl of 0.8 g/day and an estimated increase in K of 308 mg/day was achieved. An additional serving (200 mL) of milk, NaCl was reduced by 0.57 g/day and K was increased by 610 mg/day, with an overall decrease in the dietary Na/K ratio from 3.20 to 2.40. The use of low-Na/K seasonings and dairy may improve the dietary Na/K ratio among cafeteria users and help prevent hypertension.

The study aimed to determine the effect of heat stress (HS) on reproductive parameters [calving to first service (CTFS) and first service conception rate (FSCR)] and general physiological responses [rectal temperature (RT) and respiratory rate (RR)] in tropical Holstein Friesian dairy cows raised in Ratchaburi province, Thailand. Cows were divided into a moderate HS (n = 22) and a mild HS (n = 22) group. Cycling cows were detected and injected with PGF2α at the beginning of the experimental period. Reproductive and physiological parameters were recorded. The average temperature humidity indices experienced by the cows were 80.67 ± 0.79 and 77.81 ± 1.09 for the moderate and mild HS groups, respectively. Cows showed significantly lower RT and RR in the mild (38.47 ± 0.21°C and 41.04 ± 4.55 bpm, respectively) than in the moderate HS group (38.87 ± 0.15°C and 51.17 ± 10.52 bpm). Under mild HS, cows showed a better response to injection of PGF2α than those under moderate HS. The percentage of cows that ovulated after being induced by PGF2α and showed estrus signs was higher in the mild than the moderate HS groups (54.55% versus 18.18%). Furthermore, the FSCR of cows under mild HS tended to be higher than in the moderate HS group (54.55 % and 42.11%, respectively), while the average CTFS interval was significantly shorter under mild than moderate HS (69.47 ± 18.18 and 84.60 ± 27.68, respectively). These results indicate that HS impairs reproductive performance in cross-bred Holstein cows, especially in moderate HS conditions.

Emerging pollutants (EPs) encompass natural or synthetic substances in the environment that pose potential risks but have only recently been recognized or monitored. EPs consist of various categories including pesticides, pharmaceuticals, hormones, mycotoxins, and endocrine disrupting chemicals (EDCs). Through several pathways, EPs can access food, potentially leading to health impacts when their safe concentrations are exceeded. Milk, being a highly nutritious and a heavily consumed food product by many consumers of different ages, is a crucial food matrix where EPs should be regularly monitored. In literature, large number of studies was dedicated for the determination of different EPs in dairy milk, employing different analytical techniques. Chromatographic based techniques were the most prevalent means for analysis of EPs in milk, which demonstrated significant efficiency, sensitivity and accuracy for this specific purpose. Prior to chromatographic analysis, extraction of EPs from a complex matrix like milk, is essential. This review comprehensively covers relevant research papers on extraction and subsequent detection and determination of EPs in milk by chromatographic methods from 2018 and until 2023.

Background. In a changing European agricultural context, diversification of dairy farms is gaining attention. This study seeks to (1) assess musculoskeletal pain prevalence associated with tasks such as butter, yogurt, and cheese production; and (2) analyze associated risks. Methods. Observing 31 mostly female workers, it utilized the ERGOROM questionnaire, a methodology adapted from the Institut National de Recherche et de Sécurité, and Key Indicator Method forms. Results. Findings revealed that tasks like load carrying (42% of workers), manual work (17%), and awkward postures (14%) resulted in musculoskeletal pain, predominantly in the lower back (65%), neck (39%), and dominant upper limb areas (shoulder: 61%, elbow: 26%, and wrist: 65%). While psychosocial risks remained low, concerns arose from workload, hygiene standards, and resource unpredictability. Conclusions. As dairy farming evolves from artisanal to semi-industrial, the study emphasizes the importance of ergonomic adaptations to protect farmer health and prevent musculoskeletal disorders during diversification.

The quality and safety of fermented milk products, which make up a sizeable portion of human nutrition, are greatly influenced by both the milk itself and the starting cultures employed to ferment it. Lactic acid bacteria (LAB) create a variety of metabolites throughout the fermentation process, altering the organoleptic properties of the substrates. The final product’s nutritional value and digestibility are enhanced by fermentation of the raw materials, which also adds vitamins, vital amino acids, and fatty acids. The quality and safety of fermented milk products, which make up a sizeable portion of human nutrition, are greatly influenced by both the milk itself and the starting cultures employed to ferment it. The inhibition of the growth of pathogenic microbes, which lowers the likelihood of the emergence of foodborne diseases, is another crucial function of LAB. A variety of pathogenic bacteria are frequently present in raw (unpasteurized) milk, and other raw materials; these pathogenic bacteria should be removed during the fermentation process. As a result, a variety of LAB metabolites, such as hydrogen peroxide, organic acids, and bacteriocins, function as bio preservative agents, enhancing food safety and lengthening the shelf life of the finished products.

Dairy cattle predicted by genomic breeding values to be heat tolerant are known to have less milk production decline and lower core body temperature increases in response to elevated temperatures. In a study conducted at the University of Melbourne’s Dookie Robotic Dairy Farm during summer, we identified the most 20 heat-susceptible and 20 heat-tolerant cows in a herd of 150 Holstein Friesian lactating cows based on their phenotypic responses (changes in respiration rate, surface body temperature, panting score, and milk production). Hair samples were collected from the tip of the cows' tail following standard genotyping protocols. The results indicated variation in feed saved and HT genomic estimated breeding values (GEBVs) (P≤0.05) across age, indicating a potential for their selection. As expected, the thermotolerant group had higher GEBVs for HT and feed saved but lower for milk production. In general, younger cows had superior GEBVs for Balanced Performance Index (BPI), Type Weighted Index (TWI) and Australian Selection Index (ASI), whilst older cows were superior in fertility, feed saved (FS) and HT. The study demonstrated highly significant (P≤ 0.001) negative correlations (-0.28 to -0.74) between HT and GEBVs for current Australian Dairy cattle selection indices (BPI, TWI, ASI, HWI) and significant (P≤ 0.05) positive correlations between HT and GEBVs for traits like FS (0.45) and fertility (0.25). Genomic selection for HT will help improve cow efficiency and sustainability of dairy production under hot summer conditions. However, a more extensive study involving more lactating cows across multiple farms is recommended to confirm the associations between the phenotypic predictors of HT and GEBVs.

Cryptosporidium parvum is one of the major causes of neonatal calf diarrhoea resulting in reduced farm productivity and compromised animal welfare worldwide. Livestock act as a major reservoir of this parasite, which can be transmitted to humans directly and/or indirectly, posing a public health risk. Research reports on Cryptosporidium prevalence from the east Mediterranean region are scarce with even less originating from Cyprus. This study is the first to explore occurrence of Cryptosporidium spp. in young dairy calves on the island. A total of 242 faecal samples were collected from 10 dairy cattle farms in Cyprus, all of which were screened for Cryptosporidium spp. using nested-PCR amplification targeting the small subunit of the ribosomal RNA (18S rRNA) gene. The 60 kDa glycoprotein (gp60) gene was also sequenced for the samples identified as C. parvum positive to determine the subtypes present. Occurrence of Cryptosporidium was 43.8% (106/242) with at least one positive isolate in each farm sampled. Prevalence per farm ranged from 20¬‒64%, while C. bovis, C. ryanae and C. parvum were the only species identified. Amongst those, the latter was the predominant species, representing 51.8% of all positive samples. Four zoonotic subtypes were identified – IIaA14G1R1, IIaA15G1R1, IIaA15G2R1 and IIaA18G2R1. IIaA14G1R1 was the most abundant; representing 48.2% of all C. parvum positive samples and was also the most widespread. This is the first report of zoonotic subtypes of C. parvum circulating in Cyprus. These results highlight the need for further research into the parasite focusing on its diversity, prevalence, host-range and transmission dynamics on the island.

A selection of 36 commercial probiotic fermented dairy products from UK and Europe markets were evaluated for the numbers, types and viability of Lactobacillus strains against the stated information on their packages. A comparative study was carried out on selectivity of MRS-Clindamycin, MRS-Sorbitol and MRS-IM Maltose, to select the right medium for enumeration of probiotic Lactobacillus. Based on selectivity of medium for recovery of the targeted lactobacilli and also simplicity of preparation, MRS-Clindamycin was chosen as the best medium for enumeration of probiotic Lactobacillus in fermented milks. The results of enumeration of lactobacilli showed that 22 out of a total 36 tested products contained more than 106 colony forming units/g at the end of their shelf- life, which comply with the recommended minimum therapeutic level for probiotics. Rep-PCR using primer GTG-5 was applied for initial discrimination of isolated strains, and isolates, which presented different band profile, were placed in different groups. The isolated Lactobacillus spp. were identified mainly as Lactobacillus acidophilus, Lactobacillus casei and Lactobacillus paracasei by analysis of partial sequences of the 16S ribosomal RNA and rpoA genes. In conclusion, it is unknown to recommend the adequate number of probiotic bacteria to be consumed to ensure the beneficial properties.

In this study pH, temperature of the contents of the forestomach of cows and cow activity were measured using specific smaXtec boluses manufactured for animal care. Rumination time, body weight, milk yield, milk fat/protein ratio, milk lactose, milk somatic cell count, milk electrical conductivity and conception of concentrates were registered with the help of Lely Astronaut® A3 milking robots. The following parameters were obtained: base excess in blood, partial carbon dioxide pressure, partial oxygen pressure, bicarbonate, hydrogen potential, total carbon dioxide carbon, base excess in extracellular fluid, sodium, calcium, potassium, packed cell volume, chlorides, hemoglobin concentration and lactate. According to the concentration of lactose in milk, cows were grouped into two groups: group 1 - milk lactose &lt;4.70% (n = 20), group 2 - milk lactose ≥ 4.70% (n = 15). Data of cows were also divided by milk fat and protein ratio: F/P&lt;1.2 (class 1), F/P=1.2 (class 2) and F/P&gt;1.2 (class 3). According our results we can conclude that inline registered milk lactose concentration can be used as indicator for the health status of fresh dairy cows. Cows with higher lactose concentration (≥ 4.70%) developed more activity (54.47%) and had less risk of mastitis (lover milk EC, and SCC) and metabolic disorders according to F/P. Cows with higher lactose concentration showed higher glucose concentrations. Low level of lactose can be used as indicator of mastitis (milk SCC ≥ 100 thousand/ml) and metabolic disorders according to F/P.

This study was conducted to investigate the prevalence of Coxiella burnetii infection according to cattle breeds and growth types. A total of 491 cattle [cattle breed: 216 dairy cattle and 275 beef cattle; according to growth type: indoor housing (n = 294) and grazing (n = 197)] were tested for the presence of C. burnetii DNA and antibodies against C. burnetii using a commercial enzyme-linked immunosorbent assay (ELISA). Overall, 10.8% and 8.8% of the cattle were positive by PCR and for C. burnetii antibodies, respectively. The prevalence of C. burnetii was significantly higher in beef cattle than in dairy cattle using PCR (13.6% vs 7.4%; P = 0.032) and ELISA (14.6% vs 1.4%; P = 0.000), respectively. The overall infection rate of C. burnetii was significantly high in grazing cattle (PCR: 24.9%, ELSIA: 21.3%; P = 0.000) compared with housing cattle (PCR: 1.4%, ELISA: 0.3%). The results indicate that beef cattle have a significantly higher risk of contracting C. burnetii infection compared with dairy cattle (21.5% vs. 7.9%, χ2 = 5.82, P = 0.000, odds ratio = 3.197, 95% CI: 1.80-5.67). In addition, the infection of C. burnetii was significantly associated with grazing (P = 0.000). Moreover, a risk of contracting C. burnetii infection in grazing cattle was increased by 32.57-fold (95% CI: 12.84-82.60, P = 0.000) compared with indoor housed cattle. The phylogenetic analysis based on the IS111 gene revealed that our isolates were grouped together with humans, ticks, goats, and cattle isolates found in several countries. C. burnetii isolates circulating in the Republic of Korea exhibit genetic variations. Consequently, our results suggest that cattle are potential reservoirs for C. burnetii infection and most importantly, grazing acts as a high risk factor for the occurrence and transmission of this infection.

Thermal comfort indices are risk indicators for environmental conditions in livestock production. Predictive models based on these indices of heat stress, respiratory frequency, and presence of heat waves for lactating cows, comparing the prediction and correlation between these factors, generate responses that can improve animal management regarding physiological responses to heat stress during the incidence of heat waves. Therefore, the objective was to develop predictive models for heat wave risk alerts based on thermal stress indices, physiological responses, and surface temperature of lactating cows. The region's climatic conditions were evaluated based on data on temperature, air humidity, wind speed, black globe temperature, solar radiation, dew point temperature, and precipitation compiled from a meteorological station. In the processing phase, a data set was discretized into classes to apply machine learning techniques to generate a classification model with cross-validation of the data. The performance of the classifiers was evaluated based on the metrics: accuracy, precision, sensitivity (recall), and Kappa statistics. Predicting the risk of heat waves for lactating cows can meet the need to predict the frequency of heat waves for decision-making in environmental, nutritional, and health management to minimize adverse impacts on production. The accuracy of Decision Tree models (J48), Naive Bayes, and Logistic Regression was equal to 96.72%, 96.72%, and 98.36%, respectively. The performance in the evaluation metrics of the Logistic Regression prediction model was better than that of the decision tree and Naive Bayes models.

This paper proposes the GD (Geometric Distribution) algorithm, a novel approach to enhance the default Adaptive Data Rate (ADR) mechanism in the Long Range Wide Area Network (LoRaWAN). By leveraging the Probability Mass Function (PMF) of the GD model, the GD algorithm effectively addresses massive device distribution challenges in real-life scenarios. To evaluate the algorithm's performance, the LoRaWAN simulations were conducted using the fixed node pattern derived from actual locations of dairy farms in Ratchaburi province, Thailand. The research established scenarios for assessing the network's performance namely, DER (Data Extraction Rate) and SF (Spreading Factor) assignment. Comparative analyses were performed against the uniform random node pattern and established algorithms, including the default ADR scheme, EXPLoRa, Quantile Classification of Variance from the Mean (QCVM), and Standard Deviation (SD). The GD algorithm demonstrated significant improvements over existing methodologies for both fixed and uniform random patterns. The fixed pattern exhibited an enhancement of 14.3%, while the uniform random pattern showed 4.8% enhancement over the default ADR scheme. Further assessments covered the coverage area, payload size, and energy consumption. The GD algorithm consistently achieved the optimal DER values with a coverage area and payload size, albeit often at the expense of increased energy consumption.

Brucellosis is a zoonoses caused by bacteria of the genus Brucella, which causes economic losses in livestock and threatens public health. A cross-sectional study was conducted to determine the prevalence of Brucella species and risk factors in smallholder dairy cattle in six regions of Tanzania from July 2019 to October 2020. Dairy cattle (n=2048) were sampled from 1371 farms. DNA ex-tracted from blood and vaginal swabs was tested for Brucella using qPCR targeting the IS711 gene and positives were tested for the alkB marker for B. abortus and BMEI1172 marker for B. melitensis. The molecular prevalence was 3.5% (95% CI: 2.8-4.4) with the highest prevalence 8.1% (95%CI: 4.6-13.0) in Njombe region. B. melitensis was the predominant species detected (66.2%). Logistic regression revealed PCR positivity in dairy cattle was higher in the animals with a history of abortion (OR: 3.17, 95%CI: 1.05-9.62) and farms without dogs around (OR: 2.68, 95%CI: 1.12-5.90). Further studies are recommended to understand the source of B. melitensis and the implications to veterinary public health. Livestock keepers should be informed of the risks and biosecurity practices to reduce introduction and control Brucella. Cattle and small ruminant vaccination pro-grams could be implemented to control brucellosis in high-risk populations in the country.

Clinical and laboratory diagnostics are particularly important in monitoring the internal homeostasis of the body in high-yielding animals, especially in dairy cows, whose metabolism is under constant pressure to obtain high parameters of milk production and reproduction. Knowledge of laboratory test results and relationships based on significant correlations between various milk and blood parameters may be very useful in veterinary diagnostics and helpful in cattle practice in order to protect animal health and the quality of milk production. The aim of the study was to analyze the correlation between selected hematological biomarkers such as white blood corpuscles (WBC), red blood corpuscles (RBC), hemoglobin concentration (HGB), hematocrit (HCT), platelets (PLT), erythrocyte mean corpuscular volume (MCV), mean corpuscular hemoglobin content (MHC), mean corpuscular hemoglobin concentration (MCHC) and selected quantitative-qualitative parameters of cow’s milk such as current milk production, somatic cells count (SCC), colony of bacteria forming units (CFU), milk fat (MF), milk protein (MP), milk lactose (ML), milk solids (S), solids non-fat in milk (SNF), daily milk production. Samples were collected three times at daily intervals from 11 clinically healthy late-lactation dairy cows obtaining 33 sets of test results. This repeated study of cows allowed for obtaining a homogeneous group in order to determine statistical correlations between selected blood and milk parameters. Many significant correlations were found between the examined parameters. In cows, significant positive correlations were recorded between milk production and HGB, HCT, MCV or MHC. Significant negative correlations were also found between SCC and HGB, SCC and HCT, SNF and MCV, SNF and MHC, and between MF and RBC.

Several pathotypes of enteric E. coli have been identified. The group represented by Shiga toxin-producing E. coli (STEC) is of particular interest. Raw milk and raw milk products are significant sources of STEC infection in humans; therefore, identifying pathogens at the herd level is crucial for public health. Most national surveillance programs focus solely on raw milk and raw milk cheeses that are ready for retail sale, neglecting the possibility of evaluating the source of contamination directly at the beginning of the dairy chain. In order to assess the viability of new molecular methodologies applied to raw milk filters enabling the identification of the presence of STEC serotypes in milk production and apply the same methods to identify the presence of these pathogens in calf feces we analyzed, through a commercial real-time PCR assay, a total of 290 samples coming from 18 different dairy herds; 88 bulk tank milk (BTM), 104 raw milk filters (RMF) and 98 calves’ feces samples. In total 3.4% of BTM, 41.4% of RMF and 73.4% of calves’ feces tested positive for stx presence, supporting our hypothesis that BTM is not a suitable matrix to assess the STEC presence at herd level, underestimating it. Our conclusion is that the surveillance program needs critical and extensive improvements such as RMF and calves’ feces analysis implementation in order to be more efficient in detecting and preventing STEC infections. The epidemiology of these infections and the characteristics of the pathogen clearly show how a One Health approach will be pivotal to improve our capabilities to control the spread of these infections.

The term Conjugated Linoleic Acid (CLA) refers generically to a class of positional and geometric conjugated dienoic isomers of linoleic acid. Among the isomers of linoleic acid cis9, trans11-CLA (c9, t11-CLA) and trans10, cis12-CLA (t10, c12-CLA) are found to be bio-logically active isomers, and they occur naturally in milk, dairy products and meat from ruminants. In addition, some vegetables and some sea-foods have also been reported to contain CLA. Although the CLA levels in these natural sources are insufficient to confer the essential health benefits, anti-carcinogenic or anti-cancer effects are of current interest. In the rumen, CLA is an intermediate of isomerization and the biohydrogenation process of linoleic acid to stearic acid conducted by ruminal microorganisms. In addition to rumen bacteria, some other bacteria, such as Propionibacterium, Bifidobacterium and some lactic acid bacteria (LAB) are also capable of producing CLA. In this regard, Lactiplantibacillus plantarum (formerly Lactobacillus plantarum) has demon-strated the ability to produce CLA isomers from linoleic acid by multiple enzymatic activi-ties, including hydration, dehydration, and isomerization. L. plantarum is one of the most versatile species of LAB and the bacterium is widely used in the food industry as a micro-bial food culture. The studies reviewed in this article reveal how, in the production of some fermented foods, the use of appropriate strains of L. plantarum, as a starter or additional culture, can be considered a critical factor in the design of new CLA-enriched functional foods.

The increasing global concern over plastic waste and its environmental impact has led to a growing interest in the development of sustainable packaging alternatives. This study focuses on the innovative use of expired dairy products as a potential resource for producing edible packaging materials. Expired dairy products, which are typically discarded, contribute to food waste and environmental pollution. By modifying these products to packaging materials, a dual-purpose solution addressing both waste reduction and sustainable packaging is evaluated. Expired milk and yogurt were selected as the primary raw materials due to their protein and carbohydrate content. The extracted casein was combined with various concentrations of chitosan while in some cases glycerol was used. The materials were characterized with attenuated total reflectance-Fourier transform infrared (ATR-FTIR) spectroscopy and X-ray analysis (XRD) to examine the interactions between the components of the formed binary blend. Scanning electron microscopy (SEM) was used to evaluate the surface morphology of the blends, while dynamic mechanical analysis (DMA) and tensile experiments were conducted to study the thermomechanical properties of the materials. Barrier properties, including water vapor transmission (WVTR) and oxygen permeability (OTR), were measured to assess the materials' potential to preserve food freshness. The findings reveal that expired dairy-based edible packaging materials exhibit promising mechanical properties, comparable to conventional plastic packaging. The barrier properties and especially the zero oxygen permeability of the membranes, indicate that these materials have the potential to effectively protect food products from external factors that could compromise quality and shelf life. The materials show encouraging signs of eco-friendliness, with a notable reduction in environmental persistence compared to conventional plastic packaging.

Chronic stress in dairy cattle industry has negative impacts on animal health, productivity, and welfare. It has been confirmed that cortisol transfers to milk and resists the high temperature during milk processing. This study evaluated the relationship between milk cortisol concentration (MCC) in commercial milk products and the temperature-humidity index (THI) at time of milk production. Eleven commercially produced pasteurized and sterilized milk products, purchased in Chuncheon, Korea, with production dates ranging from July to October 2021 were analyzed. The MCC was extracted using diethyl ether and analyzed using enzyme immunoassay. Average THI values based on microclimate data provided by the Korea Meteorological Administration were 77±0.8, 75±1.4, 69±1.4, and 58±1.8, in July, August, September, and October, respectively. The average MCC levels were 211.9±95.1, 173.5±63.8, 109.6±53.2, and 106.7±33.7 pg/mL in July, August, September, and October, respectively. MCC in July was higher than in August, September and October (p<0.05), while it was lower in September and October than in August (p<0.05). Significant variations in MCC were observed in commercial milk products across the four production months (p<0.05), except for two milk products. Overall, monitoring cortisol residue in commercial dairy milk products can be an alternative indicator of stress in dairy cattle of farms.

In this work, the resistance/susceptibility (R/S) profile of Staphylococcus equorum strains (n=30) from cheese to 16 antibiotics was determined by broth microdilution. The minimum inhibitory concentration (MIC) for all antibiotics was low in most strains, although higher MICs compatible with acquired genes were also noted. Genome analysis of 13 strains showed the S. equorum resistome to be composed of intrinsic mechanisms, acquired mutations, and acquired genes. However, the genetic data did not always correlate with the phenotype. As such, a cat gene providing resistance to chloramphenicol was found on a plasmid in one strain; this was able to provide resistance to Staphylococcus aureus after electroporation. An msr(A) polymorphic gene was identified in five strains. The Mrs(A) variants were associated with variable resistance to erythromycin. All strains harboured a polymorphic fosB/fosD gene, although only one acquired copy was associated with strong resistance to fosfomycin. Similarly, a plasmid-associated blaR1-blaZI operon encoding a penicillinase was identified in five ampicillin- and penicillin G-susceptible strains. Identified genes not associated with resistance further included mph(C) in two strains and norA in all strains. The antibiotic R/S status and gene content of S. equorum strains intended to be employed in food systems should be carefully determined.

This literature review was aimed to collect investigations on the in vivo evidences for bacteria associated to fermented dairy foods to behave as probiotics with beneficial effects in the prevention and treatment of various diseases. All main bacterial groups commonly present in high numbers in fermented milks or cheeses were taken into account, namely starter lactic acid bacteria (SLAB) Lactobacillus delbrueckii subsp. bulgaricus and lactis, L. helveticus, Lactococcus lactis, Strepto-coccus thermophilus, non starter LAB (NSLAB) Lacticaseibacillus spp., Lactiplantibacillus plantarum, dairy propionibacteria and other less frequently encountered species. Only studies regarding strains of proven dairy origin were considered. Studies in animal models and clinical studies showed that dairy bacteria ameliorate symptoms of inflammatory bowel disease (IBD), mucositis, metabolic syndrome, aging and oxidative stress, cancer, bone diseases, atopic dermatitis, allergies, infections and damages caused by pollutants, mild stress and depression. Immunomodulation and changes in the intestinal microbiota were the mechanisms most often involved in the observed effects. The results of the studies considered indicated that milk and dairy products are a rich source of beneficial bacteria that should be further exploited to the advantage of human and animal health.

This study aimed to evaluate the effect of incorporating linseed oil and fish oil in the diet on intake, ruminal fermentation milk yield and milk fatty acid profile in dairy goats. Four crossbred Saanen lactating goats in mid-lactation and milking 1.30±0.28 g/day were used in a 4 × 4 Latin square design. The basal diet consisted of concentrate and Para grass (C:F 40:60). Treatments included the basal diet without oil supplement (Ctrl) or with 2.5% linseed oil (LO2.5), 2.5% linseed oil and fish oil (3:2, w/w, LFO2.5), and 4.16% linseed oil and fish oil (3:2, w/w, LFO4.16). Diets had no effect on intake, milk yield, milk composition and ruminal fermentation patterns (P > 0.05). The lower (P < 0.05) proportions of C10:0-C14:0 in milk fat were observed with LFO4.16 compared with Ctrl. Compared with the Ctrl and linseed oil added alone, feeding LFO4.16 resulted in a 589% and 303% increase in C18:1 t11, respectively. Milk c9,t11 CLA was markedly increased with the LFO4.16 diet, accounting for 4.53 and 2.94 times greater concentrations than those in Ctrl and LO2.5 diets, respectively (P < 0.01). Goats fed LFO2.5 and LFO4.16 had greater levels of C22:6n-3 (0.63% and 0.87%; P < 0.001) compared with those fed Ctrl and LO2.5 diets (0.06% and 0.08%). Overall, the combined data suggested that including 4.16% linseed oil and fish oil in the diet of dairy goats is effective for improving the concentrations of healthy fatty acids in milk, without affecting milk production.

The aim of the instant study was to evaluate relative inline progesterone dynamic changes according to parity and status of reproduction and to estimate the relationship with productivity in dairy cows by inline milk analysis system (IMAS) Herd Navigator. According to a progesterone assay, cows were divided into three periods: postpartum, after insemination, and pregnancy. In the first stage of the postpartum period (0-29 days), the progesterone level in milk was monitored every 6 days. The second stage of the postpartum period (30-65 days) lasted until cows were inseminated. In the third period (0-45 days) after cows were inseminated, progesterone scores were distributed according to whether or not cows became pregnant. The stability of progesterone dynamics was monitored in the last study period (45-90 days). For milk progesterone detection, the fully automated real-time progesterone analyzer Herd Navigator (Lattec I/S. Hillerød. Denmark) was used in combination with a DeLaval milking robot (DeLaval Inc., Tumba, Sweden). The highest progesterone concentration in multiparous cows ranged from 1.08% (11-17 days postpartum) to 34.89% higher than that in cows of the first parity. The lowest progesterone concentrations in the milk of all cows were estimated during the first 5 postpartum days and between 18 and 23 days after calving. Peak milk progesterone concentrations were evaluated in the first stage of the experiment on days 24-29 after calving. In the 30-65-day period after calving, the level of milk progesterone was 2.02-2.08 times higher than that in the 24-29-day postpartum period. After insemination, the level of progesterone in milk increased by 10.77-22.54% compared with the level from cows on days 30-65 after calving. A higher (12.88%) concentration of progesterone in milk was evaluated in multiparous cows compared with that from cows of the first parity. In pregnant cows, milk progesterone within 0-45 days after insemination was 23.88% (in multiparous cows) and 32.54% (in primiparous cows) higher than that in non-pregnant cows. On days 31–35 after insemination, pregnant cows had higher milk progesterone levels, which can predict pregnancy success. According to our study results, we can suggest that an inline progesterone concentration determined by inline milk analysis system Herd Navigator and changes in its dynamics correlate with different reproductive statuses and milk yield of cows. Pregnant cows 11–15 days after insemination have higher milk progesterone levels, what positively, associated with a successful pregnancy.

Background: Vitamin D and calcium are important dietary compounds that affect bone mass, even if other minerals (potassium, zinc, etc.) and other vitamins (A, C and K) are also involved. Vitamin D and other minerals, in fact, play an important role in calcium homeostasis and calcium absorption. Hip fractures incidence is higher in western countries, where calcium is frequently included in human diet, while the occurrence of these fractures is lower in developing countries, where diets are often poor in calcium. This situation is known as the “calcium paradox”, and may be partially explained considering phosphate toxicity, that can induce a disorder of mineral metabolism. It is important to maintain adequate dietary calcium-phosphate balance in order to perform a healthy life, reducing the risk of osteoporotic fracture in older people. Vitamin D can also act as a hormone; vitamin D2 (ergocalciferol) is derived from the UV-B radiation of ergosterol, the vitamin D precursor naturally found in plants, fungi, and invertebrates. Vitamin D3 (cholecalciferol) is originated by sunlight exposure from 7-dehydrocholesterol, a precursor of cholesterol that can also act as a provitamin D3. Dietary intake of vitamin D3 is very important when skin is exposed for short times to ultraviolet B light (UV-B) one of the three kinds of invisible light rays together with UV-A and UV-C. This can be considered the usual situation in northern latitudes and in winter season, or the typical condition for older people and/or for people with very white delicate skin. Actually, the recommended daily intake of dietary vitamin D is strictly correlated with age, ranging from 5 μg for infants, children, teen-agers and adults, including women during pregnancy and lactation, to 15 μg for people over 65 years.

In this review paper, the latest literature on the functional properties of phospholipids in relation to inflammation and inflammation-related disorders has been critically appraised and evaluated. The paper is divided into three sections: Section one addresses the relationship between the anti-inflammatory bioactivities of different phospholipids in relation to their structures and compositions. Sections two and three are dedicated to the structures, functions and anti-inflammatory properties of dietary phospholipids from animal and marine sources. Most of the dietary phospholipids of animal origin come from meat, egg and dairy products. To date, there is very limited work published on meat phospholipids, undoubtedly due to the negative perception that meat consumption is an unhealthy option due to its putative associations with several chronic diseases. These assumptions are addressed with respect to the phospholipid composition of meat products. Recent research trends indicate that dairy phospholipids possess anti-inflammatory properties, which has led to an increased interest into their molecular structures and reputed health benefits. Finally, the structural composition of phospholipids of marine origin is discussed. Extensive research has been published in relation to ω-3 polyunsaturated fatty acids (PUFAs) and inflammation, however this research has recently come under scrutiny and has proved to be unreliable and controversial in terms of the therapeutic effects of ω-3 PUFA, which are generally in the form of triglycerides and esters. Therefore, this review focuses on recent publications concerning marine phospholipids and their structural composition and related health benefits. Finally, the strong nutritional value of dietary phospholipids are highlighted with respect to marine and animal origin and avenues for future research are discussed.

This study analyzed methodologies for identifying β-casein genotypes in dairy cows and the purity of A2 fermented milk. The research was justified by the need for quick and accurate techniques for herd screening and A2 milk quality control. The methodology included the development of an ELISA test to detect β-casein A1 in fermented milk and the evaluation of a commercial Lateral Flow Immuno Assay (LFIA) to identify A2A2 genotypes and the purity of A2 milk. The results showed that the ELISA test had high sensitivity and specificity (100%) in detecting β-casein A1. The LFIA test was 100% effective in identifying A2A2 genotypes and verifying the purity of A2 milk with a minimum detectable contamination of 5% for raw milk and 10% for fermented milk. Compared to traditional genotyping, these methods proved to be highly reliable and more practical for large-scale screening. It was concluded that the ELISA and LFIA were valuable tools for ensuring the quality and authenticity of A2 milk, meeting the demands of producers and consumers for safe and healthy dairy products.

In this systematic review, the PRISMA method was applied to examine publications from the last two decades that have investigated the noxious gaseous emissions from dairy barns. The aim was to analyse the outcomes from literature studies estimating the quantities of polluting gases produced in dairy barns, with specific focus on ammonia (NH₃) emissions. The review also explores proposed methods to reduce the associated effects through mitigation strategies. Estimation of NH₃ emissions is significantly influenced by the complex interactions among several factors, including animal management practices, such as controlling animal behavioral activities; manure management, like utilising practices for floor manure removal; the type of structure housing the animals, whether it is naturally or mechanically ventilated; and environmental conditions, such as the effects of temperature, wind speed, relative humidity, and ventilation rate on NH₃ release in the barn. These influential components have been considered by researchers, identifying targeted mitigation strategies. Despite growing attention to the issue, gaps in the scientific literature were identified and discussed, particularly regarding the analysis of mitigation strategies and their long-term impacts (i.e., environmental, economic and productivity-wise).

Aflatoxin M1 (AFM1), a carcinogenic toxin, mainly contaminates cow milk and poses significant challenges to the dairy industry and, thereby, public health in most tropical countries, including Ethiopia. This study aimed to investigate the prevalence and level of AFM1 in raw cow milk collected from Specialized Dairy Farms and Milk Vendors in three Urban Centers: Chiro town, Dire Dawa, and Harar cities in Eastern Ethiopia. 180 milk samples were collected from two major Milk Sources: Specialized Dairy Farms (N=90) and Milk Vendors (N=90) using a simple random sampling technique. AFM1 was analyzed using high-performance liquid chromatography. The study revealed that, 63.9% (115/810) prevalence and 0.179±0.48µg/L mean of AFM1 level in milk, which 39.13% and 26.08% exceed the tolerable limits of EU and FDA respectively. A 40.0% prevalence and 0.344±0.72µg/L average of AFM1 in the milk from Dire Dawa city was significantly higher than the samples from other Urban Centers. However, 30.43% and 29.57% prevalence as well as 0.055±±0.13µg/L and 0.140±0.33µg/L average of AFM1 in milk from Chiro town and Harar city, respectively were not significant. Furthermore, milk samples from Dairy Farms revealed a higher prevalence (57.39%) and level (0.252±0.64µg/L) of AFM1 than Milk Vendors, with a prevalence of 42.61% and an average of 0.107±0.21µg/L. Therefore, this study concludes that substantial milk samples were contaminated by AFM1 and urges the need to enhance farmers' awareness on mitigation.

Diet modification may be a potential contributor in the prevention of age-related cognitive decline. The association between dairy product consumption and cognitive function remains unknown in older people. We investigated whether cheese intake is associated with lower cognitive function (LCF) in community-dwelling older adults. This cross-sectional study included 1503 adults aged over 65 years. Analyzed data were obtained from face-to-face interviews and functional ability measurement. Cognitive function was assessed using mini-mental state examination (MMSE), and a score ≤ 23 was defined as LCF. The prevalence of LCF was 4.6% and this group had smaller calf circumference, slower usual walking speed, and more frequent history of anemia than subjects with MMSE scores ≥ 24. After adjusting for confounding factors, logistic regression analysis revealed cheese intake (odds ratio (OR) = 0.404, 95% confidence interval (CI) = 0.198-0.824), age (OR = 1.170, 95% CI = 1.089-1.256), usual walking speed (OR = 0.171, 95% CI = 0.062-0.472) and calf circumference (OR = 0.823, 95% CI = 0.747-0.908) as significant factors associated with LCF. Although the present study was an analysis of cross-sectional data of Japanese community-dwelling older adults, the results suggest that cheese intake is inversely associated with LCF.

Lameness on dairy goat farms is a welfare concern and could negatively affect milk production. This study's objective was to evaluate the effects of clinical lameness on the daily milk production of dairy goats. Between July 2019 and June 2020, 11,847 test-day records were collected from 3,145 goats on three farms in New Zealand. Locomotion scoring of goats used a 5-point scoring system (0 to 4). The dataset was split into two groups by lactation type, where goats were classified as being in seasonal lactation (≤305 days in milk) or extended lactation (&gt;305 days in milk). A linear mixed model was used to analyze datasets using milk characteristics as the dependent variables. Clinically lame goats (score 3 or 4) in seasonal and extended lactation produced 2.63% and 4.66% less milk than goats not lame, respectively. Severely lame goats (score 4) in seasonal and extended lactation produced 7.10% and 8.56% less milk than goats not lame, respectively. The estimated average daily milk income lost was between NZD 26 and 104 per goat. This study established the negative impact of lameness on milk production and annual income in dairy goats on three farms.

Approximately one-third of mankind is chronically exposed to the carcinogenic aflatoxin M1 contained in milk and dairy products and there is no ready to use procedure for decontamination purposes applicable in milk technology. Since β-cyclodextrin is frequently used in food industry, its effect on aflatoxin M1 concentration was investigated during cholesterol removal. So, milk samples were spiked with aflatoxin M1 at the average level 0.89 µg/kg and cholesterol removal was carried out by 2.0% (w/w) β-cyclodextrin addition. As found, average cholesterol concentration decreased by 92.3% while aflatoxin M1 concentration decreased to 0.53 µg/kg, i. e. by 39.1% after the treatment. The procedure itself is easy, inexpensive, and ready to use in milk processing technology on current production lines without any investments, thus fully applicable with a high potential of full aflatoxin M1 milk decontamination efficiency and such way to strengthen considerably the food safety issues associated with milk and dairy products on global level.

The consumption of dairy products and the dairy industry is one of the main global agro-food sectors for size, economic importance and level of technology. Microbiological quality of pasteurized milk or other milk products is dependent on microbiological quality of raw milk. A variety of microbiological count methods is available for monitoring the hygienic quality of raw milk. Among them, the pour plate method is the official essay for counting the number of colony forming units in milk samples according to ISO 4833-1:2013. The aim of the present study is the validation of the Micro Biological Survey (MBS) method, against the reference plate count method, for the assessment of the microbiological quality of raw milk. This comparative study, performed in collaboration with the “Istituto Zooprofilattico Sperimentale del Lazio e della Toscana M. Aleandri” (IZSLT), demonstrates the accuracy of this alternative method for the determination of total viable bacterial count in cow’s raw milk. The results obtained with the MBS method highlighting its potential as a valid tool for reliable microbiological analysis in dairy industries.

The goal of the study was to assess the farmers’ acceptance of three sustainable production strategies, namely ‘Agro-forestry’, ‘Alternative protein source’ and ‘Prolonged maternal feeding’. Data on the acceptance of these strategies were collected by a survey of dairy farmers in six EU countries (AT, BE, DK, FI, IT, UK). An extended version of the Technology Acceptance Model (TAM) was applied by means of Structural Equation Modelling to testing various hypotheses on attitudes and intentions of dairy farmers towards these novel production strategies, as well as the influence of organic practices and collaborative behaviours along the supply chain. We found that the most preferred strategy - across all countries - was soy substitution by alternative protein sources. We also found that the intention to adopt a sustainable production strategy may derive from the influence of opinions (and behaviours) of relevant others, showing the role of interactions among farmers and other stakeholders in the adoption of innovations. Finally, the perceived usefulness of all investigated strategies is higher for organic farmers, while collaborative patterns reduce the impact of subjective norm on usefulness and overall acceptance. Our findings should encourage policy makers to consider the important role of supply chain management practices, including collaboration, to enhance the sustainability of dairy farming systems.

This study investigated metabolic changes associated with Bovine Leukemia Virus (BLV) infection in dairy cows, focusing on pre-parturition alterations. Of 145 cows examined, 42 (28.9%) were BLV-seropositive. 38% of infected cows showed high somatic cell counts indicative of subclinical mastitis, with 15 experiencing additional health issues such as ketosis, milk fever, and lameness. Despite these conditions, no significant differences in milk yield or composition were observed between infected and control groups. Metabolomic analysis conducted at -8 and -4 weeks prepartum revealed significant metabolic differences between BLV-infected and healthy cows. At -8 weeks, 30 serum metabolites were altered, including sphingomyelins, lysophosphatidylcholines, amino acids, and acylcarnitines, suggesting disruptions in membrane integrity, energy metabolism, and immune function indicative of early neoplastic transformations. By -4 weeks, the number of altered metabolites reduced to 17, continuing to reflect metabolic disruptions in cows with leukemia. Multivariate analysis highlighted distinct metabolic profiles between infected and control cows, identifying key discriminating metabolites such as choline, aspartic acid, phenylalanine, and arginine. Urine metabolomics revealed significant prepartum shifts in metabolites related to glucose, asymmetric dimethylarginine, and pyruvic acid, among others. The research confirmed metabolomics' efficacy in defining a BLV infection metabolic profile, elucidating leukosis-associated metabolic disruptions. This approach facilitates identification of BLV-infected cows and enhances understanding of infection pathophysiology, providing a foundation for advanced management and intervention strategies in dairy herds. The study underscores the profound impact of leukosis on metabolic processes and highlights urine metabolomics' utility in non-invasively detecting BLV infection, offering potential for improved herd health management.

The main challenge in milk production has been to maintain a focus on efficient processes that enhance production outcomes, while aligning with animal welfare and sustainability and being valued by society. As an alternative to improve cow welfare in production and provide better handling of the waste generated by the activity, the system called compost-bedded pack barn (CBP) is an alternative that has been widely adopted in countries with temperate climates and higher milk production. This CBP has been attracting global interest, including from countries with tropical and subtropical climates, such as Brazil, where many producers have started to use it due to the response in terms of milk productivity. A CBP can be designed either in a) an open facility with natural ventilation or positive pressure ventilation system or b) totally closed facilities, equipped with negative pressure ventilation systems and permanent thermal control. The latter system is being implemented in Brazil, despite insufficient knowledge about its efficiency. The objective of this study was, through a review, to gather and describe the most recent information on the use of open and closed CBP systems for dairy cattle housing, mainly how it is applied in tropical climate regions. To achieve the proposed objective, this review study included the following topics related to CBPs: (i) implementation; (ii) bedding; (iii) general construction and architectural characteristics; iv) ambient thermal conditioning. Knowledge gaps and directions for future research are also identified.

We propose that a dietary reduction of Lipopolysaccharide (LPS) could reduce risk and slow the progression of cognitive decline and Alzheimer’s disease. LPS is a component of the highly inflammatory cell membrane of Gram-negative bacteria. The highest dietary sources of LPS are processed meat and dairy products, which can sharply raise plasma LPS within one to two hours. The LPS in these foods is packaged into chylomicrons, which enter the bloodstream. Smaller amounts of LPS from colonic microbiota do not account for the sharp postprandial increase of plasma LPS. Once in the bloodstream, LPS can trigger the release of inflammatory cytokines within three hours. LPS can increase cytokines via LPS binding protein and cluster of differentiation-14, triggering toll-like receptor-4, and activating nuclear factor kappa-B. Nuclear factor kappa-B can increase cytokine levels, including interleukin-1-beta, interleukin-6, and tumor necrosis factor-alpha. LPS and inflammatory cytokines are higher in Alzheimer’s disease, both in plasma and in the central nervous system. These cytokines can enter the brain via active transport and induce microglial activation and inflammatory damage in the brain, including loss of synapses and neurons. Elevated brain inflammation from dietary LPS can contribute to cognitive impairment and increased risk of dementia.

Heat-stressed lactating dairy cattle exhibit unique metabolic symptoms; many of which are undoubtedly involved in heat-induced subfertility. Because of its known systemic effects, we hypothesized that γ-aminobutyric acid (GABA) participates in the regulation of insulin and progesterone during heat stress. Multiparous lactating Holstein cows (n=6) were studied during four experimental periods: 1) thermoneutral (TN; d 1-5), 2) TN + hyperinsulinemic-hypoglycemic clamp (d 6-10), 3) heat stress (HS; d 16-20), and 4) HS + euglycemic clamp (d 21-25). Blood samples were collected once daily via coccygeal venipuncture into heparinized evacuated tubes. Analysis of GABA concentrations from all four treatment periods yielded no differences. In direct comparison to TN concentrations, plasma GABA tended to be decreased during HS (16.57±2.64 vs 13.87±2.28 ng/ml, respectively, P = 0.06). Both milk production and plasma insulin were moderately correlated with plasma GABA (r=0.35, P<0.01; r = -0.32, P<0.01). Plasma progesterone was correlated with plasma GABA concentrations during TN but not HS. These results are the first to indicate that peripheral GABA could be involved in regulating aspects of production and reproduction during heat stress. More research is needed to determine its precise role(s).

Rising demand and urbanization have led to the global increase and intensification of livestock production. Intensive production has harmful effects on the environment, public health (due to the emergence of zoonotic diseases), and animal welfare. In order to better understand how livestock production intensifies as countries develop and incomes rise, we examine the relationship between income per capita and intensification of poultry and cattle, using the states of India as a study region. We also replicate this analysis at the district level to test whether the relationship holds at different spatial scales. We identify outlying states and districts to see if there are policies that can keep agriculture production largely extensive, even as economic growth occurs. The results support the relationship of income being positively correlated with the proportion of livestock in intensive conditions. However, there are notable outlier states which have grown wealthy while still maintaining largely extensive production, indicating that there may be some cases where economic growth can occur without intensification.

Dairy calves are susceptible to a great range of welfare and health issues up to the age of weaning. The aim of the current pilot study was to evaluate incidence of the main health disorders affecting dairy calves up to one year of age. The study was carried out at the Experimental Farm of the Research and Development Institute for Bovine Balotesti, Romania, were health data was collected for two consecutive years, between November 2017 and October 2019, from a number of 176 purebred Romanian Black and White calves. Diarrhea had the highest incidence in un-weaned calves (0-3months old), of 29.55±0.34%, significantly higher (p≤0.001) compared to 3-6 months (2.16±1.24) and 6-12 months age groups (5.88±2.17), respectively. Coccidiosis incidence was on average of 39.20±0.36% in un-weaned calves, 1.44±1.01% in the 3-6 months group and of 5.04±2.01% in the 6-12 months group, significantly higher (p≤0.001) in the 0-3 months age group, compared to older calves.

This study was conducted to evaluate the feasibility of applying a two-step biological treatment process, solid-state anaerobic digestion (SSAD) and black soldier fly larvae (BSFL) composting, for treating dairy cattle manure. Biogas from SSAD of dairy cattle manure, and the digestate of SSAD was fed to BSFL. In turn, BSFL can be fed to animals as a protein supplement. Adjustment of pH and 30% inoculation ratio (IR₃₀) during SSAD produced the highest theoretical methane yield, 626.1±28.7 L CH₄/kg VS_des, with an ultimate methane yield of 96.81±2.0 L CH₄/kg VS_load. For BSFL composting, the groups with a feeding rate of 75 and 100 mg/day/larvae had the highest body weight change, which was 969.6±28.4 and 984.1±177.6%, respectively. The combination process of SSAD and BSFL composting increases the incentive for dairy cattle manure treatment enabled higher waste removal efficiency, and produced more valuable products.

Livestock production in the Cajamarca, La Libertad and Amazonas basins is based on pasture-based feeding with "Cajamarquino ecotype" ryegrass under monoculture or in association with white clover. The objective of this research work was the morphological characterization and evaluation of the productive yield and cutting time of annual ryegrass - Lolium multiflorum L. Six local genotypes of Lolium multiflorum in six locations were characterised, using the multiplicative interaction effect model and additive main effects for the analysis of interaction and variability of the genotypes and locations. Ryegrass “Cajamarquino ecotype” is semi-erect with intermediate growth, with a dark green colouring, 0.8 cm broadleaf, and can reach an average stem length of 46 cm, up to 1.6 cm.day, achieving the growth of the fourth leaf after 28 days under adequate management conditions. Despite the differentiated characteristics, according to the BLASTn evaluation, the ITS1 sequences showed an identification greater than 99.9% similar to Lolium multiflorum L. It was determined that the Cajamarquino ecotype produces from 3.52 to 4.98 Mg.ha.biomass cutting. Likewise, the pasture's quality is better when used at 30 days with 14.84% protein and at 45 days, it achieves 12.75% protein with a biomass of 4.05 Mg.ha.cut. With these morphological and yield characteristics, the "Cajamarca ecotype" ryegrass is a well-adapted species for local livestock farming. These species are adapted to the Sierra Norte area of Peru.

Subacute rumen acidosis (SARA) is a prevalent issue in intensive livestock farming, particularly associated with high-concentrate diets. This study investigates the prevalence and impact of SARA in Greek dairy sheep farming and explores the use of computerized rumen colorimetry as a management and diagnostic tool for SARA in dairy sheep farms. Forty-two dairy sheep flocks were monitored regularly for rumen pH, milk composition, and milk yield over an approximately 9-month milking period. Computerized Rumen Mucosal Colorimetry was applied to 280 culled, aged ewes from these farms, with rumen wall samples taken for histological examination. SARA cases were identified in 19 farms (45%, n=48). Farms with SARA cases had lower milk fat levels, although milk yield was higher in these farms, while milk protein levels did not differ based on the SARA status of the farms. In culled ewes, rumen color was significantly associated with the farm's SARA status. Additionally, ewes from farms with more SARA cases exhibited increased thickness in the ruminal epithelium layers, particularly in the non-keratinized and total epithelium layers. In conclusion, SARA is a common disorder in the Greek dairy sheep industry, lowering the fat content of milk. The study suggests that computerized rumen epithelium colorimetry in aged culled ewes shows promise as a diagnostic tool for SARA in dairy sheep farms.

Gamma-aminobutyric acid (GABA) is thought to have beneficial effects on human health and well-being. GABA enrichment by lactic acid bacteria (LAB) could be used in the development of functional fermented foods. In this work, four GABA-producing strains each of Lactococcus lactis and Streptococcus thermophilus were isolated from cowʼs milk, and their phenotypic, technological, and safety profiles were determined. Genome analysis provided genetic support for the majority of the analyzed traits. The operon harboring the glutamate decarboxylase gene (gadB) was chromosomally encoded in all strains and showed the same gene content and gene order as that reported, respectively, for L. lactis and S. thermophilus. In the latter species, the operon was flanked (as in most strains of this species) by complete or truncated copies of insertion sequences (IS), suggesting recent acquisition by horizontal gene transfer. The genomes of three L. lactis and two S. thermophilus strains showed a gene encoding a caseinolytic proteinase (PrtP in L. lactis and PrtS in S. thermophilus). These strains grew in milk forming a coagulum of good appearance and an appealing acidic flavor and taste. They also produced GABA from monosodium glutamate in this medium. Two L. lactis strains were identified as belonging to the biovar. diacetylactis, utilized citrate from milk and produced significant amounts of acetoin. None of the strains showed any noticeable antibiotic resistance, nor did their genomes harbor transferable antibiotic resistance genes, genes involved in toxicity, virulence, or pathogenicity. Altogether these results suggest all eight strains may be considered candidates for use as starter or components of mixed LAB cultures for the manufacture of GABA-enriched fermented dairy products.

This study presents a novel approach for automating the body condition scoring of dairy cows, leveraging advancements in 3D imaging technology and deep neural networks. The primary objective was to design and implement a system capable of accurately and efficiently assessing the body condition of dairy cows, a critical metric in livestock management for optimizing health and productivity. To achieve this, a 3D camera was employed to capture detailed point cloud data, reconstructing the three-dimensional morphology of individual cows. The obtained data were then fed into a deep neural network, specifically tailored for the task of ranking body condition. The neural network was trained on a diverse dataset of annotated body condition score representing varying degrees of body condition, ensuring robust performance across different physiological states. The results demonstrate the efficacy of the proposed system in automatically and objectively scoring the body condition of dairy cows. The automated process not only expedites the assessment but also reduces the subjectivity associated with manual scoring methods. This innovative approach holds promise for improving the efficiency of dairy farm management by providing timely and accurate body condition assessments. The integration of 3D imaging and deep learning techniques paves the way for future advancements in precision livestock farming, contributing to enhanced animal welfare, optimized production, and sustainable agriculture practices.

Vitamin E, a potent antioxidant, is a necessary and complex micronutrient for cows. During the transition period, vitamin E deficiency (VED) is among the highest prevalent micronutrient deficits in dairy cows. It may eventually result in oxidative stress and immunological malfunction, and it increases the risk of peripartum disorders. At present, detailed data on blood metabolites in VED cows are limited. Consequently, the purpose of this research was to examine the alterations in the serum metabolic profile of VED cows throughout the early postpartum period. Using comprehensive 1H nuclear magnetic resonance (1H NMR), the alterations in serum metabolic activities of VED cows were analyzed. In total, 28 multiparous Holstein cows were assigned according to serum α-tocopherol (α-Toc) concentrations into a normal (α-Toc ≥ 4 μg/mL, n = 14) and VED (α-Toc &lt; 3 μg/mL, n = 14) groups at 21 days postpartum, and their blood samples were collected for biochemical and 1H NMR analyses. A t-test on independent samples as well as multivariate statistics were used to assess the findings. In comparison with normal cows, VED cows showed significantly worse body condition scores, milk yield, and dry matter intake (p &lt; 0.05). Significantly higher levels of serum non-esterified fatty acids, aspartate aminotransferase, low-density lipoprotein, and malonaldehyde were found in VED-affected cows, as well as lesser concentrations of serum albumin, high-density lipoprotein, and total antioxidant capacity in comparison with normal cows (p &lt; 0.01), while other vitamins and minerals concentrations showed no distinction between the groups (p &gt; 0.05). Furthermore, 24 upregulated serum metabolites were identified under VED conditions. The metabolomics pathway analysis of these metabolites demonstrated that a global metabolic response to VED in cows was represented by changes in 11 metabolic pathways, comprising energy, carbohydrate, and amino acid metabolism. These outcomes suggest that VED cows were more likely to experience a negative energy balance characterized by alterations of common systemic metabolic processes and develop oxidative stress, inflammation, and ultimately liver injury. This study provides the first evidence of metabolic changes in cows with VED.

Dairy farming dates to the early Neolithic era in Europe, Middle East, Asia, and Africa. Over time, the industry has evolved from small ranches and farmhouses milk processing units to large, intensive dairy farms and big, high-tech processing units. Despite the industry’s contribution to the economy and food production, multiple studies have tainted cattle farming as a main contributor to climate change. This study explores literature in dairy farming and sustainable development goals (SDGs) to identify current scholarly developments since the formulation and adoption of SDGs in 2015 and themes for future research. This paper argues that dairy animals are not the source of sustainability shortfalls as depicted by multiple scholarly articles, but human processes associated with dairy farming. Data was analyzed using R package, Excel, NVIVO, and VoS Viewer. A review of literature shows that dairy farming and its contribution to sustainability has gained more intensive scientific interest since 2015. Moreover, livestock management, feed production and management, stakeholder’s management, logistics and supply chain management, and waste management are the sources of environmental adversities associated with dairy farming. Notably, these are human processes developed from commercialization of dairy farming and involve multiple stakeholders across the supply chain. While solutions are embedded within these processes, innovation emerges as a key driver of sustainability and source of opportunities to strengthen sustainability in dairy farming sector and achieve the sustainable development goals.

This study aimed to identify and categorize the influencing factors on the purchase of dairy products among customers of dairy companies in Mashhad city. This study is a mixed research (qualitative and quantitative), conducted with the aim of identifying and categorizing the influencing factors on consumers’ purchase. Therefore, the theoretical foundations were examined in the initial step, after which the customers and their needs and demands were addressed in terms of the company and its products. In the qualitative part, interviews were conducted in the focus group (23 people in 5 groups) to identify and extract these factors using the theme analysis technique. The reliability of the interviews was confirmed by retesting and the reliability between two encoders. Sixty themes (factors) that affected the purchase of dairy products were collected. In quantitative part, 517 questionnaires were collected from 13 regions of Mashhad city to perform statistic tests. A questionnaire was designed using the extracted themes in the previous (qualitative) stage to assess customers’ feedback. The validity of the questionnaire was confirmed by content and structure validity (exploratory and confirmatory factor analysis), and its reliability was checked by Cronbach’s alpha. Fourteen components were obtained by exploratory and confirmatory factor analyses, after which the variables were labeled as intrinsic, psychological, and personality factors, the identity of the company, production power of the company, competitive power of the company, competitive prices, social awareness, and store capabilities. The construct validity was confirmed using confirmatory factors.

The current study aimed to investigate the effects of feeding silage of Napier Pakchong 1 fermented with mung bean concentrate on production performance, nutrient digestibility, carcass yield, and meat quality of male dairy goats. Silage made for experimental treatments was prepared as follows: Treatment 1 (T1) containing 100% Napier Pakchong 1 grass (without mung bean concentrate added) as a control, while Treatment 2 (T2) and Treatment 3 (T3) containing 90% and 80% Napier Pakchong 1 grass, respectively, mixed with 10% and 20% mung bean concentrate, respectively. Fifteen weaned male Saanen-growing goats were assigned to 3 experimental treatments in a completely randomized design; the study lasted for 150 days. The nutritive value of feed, production performance, nutrient digestibility, blood urea nitrogen, carcass yield and dressing, basic meat quality, and composition of meat were collected or analyzed. The results found that the goats fed with the silage made from Napier Pakchong 1 added 10% and 20% mung bean concentrate showed improvements in nutritive value, growth rate, key nutrient digestibility, blood urea nitrogen, carcass yield, the water-holding capacity of cooked meat, and fat content in meat. However, adding 10% mung bean concentrate had a trend of more beneficial value added into the production chain of male Saanen dairy goats for meat purposes. Thus, silage made from Napier Pakchong 1 fermented with 10% mung bean concentrate as a roughage source for male Saanen dairy goats intended for meat purposes is recommended.

The increasing regulatory pressure to monitor and reduce GHG emissions and air pollutants requires cost-effective methods for their surveillance. The most common technique used for scientific investigations on gas concentration monitoring in barns are accurate but expensive and with a complex maintenance. This research study analysed the potential use of a low-cost portable measurement devices for the measurement of ammonia (NH3) and carbon dioxide (CO2) concentrations in an open dairy barn. A comparison between gas concentrations acquired at different heights from the floor by using portable devices and those acquired by a photoacoustic infrared multigas spectroscope (i.e., reference measurement) in the same sampling locations was carried out to determine the precision of the low-cost portable devices. The performance of low-cost portable devices was statistically analysed by the application of the one-way analysis of variance, correlation analysis and regression analysis. The results showed a significant difference between gas concentration values at various heights from the floor for both NH3 and CO2. The correlations between concentrations acquired by the low-cost portable device and the INNOVA were statistically significant (r=0.83; P&lt;0.001) for gas concentrations monitored at 0.4 m from the floor. Compared with the reference measurement device, the low-cost devices were effective in the monitoring of NH3 concentrations at 0.40 m from the floor though it underestimated them in the barn at increasing of the height from the floor, whereas the device was not adequate for CO2 concentrations. In detail, the relative measurement error of the low-cost devices compared to INNOVA was reduced close to the floor during NH3 concentration measurements. Within these limitations, this device could be useful for monitoring NH3 concentration in the barn and to assess variation in NH3 concentrations mainly related to the animal occupied zone. Further efforts are needed in this field of research to identify low-cost device that could simplify emission estimation from open dairy barns.

Milk production from Asiatic swamp buffalo is a new enterprise in Laos. As yields are limited, provision of high-quality Cow-Calf molasses nutrient blocks containing 10% urea (UMNB10) may improve productivity. A trial in a recently established commercial buffalo dairy examined dietary supplementation of lactating buffalo cows with UMNB10, with 3 groups of 9 cows in mid-lactation randomly selected. Two groups received ad-libitum access to UMBs with the remaining group free of block supplements. All animals were daily fed fresh Napier grass (30kg), corn (750gm), rice bran (1.45kg), plus accessed fresh Mulatto grass. Daily milk production (DMP) and body condition score (BCS) were recorded for the 2 months of access to UMB. Average DMP for the 2 supplemented groups were 1.02 litres and 0.96 litres, compared to 0.78 litres for the control group, suggesting improved milk productivity of 31% and 24% from accessing UMB. Partial budget analysis identified a strong incentive for use of the molasses blocks, with a net profit of USD408 and USD295 over a 30-day period for the supplemented groups. Molasses nutrient blocks may be a simple motivator for smallholder farmers in developing countries to increase the efficiency of large ruminant production, improving rural livelihoods, food security and potentially, reducing GHG emissions.

To curb the impacts arising from the agricultural sector the actions undertaken by policymakers, and ultimately by the farmers, are of paramount importance. However, finding the best strategy to reduce impacts, and especially assessing the effects of the interactions and mutual influence among farmers, is very difficult. To this aim, this paper shows an application of an agent-based model (ABM) coupled with life cycle assessment (LCA), which also includes multi objective optimization of farming activities (including both crop cultivation and livestock breeding) from an economic and environmental perspective. The environmental impacts are assessed using the impact assessment scores calculated with the Environmental Footprint (EF) 3.0 life cycle impact assessment (LCIA) method and the study is conducted “from cradle to farm gate”. The model is applied to all the farms in Luxembourg, whose network is constructed utilizing neighborhood interactions, through which a parameter known as farmer's green consciousness (GC) is updated at each time step. The optimization module is instantiated at the end of each time step, and decision variables (the number of livestock units and land allocation) are assigned based on profitability and specified environmental impact categories. If only profit optimization is considered (i.e. when farmers’ GC is de-activated), the results show a 9% reduction in the aggregated environmental impacts (obtained as EF “single score”) and a 5.5% increase in overall profitability. At the farm level, simulations display a clear trade-off between environmental sustainability and financial stability, with a 25% reduction in overall emissions possible if farming activities are carried using the EF single score impact in the objective function, though this results in an 8% reduction in profitability over ten years.

This study investigated the presence, distribution, and antimicrobial resistance profiles of extend-ed-spectrum beta-lactamase (ESBL)-producing Enterobacteriaceae in a dairy herd located in Northern Italy. A questionnaire was administered, and the feces of clinically healthy pre-weaned dairy calves, their mothers, and the cows treated for mastitis, waste milk, water, and environmental samples, were collected and inoculated on Chromagar ESBL™ medium. The questionnaire identi-fied several risk factors including administration of waste milk to male calves, lack of routine cleaning of calf feeding and housing equipment, and blanket dry cow therapy. Escherichia coli was identified by MALDI-TOF MS in the feces of 28 of 37 (75.67%) calves, 2 of 3 (66.67%) treated cows, 8 of 14 (57.15%) environmental samples, and the waste milk. Six of 14 (42.85%) environmental samples were also positive for ESBL Acinetobacter baumannii, while all fecal samples were negative. ESBL production was confirmed for all E. coli isolates based on the double disk susceptibility test (DDST), while none were carbapenemase producers. Upon minimal inhibitory concentration (MIC) analysis, all of them showed multiple resistances and were categorized as multi-drug resistant (MDR). This study confirms the widespread presence of MDR, ESBL-E. coli in dairy calves and highlights their diffusion in the farm environment.

Lactic acid bacteria are traditionally applied in a variety of fermented food products and have the capability to produce a wide range of bioactive ingredients during fermentation including vitamins, bacteriocins, bioactive peptides and bioactive compounds. The bioactivity and health benefits associated with these ingredients have gained interest in applications in the functional dairy market and have relevance both as components produced in situ and as functional additives. This review provides a brief description of the regulations regarding the functional food market in the European Union as well as an overview of some of the functional dairy products currently available in the Irish and European markets. A better understanding of the production of these ingredients excreted by lactic acid bacteria can further drive the development and innovation of the continuously growing functional food market.

Large ruminant production is associated with high greenhouse gas emissions (GHGe) intensity, with the highest in southeast Asia being Laos at 102.9 CO2eq/kg meat produced, compared with average global meat emissions intensity of 33 CO2eq/kg. As recent studies in Laos identified emissions control molasses blocks (ECBs) achieved abatement of 470kg CO2eq/20kg block consumed, a study was conducted with a supplement mix with reported methane reducing properties, containing plant tannins and citral extract, salt, molasses and water. Groups of housed dairy buffalo (n=7) and pasture-fed grazing beef cows (n=11) were randomly selected, body condition scores estimated (BCS:1-5) and baseline nasa-oral methane eructation measured daily for 2 weeks. All animals were offered 300-400g/day of the mix for a month, with buffalo accessing abundant fresh cut forages whereas the grazing cows accessing rice straw and pasture declining in quality and quantity due to severe drought. The buffalo consumed all of the mix and retained their BCS of 3, whereas the cattle consumed between 200-300g/day of the mix and their BCS declined from 1.5 to 1.0 during the trial. Analysis of data points (buffalo n=309; cattle n=378) found average methane concentration (AMP) per animal of both cohorts increased over the 2 week baseline period, then declined during the supplementation period by 36% in the buffalo and 18% in cattle cohorts.

Udder health of dairy cows is related to their productivity and welfare. The period from dry-off to calving and early lactation is crucial. Ultrasonography is a useful and practical tool for the examination of the mammary parenchyma and blood flow. This observational study investigated the relationship between udder echotexture features, blood flow volume (BFVol) in the milk vein, milk somatic cell count (SCC) and daily milk yield (DMY) from late lactation, throughout dry period and consecutive early lactation. Seventeen repeated measurements were performed on 21 Holstein cows. The udder parenchyma was examined with B-mode ultrasonography. Udder echotexture was studied using 15 features: Numerical Pixel Value (NPV), Pixel Standard Deviation (PSD), Skewness, Excess, Contrast, Homogeneity, Correlation, Entropy, Run Percentage, Long Run Emphasis, Grey Value Distribution, Runlength Distribution, Gradient Mean Value, Gradient Variance and Percentage of Non-zero Gradients. Blood flow in the milk vein was examined with spectral Doppler. Linear mixed effects models were employed to investigate relationships between BFVol, udder echotexture features, SCC and DMY, throughout the study period. Our models showed that a 1-kg increase in DMY was associated with a significant increase of 0.25 L/min in the expected BFVol, and that a 1,000,000-cells/mL increase in SCC was associated with a significant BFVol decrease of 0.49 L/min, keeping all other variables constant. Multivariable models showed significant associations between DMY and NPV, PSD and Long Run Emphasis, and between SCC and NPV, PSD, Gradient Mean Value, Homogeneity, Gradient Variance and Entropy. In conclusion, udder echotexture and BFVol in the milk vein are related to SCC and milk yield. Ultrasonography can be used for the comprehensive assessment of udder health in the direction of precision dairy farming.

The aim of this study was to develop a basic model to predict enteric methane emission from dairy cows and to update operational calculations for the national inventory in Norway. Basic models were developed using a database with 63 treatment means from 19 studies. The database included records for enteric CH4 production (MJ/day), dry matter intake (DMI), and dietary nutrient composition. The basic models were evaluated against an external database (n=36, from ten studies) along with other extant models. When evaluated by low root mean square prediction errors and high concordance correlation coefficients, the developed basic models that included DMI, dietary concentrations of fatty acids and neutral detergent fiber performed slightly better in predicting CH4 emissions than extant models. In order to propose country-specific values for the CH4 conversion factor Ym (% of gross energy intake partitioned into CH4) and thus to carry out the national inventory for Norway, the existing operational model was updated for the prediction of Ym over a wide range of feeding situations using energy corrected milk and dietary concentrate share as predictor variables. Input values of Ym were updated based on the results from the basic models. The predicted Ym ranged from 6.22 to 6.72%. In conclusion, the prediction of CH4 production from dairy cows was improved with the help of newly published data, which enabled an update of the operational model for calculating the national inventory of CH4 in Norway.

The early diagnosis of mastitis represents an essential factor for a prompt detection of the animal for further actions. In fact, if not culled, infected cows must be segregated from the milking herd and milked last, or milked with separate milking units. Besides microbiological analysis, the somatic cell count (SCC) commonly used as predictor of intramammary infection, frequently lead to a misclassification of milk samples. To overcome these limitations, more specific biomarkers are continuously evaluated. Total amino acid content increases significantly in mastitic milk compared to normal one. Bovine mastitis can arise as a result of infection of the mammary gland by Staphylococcus aureus. Multiplication of this bacterium within the mammary gland is required for infection to persist. S. aureus requires branched-chain amino acids (BCAAs: isoleucine, leucine, valine) for protein synthesis, branched-chain fatty acids synthesis and environmental adaptation by responding to their availability via transcriptional regulators. The importance of BCAAs for S. aureus physiology necessitates that it either synthesize them or scavenge them from the environment. Increase of BCAAs in composite milk has been postulated to be linked to mammary infection by S. aureus. In the present work, we demonstrated, by a direct ion-pairing reversed-phase method based on the use of the evaporative light-scattering detector (IP-RP-HPLC-ELSD), applied to 65 composite cow milk samples, a correlation between the concentration of isoleucine and leucine and S. aureus load.
